Make this with cherry tomatoes or grape tomatoes, or even normal tomatoes cut into chunks.The vinaigrette is slightly thickened with mustard so it clings to the tomato better, and a touch of red onion provides some much needed freshness.

- Shake Dressing in a jar. Taste and add more salt or pepper, or oil if you want less tart.
- Cut Tomatoes - cut cherry tomatoes / grape tomatoes in half. If using large ones, cut into wedges then bite size pieces.
- Place tomatoes, onion and basil in a bowl.
- Pour over Dressing. Gently toss and serve immediately.

- Gather the ingredients.
- In a salad bowl mix together the oil, vinegar, and salt.
- Peel and mince the shallot. Add it to the dressing and stir to combine.
- Husk the corn and use a sharp knife to cut off the kernels . When cutting corn kernels from the cob, be careful not to cut too deep: If you have a sharp knife and meet any resistance at all, you're cutting too deep and may end up with tough, woody knobs at the end of the kernels.
- To prepare the tomatoes, use a sharp knife to cut out the stem end and core underneath.
- Cut the tomatoes in half along the equator, squeeze out and discard the seeds and extra juice, and chop.
- Toss the corn and tomatoes with dressing.
- Slice the basil into thin strips (called chiffonade ). Sprinkle the salad with the ribbons of basil and serve. The salad will keep for a few hours topped with the basil or two to three days without the basil (sprinkle the basil on top just before serving).

- Bring a large pot of salted water to a boil.
- Whisk together the mayonnaise, sour cream, chives, lemon juice, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
- Add the pasta to the boiling water and cook according to the package directions. About 3 minutes before the pasta is done, add the corn to the pot. Drain and rinse under cold water to cool; add to the bowl with the dressing.
- Add the tomatoes and scallions to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

FRESH CORN AND TOMATO SALAD

- Whisk together the vinegar, 2 teaspoons salt and some pepper in a small bowl. Gradually whisk in the oil, starting with a few drops and then adding the rest in a steady stream, to make a smooth dressing.
- Shear off the corn kernels with a sharp knife over a bowl (you should have about 4 cups). Toss in the tomatoes, mozzarella and scallions. Pour the vinaigrette over the salad and toss to coat. Seared cubes of halloumi get melty and soft on their insides and dark brown and a little crisp on the surface, making it almost impossible not to devour them all as they come out of the pan. But try to resist, because they're even better tossed with a quick sauté of summer corn and tomatoes, seasoned with basil. Slivers of red onions, folded in raw at the end, add crunch and sweetness, while a squeeze of fresh lime makes everything tangy and fresh. - In a large, preferably nonstick skillet, heat 2 tablespoons oil over medium-high until it thins out, about 20 seconds. Working in batches, add cheese in one layer, and cook until golden on one side, 1 to 2 minutes. Flip cheese and cook without moving until golden on the other side, about 1 minute longer. Transfer to a paper towel-lined plate and repeat with remaining cheese.

- Heat a glug of neutral oil in a large frying pan over high heat until shimmering. Add the corn and pinches of salt and pepper. Allow to brown without stirring, about 7 minutes—stir too much and it won’t caramelize. When lightly browned, give a good flip or stir to cook the other side, about 7 minutes. Transfer the corn to a bowl.
- Add another glug of oil to the pan and sweat the onion and garlic until tender, about 7 minutes. Add the wine and reduce by half.

Add the tomatoes to the soybeans. Add the butter and let it melt and make everything glossy. Combine with the corn; taste and adjust the seasoning.
- Tear the basil leaves over the whole lot and garnish with the sour cream. Serve warm or at room temperature.
