Provided by Hector Gomez

Categories     Dinner

Yield 4 servings

Number Of Ingredients 14

salt, to taste
8 oz penne pasta
2 cups broccoli floret
2 tablespoons olive oil
2 boneless, skinless chicken breasts, cubed
pepper, to taste
¼ cup butter
3 cloves garlic, minced

⅛ teaspoon nutmeg
¼ teaspoon black pepper

  • Cook pasta for 8 minutes, or until slightly underdone.
  • Add broccoli to pasta and simmer for 4 minutes with the lid on.
  • Strain the pasta and broccoli in a colander, and run cold water over to prevent the broccoli from over cooking.

  • In a high sided skillet, melt butter on medium heat. Toss in garlic and cook until fragrant, then pour in chicken broth. Bring to a simmer, then turn down heat to medium-low and pour in cream. Allow to simmer and thicken for about 5-10 minutes, keep an eye on it.
  • After the cream has thickened, turn the heat to low and throw in cheese and whisk to help it melt into the cream. Season with salt and pepper, then splash in a little bit of lemon juice to taste. Whisk really well.
  • If your sauce isn't as thick as you like (some people like it thin, some thick) make a cornstarch slurry and whisk in.

  • Meanwhile, make the sauce. Toss together the chicken, flour and a generous amount of salt and pepper until the chicken is well coated.
  • Heat the butter in a very large frying pan over a medium–high heat. When it is frothing, add the mushrooms and spring onions and fry for 5 minutes, or until tender and the onions are slightly golden.
  • Reduce the heat to medium and add the chicken. Stir until everything is combined and then add the wine, if using (use stock if not, as the sauce will lack flavour if you just use water).
  • Stir the pasta into the sauce, adding the pasta water a tablespoon at a time until the sauce has reached your preferred consistency. Serve immediately.
