Steps:
- Melt butter in a pan over medium heat and cook shallots until soft and translucent, about 5 minutes. Add chanterelle mushrooms and cook an additional 2 minutes. Add cream and cook until mushrooms are soft, 5 to 10 minutes.
- Stir flour and water together and add to mushrooms. Bring to a boil. Season with salt, herbes de Provence, and pepper.

- Heat a skillet over medium-high heat and cook bacon until crisp, about 3 minutes. Add onions and cook until soft and translucent, about 5 minutes. Add chanterelle mushrooms, cover pan, and cook until mushrooms are soft, about 15 minutes.
- Stir together sour cream and flour. Add sour cream mixture to mushrooms and season with salt and pepper. Mix to combine and cook until cream is hot, about 1 minute. Stir in chopped parsley right at the end.

SHRIMP AND CHANTERELLES IN WHITE WINE CREAM SAUCE
This sauce was a combination of a recipe we found in La Vera Cucina Italiana by Donaldo Soviero and DH's creativity. We used med-lge shrimp, about 41-50 size. We had a lovely crop of Chanterelles in the woods and DH made fresh pasta using the recipe on the back of King Arthur's Perfect Pasta Blend. There is a copycat version of this pasta blend posted here, Recipe #227629. This is a fantastic dinner to share with good friends. All you need is a green salad with a simple vinaigrette and some nice Chianti, light some candles and get ready to enjoy dinner!

Steps:
- Toss the shrimp with lemon juice.
- Heat the butter and oil in a large saute pan over medium heat and add the mushrooms.
- Saute 3-4 minutes, stirring occasionally, then add the shrimp and cook for another 2 minutes.
- Season with salt and pepper.
- Add the onions and cook another 2 minutes.
- Remove shrimp, mushroom and onion mixture from pan and save on a plate.
- Deglaze the saute pan with the wine, allowing it to come to a boil.
- Reduce the wine by half.
- Add 1/2 of the cream stir, reducing the heat to medium.
- Beat the egg yolks with the remaining cream.
- Add a little of the hot cream/wine mixture to the yolks to temper them.
- Beat well and then add the eg mixture to the sauce.
- Correct the seasonings.
- Return the onion/shrimp/mushrooms back into the sauce and toss with hot, freshly cooked pasta al dente.
- Garnish with a lemon slice and serve.

CREAMY CHANTERELLE PASTA
Steps:
- 1. Warm a mixing bowl in a 250-degree oven. Put the water and salt in a large kettle over high heat. 2. To make the sauce, melt half the butter in a large sauté pan over medium high heat and add the diced bacon. Do not drain the fat. As the bacon begins to crisp, add the shallots and cook until they are tender, about 4 minutes. Add the chanterelles, cook until they release their water, then stir in the salt and pepper. 3. Drop the noodles into the boiling water with the kosher salt, and while they are cooking, finish the sauce. 4. Combine the remaining butter and half the cream in the warm mixing bowl and put the bowl back into the oven. Pour the remaining cream over the mushrooms and allow it to simmer away while the pasta cooks. Just before the pasta is ready, add the peas to the chanterelle cream sauce. 5. Drain the noodles and toss them in the warm mixing bowl. Pour on the sauce and toss with the grated Parmesan cheese.

- In a saucepan on medium high heat, melt 50 grams of butter and add the chopped onions. When translucent add the minced garlic and let cook for about a minute. You want to be careful not to burn the garlic. If your pan is too hot, just lower the heat a bit.
