1 cup sour cream
1 cup half-and-half cream
1 cup chopped onion
1 can (4 ounces) chopped green chiles
1 teaspoon salt
1/2 teaspoon pepper
1 package (2 pounds) frozen shredded hash brown potatoes
2-1/2 cups cubed cooked chicken
2-1/2 cups shredded cheddar cheese, divided
Chopped fresh cilantro, optional

Steps:

  • Preheat oven to 350°. In a large bowl, combine the sour cream, half-and-half cream, onion, chiles, salt and pepper. Stir in the potatoes, chicken and 2 cups cheese. , Pour the mixture into a greased 13x9-in. or 3-qt. baking dish. Bake, uncovered, until golden brown, about 1-1/4 hours. Sprinkle with remaining cheese before serving. If desired, sprinkle with chopped cilantro.

This easy creamy chicken casserole is my mother's recipe and a family favorite. It's one of our comfort foods and regular easy recipes to make through a busy week. Can easily be prepared in advance, then popped in the oven for a nice hot meal. If making for the first time, add half of the sour cream and taste first. Add more if desired, tasting as you go, to reach desired flavor. Serve over cooked white rice.

1 sleeve buttery round crackers (such as Ritz®), crushed
2 tablespoons butter, melted
4 cups water
1 (32 fluid ounce) container chicken stock
salt and ground black pepper to taste
3 skinless, boneless chicken breast halves, cubed
1 (24 ounce) container sour cream, or to taste
1 (26 ounce) can condensed cream of chicken soup

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Mix the crackers and melted butter together in a bowl; set aside.
  • Bring water and chicken stock to a boil in a pot over high heat. Season with salt and black pepper. Add the chicken. Reduce heat to a simmer, and cook, stirring occasionally, until chicken is no longer pink in the center, 5 to 7 minutes. Drain the chicken; set aside. Whisk together the sour cream and cream of chicken soup in a large bowl. Stir in the chicken, then transfer the mixture to a 9x13-inch baking dish. Sprinkle the cracker mixture on top.
  • Bake in the preheated oven until bubbly, 25 to 30 minutes.

2-1/2 cups ziti pasta, uncooked
1 can (10.75 oz.) reduced-sodium condensed cream of chicken soup
1 container (8 oz.) BREAKSTONE'S or KNUDSEN Sour Cream
1 can (7 oz.) chopped green chiles, undrained
1/2 tsp. ground cumin
3 cups cooked chopped chicken
1 pkg. (8 oz.) KRAFT Big Slice Colby Jack Cheese Slices
2 Tbsp. chopped fresh cilantro

Steps:

  • Cook pasta as directed on package, omitting salt. Meanwhile, mix soup, sour cream, green chiles and cumin in large bowl until blended.
  • Drain pasta. Add to soup mixture along with the chicken; mix well. Spoon half the pasta mixture into 13x9-inch baking dish sprayed with cooking spray; top with half the cheese slices. Repeat layers.
  • Cover with plastic wrap, then foil. Freeze up to 1 month.
  • When Ready to Serve
  • Heat oven to 350ºF. Remove plastic wrap from casserole; re-cover with foil. Bake (frozen) casserole 1 hour or until heated through, uncovering after 45 min. Top with cilantro before serving.

This chili casserole can be made up to a month ahead and frozen until you are ready to serve. It is packed with black beans, corn and chicken. Recipe is from the cookbook, "You've Got it Made," by Diane Phillips.

1/4 cup vegetable oil
1/2 cup onion, finely chopped
1 garlic clove, minced
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon oregano
3 tablespoons cornmeal
2 1/2 cups chicken broth
1 cup tomato sauce
4 cups cooked chicken (chopped or shredded)
2 cups corn kernels
15 1/2 ounces can black beans, rinsed and drained (or try kidney beans)
1 1/2 teaspoons salt
1/2 teaspoon fresh ground black pepper
3 cups tortilla chips (6-8 ounces)
1 1/2 cups mild cheddar cheese, finely shredded
1/2 cup monterey jack cheese, finely shredded

Steps:

  • In large stockpot or Dutch oven, heat the oil over medium heat.
  • Add the onion, garlic, chili powder, cumin and oregano.
  • Saute for 3 minutes, or until the garlic is fragrant.
  • Add the cornmeal, stirring for about 2 minutes.
  • Slowly add the broth and tomato sauce, then bring the mixture to a boil and simmer for 10 minutes.
  • Add the chicken, corn, beans, salt and pepper.
  • Simmer, uncovered, for 30 minutes.
  • Stir frequently to prevent sticking.
  • Lightly coat a 9x13-inch baking dish with enough tortilla chips to cover the bottom.
  • Spoon the chili over the chips and sprinkle with cheeses.
  • If making ahead, let the chili cool, then cover and refrigerate up to 2 days, or freeze for up to 1 month.
  • The day before serving, move the chili to the refrigerator and let thaw overnight.
  • When ready to serve, preheat the oven to 350 degrees F.
  • Let the chili sit at room temperature for 30 minutes.
  • Bake the chili, covered, for 20 minutes.
  • Uncover and bake for an additional 20 minutes, or until the cheese has melted and the chili is bubbling.
  • Serve immediately.

