Steps:
- In a medium bowl, whisk together the eggs and milk and season with salt and pepper.
- Heat 1 tablespoon of the oil in a medium skillet over medium heat. Add the chorizo and cook, stirring, until just beginning to brown, about 5 minutes. Scoop the chorizo out of the skillet with a slotted spoon and transfer to a plate. Wipe the skillet out with a paper towel.
- Return the skillet to medium to medium-low heat and heat the remaining 1 tablespoon oil. Add the egg mixture and cook, stirring, about 3 minutes. Add the chorizo and cook, stirring, about 2 to 4 minutes more depending on the desired firmness of the eggs. Serve immediately.

- Cook the chorizo in a large nonstick skillet over medium heat until it just begins to brown, about 3 minutes. Add the bell pepper and jalapeno and cook, stirring occasionally, until they begin to sizzle, about 5 minutes. Add the beans and half of the scallions and cook, stirring occasionally, until heated through, about 4 minutes.
- Whisk the whole eggs and egg whites with 1/4 cup water and 1/8 teaspoon each salt and pepper in a bowl; add to the skillet and cook, stirring with a rubber spatula, until just beginning to set, about 2 minutes. Add the chips, cheese, half of the cilantro, and the remaining scallions and continue cooking, stirring, until the eggs are just set, about 3 more minutes.
- Divide the eggs among plates and top with the avocado, sour cream and remaining cilantro.

- Preheat the oven to 425˚ F. Combine the tomatoes, red onion, jalapeños and brine, cilantro, lime juice, 1 tablespoon olive oil and 1/4 teaspoon salt in a medium bowl. Set aside.
- Arrange the tostadas on 2 baking sheets and bake until golden brown, rotating the pans halfway through, about 5 minutes. Remove from the oven. Divide the refried beans among the tostadas (about 2 heaping tablespoons each); spread evenly, leaving a 1/8-inch border. Crumble the chorizo on top of the beans. Return the tostadas to the oven and cook until the chorizo is cooked through, about 10 minutes. Top with the cheese and continue baking until melted, 1 to 2 more minutes.
- Meanwhile, heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the eggs and cook until the whites are partially set, 2 to 3 minutes. Cover and cook until the whites are fully set but the yolks are still runny, 2 to 3 more minutes. Season with salt and pepper.
- Divide the tostadas among plates. Top with the tomato mixture, fried eggs and more cilantro. Serve with lime wedges.

- During the first step, heat your stovetop to medium heat and add your butter to the pan on the heat.
- Gather all the vegetables in the ingredients list and dice them into small cubes. Add the cubes of vegetables to your pan with butter and let it simmer for a minimum of four minutes. With the spatula, move the vegetables around.
- Before chopping up the meat, clean your board by cleaning it with water and soap to prevent contamination. Cut your Chorizo sausage into small sections and place them into your pan. Let the combination simmer together for five more minutes in your pan.
- In a separate bowl, crack the eggs into the bowl. Add the milk and combine the salt and pepper in the bowl. Whisk the mixture until it is frothy and it is entirely smooth.
- In the final step, add the egg mixture to your warm pan. Once you add the egg mixture, lower the stovetop temperature under your pan to medium-low. Let it cook for 1 minute or until the edges are golden brown. After this occurs, take the spatula and break apart the egg mixture to make a scrambled egg.

- Cook your chopped potatoes in a 12" frying pan.
- Saute chorizo in a sauce pan by it's self, while the potatoes finish cooking.
- Pour cooked chorizo sauce into your cooked potatoes (pour off excess oils to taste).
- Mix the chorizo completely into your cooked potatoes.
- Pour your eggs into your mixed potatoes and chorizo and stir or you can fold and make an omelet.
- Cook until done and server immediately, as scrambled eggs, a burrito or an omelet.
- If your crowd is really big eaters, add spainsh rice and refiried beans -- I make this even on camping trips, you should see the people in the campgrounds looking around when they smell this in the morning, put out some Menudo with onions, clantro and you have a very tasty meal no matter where you are, enjoy.

- In another pan melt butter saute onions and pepper till translucent.
- Scramble the eggs with water and add to pan with onions scramble till desired doneness.

- Brush large nonstick skillet with olive or vegetable oil. Char tortillas over gas flame or directly on electric burner until blackened in spots, turning with tongs. Arrange tortillas in single layer in skillet. Sprinkle each tortilla with 1/4 cup grated cheese and set aside.
- Whisk eggs and 2 tablespoons cilantro in medium bowl.
- Season with salt and pepper.
- Sauté chorizo sausage in heavy medium nonstick skillet over medium-high heat until cooked through, breaking up with back of spoon, about 5 minutes.
- Add green onions and sauté 2 minutes.
- Add egg mixture and stir until very softly set, about 1 minute.
- Remove egg mixture from heat.

- Heat a medium-size skillet at medium high heat. While the skillet is getting hot, crumble the chorizo apart to help you cook it evenly. You can also do this once the chorizo is already cooking in the frying pan.
- Add the crumbled chorizo and cook evenly. The time you will cook the chorizo for will be about 4 minutes. If you still have pieces of chorizo that are bigger than others, try to break them apart with a wooden spoon to make them small. This will help them cook evenly.
- Once the chorizo is cooked, crack the eggs and add them to the frying pan, but do not stir them at first. Season the eggs and chorizo with salt. Wait for about one minute, then proceed to scramble the eggs. Gently stir the eggs to combine them with the chorizo. Keep cooking and stirring until the eggs are done to your liking. I like my eggs cooked tender, and that takes less than 2 minutes.