Steps:

  • Preheat oven to 350˚F.
  • Combine the cream of chicken soup, sour cream, milk, garlic powder, and cumin. Then stir in the shredded chicken and green chiles.

Yummy, creamy, fast, and easy! This could easily be doubled or made diet friendly by using low-fat cream cheese and light tortillas. The idea for this came from the back of the green enchilada sauce can, but it had twice as much chicken and enchilada sauce, but the same amount of cream cheese and chilies, also no spices were listed--and was for actual enchiladas--I'm way to lazy to roll up enchiladas 8)

2 boneless skinless chicken breasts, cubed (or ~ 6 chicken tenders)
1 (8 ounce) package cream cheese, cut into cubes
1 (4 ounce) can chopped green chilies
4 flour tortillas (soft taco size)
1 (10 ounce) can green enchilada sauce
8 ounces shredded cheese (I prefer pepper jack)
1 dash pepper
1 dash seasoning salt
1 dash garlic powder
1 dash chili powder

Steps:

  • Heat oven to 400°F.
  • Cook chicken over medium-high heat until cooked through.
  • Add seasonings to chicken while cooking.
  • Add cream cheese and chilies.
  • Cook and stir until blended.
  • Arrange 2 tortillas on the bottom of a greased 8x8-inch pan (I cut the tortillas in half and put the straight edges along the edges of the pan, letting the tortillas over-lap).
  • Sprinkle the tortillas with a small amount of the cheese.
  • Pour the chicken mixture over the tortillas.
  • Sprinkle small amount of cheese over chicken mixture.
  • Arrange remaining tortillas on top.
  • Pour enchilada sauce over top and sprinkle with remaining cheese.
  • Bake for 20 minutes.

I was just running out of ideas and looked around my kitchen cupboards and refrigerator. This is what I came up with. I hope you enjoy it!

Number Of Ingredients 8

1 pkg 8 oz of cream cheese, low fat or regular
1 can(s) 28 oz of green chile enchilada sauce
1 can(s) 7 oz of chopped green chiles
1/2 tsp cumin
salt to taste
2 large cooked (boiled) chopped chicken breast, i guess you'd say it was a half of breast each? (or thighs)
20 corn tortillas cut up
1 pkg shredded mexican blend cheese (2 cups)

Steps:

  • 1. Preheat oven to 350 Cut up cream cheese to 1 inch cubes, (better if room temp) add to mixing bowl, add green chili sauce, green chilies, cumin and salt to taste. Mix until the cream cheese has blended in nicely.
  • 2. Add chopped chicken and mix.
  • 3. Spay 13 x 9 baking dish with Pam (or other non stick spray) Cut up tortillas into strips then cut in half again. Line baking dish with some of the tortillas evenly.
  • 4. Then add the rest of the tortillas to the creamy chicken mixture, mix until all the tortillas are coated.
  • 5. Pour into the the baking dish.
  • 6. Spread evenly and top with the cheese.
  • 7. Bake in your 350 degree oven for approx 30 - 40 mins, until bubbly hot! Cool for 10 mins then cut and serve! I think this might taste a little better if you top it with a little sour cream.

2 tablespoons butter
2 poblano peppers, seeded and coarsely chopped
1 small onion, finely chopped
2 tablespoons all-purpose flour
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/4 teaspoon salt
2/3 cup 2% milk
1 package (8 ounces) cream cheese, cubed
2 cups shredded pepper jack cheese
2 cups coarsely shredded rotisserie chicken
1 can (4 ounces) chopped green chiles
2 packages (8-1/2 ounces each) cornbread/muffin mix

Steps:

  • Preheat oven to 350°. In a large skillet, heat butter over medium-high heat. Add peppers and onion; cook and stir until peppers are tender, 4-6 minutes., Stir in flour and seasonings until blended; gradually stir in milk. Bring to a boil, stirring constantly; cook and stir until thickened, about 1 minute. Stir in cream cheese until blended. Add pepper jack, chicken and green chiles; heat through, stirring to combine. Transfer to a greased 11x7-in. baking dish., Prepare cornbread batter according to package directions. Spread over chicken mixture. Bake, uncovered, until golden brown and a toothpick inserted in topping comes out clean, 35-40 minutes. Let stand 10 minutes before serving.
