  • Put bacon strips on a parchment-line baking sheet; put another pan on top. Bake at 400 degrees, 10 minutes, then uncover and back 10 more minutes.
  • Lightly mix 6 ounces ground beef chuck with a big pinch of kosher salt. Form into a ball, then into a 3/4-inch-thick patty; make an indentation in the center. Heat a cast-iron skillet over medium-high heat; sprinkle the skillet with salt.
  • Cook the burger 4 to 5 minutes per side; top with 2 slices cheddar in the last minute of cooking (cover to melt). Serve on a sesame bun with the bacon.

2 tablespoons ketchup
2 tablespoons yellow mustard
2 tablespoons pickle relish
1 tablespoon apple cider vinegar
8 slices thick-cut bacon
4 sesame seed hamburger buns, split
2 pounds ground beef (80-percent lean)
Kosher salt
4 thin slices sharp white Cheddar
4 thin slices red onion
8 thin slices tomato
1/4 head iceberg lettuce, shredded

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the mayonnaise, ketchup, mustard, relish and vinegar in a small bowl; set aside.
  • Working in batches if necessary, add the bacon to a large cast-iron skillet over medium heat. Cook, flipping halfway through, until crisp and golden, about 10 minutes. Transfer the bacon to a nonstick baking sheet. Discard the bacon fat (or save for another use) and wipe the skillet clean but do not wash. Heat over medium-high heat until very hot, about 5 minutes.
  • Add the buns split-side up to the baking sheet with the bacon and bake until the buns are toasted, about 5 minutes.
  • Loosely form the beef into 4 balls. Add one ball of beef to the skillet and press firmly to flatten with a large flat metal spatula for 10 seconds, then gently remove the spatula. Sprinkle the patty generously with salt; repeat with the remaining beef balls, cooking in batches if necessary. Let cook, undisturbed, until well browned on the bottoms, 2 to 3 minutes. Flip the patties, sprinkle with more salt and top each with a slice of Cheddar. Continue cooking until the cheese is melted around the edges and the bottoms are browned, about 2 more minutes.
  • Spread the mayonnaise mixture on the bun tops. Serve the patties on the bottom buns topped with the bacon, onion, tomato and lettuce.

1/3 cup heavy cream
6 to 8 dashes hot sauce, such as Tabasco
4 dashes Worcestershire sauce
1 teaspoon salt
1/2 teaspoon ground black pepper
6 kaiser rolls
Softened butter, for spreading, plus 2 tablespoons
6 slices Cheddar
6 slices cooked bacon, halved

Steps:

  • Place the beef into a medium mixing bowl. Add the cream, hot sauce, Worcestershire, salt and pepper. With clean hands, mix the meat well. Set aside.
  • Next, slice the rolls in half and spread each half with some softened butter. Place the rolls face-down on a skillet over medium heat. Lightly grill the rolls so they're nice and golden. Let the rolls cool on a plate until you need them.
  • Heat a skillet over medium-high heat and add the butter. Form the beef mixture into 6 patties and place in the skillet, in batches if needed. Allow each to cook about 4 minutes on the first side, flip them and place a slice of Cheddar on to melt.
  • When the patties are done in the middle, place them on the base of the halved buns. Top each with 2 pieces of the bacon and top with the other half of the rolls.

1 cup tomato sauce
3 tablespoons pureed chipotle chiles in adobo

Steps:

  • To Make The Chipotle Ketchup: In a saucepan, combine all of the ingredients. Simmer over low heat until thickened, about 20 minutes. (Store in the refrigerator for up to 1 week.)
  • Preheat the oven to 400 degrees . Place the 8 whole slices of bacon on a broiler pan. Bake in the oven until crisp, about 15 minutes.
  • In a skillet, heat a drizzle of the olive oil over medium-high heat. Add the chopped bacon and cook until crisp, about 5 minutes. Transfer to paper towels to drain, leaving 2 tablespoons of the bacon fat in the pan. Add the yellow onion, jalapenno and garlic to the pan and cook until softened, 7 to 8 minutes. Let cool.
  • In a bowl, combine the beef, chopped bacon, onion mixture, paprika, cumin, coriander and oregano; season with salt and pepper. Form into 4 patties (making them thinner at the centers and thicker at the edges for even cooking). Add to the skillet and cook over medium-high heat, turning once, for 8 minutes for medium doneness. Steps:

  • Preparation Place ketchup ingredients in a small pot and simmer 20 minutes over low heat to thicken. Heat oven to 375ºF and bake 8 slices of bacon on slotted pan to crisp. Heat a drizzle of EVOO in a skillet, add chopped bacon and cook to crisp. Remove to a paper towel-lined plate to drain, leaving 2 tablespoons drippings in the pan. 1 avocado
1 tablespoon mayonnaise
3 teaspoons fresh lime juice (or 2 tsps fresh lemon juice)
1 dash hot sauce (not too much, more heat will come with the minced chipotle)

1/4 cup thinly sliced scallion
1 tablespoon minced fresh cilantro, to taste
1 1/2 lbs lean ground beef

Steps:

  • Halve, pit and peel avocado.
  • Mash ¼ of avocado with a fork; add mayonnaise, lemon juice, hot sauce and salt to taste; mash with back of fork until smooth.
  • Stir in tomato, chipotle, scallion, cilantro, and remaining avocado, cut into ¼ inch cubes and fold together gently but thoroughly. Cover surface with plastic wrap and refrigerate until ready to use.
  • Mix chili powder, cumin, oregano and salt into beef. Handling beef as little as possible, divide it into quarters; shape each quarter into a patty.

3 slices provolone cheese
1/4 lb hamburger
1/2 tablespoon olive oil
1/4 cup parmesan cheese

Steps:

  • In a non stick frying pan, fry sliced provolone cheese over medium high heat. You can add spices such as oregano, basil, chopped garlic. You can add grated parmesan or romano cheese to soak up some of the excess oil from the provolone. Watch carefully. I got inspired to make this recipe, actually as I was watching a Diners, Drive-ins, and Dives episode on TV. This is an all grilling recipe. If you do it in a pan or on a griddle, add cook time (varies depending on what type you actually use).

1 1/2 lbs ground beef (80/20 recommended)
1/2 lb ground pork
1 1/2 cups A.1. Original Sauce
1 teaspoon cayenne pepper
3/4 tablespoon garlic, minced
1/2 tablespoon paprika
1/2-3/4 lb bacon (Oscer Mayer Bacon recommended)
2 cups cheddar cheese, shredded
1/2 cup colby-monterey jack cheese, shredded (recommended that you buy one of those hunks of cheese and shred it yourself with a cheese grater)
4 hamburger buns

Steps:

  • Put about a 1/4 of a bag of Charcoal in a Charcoal Chimmny and light it.
  • Combine the ground beef and ground pork in a bowl.
  • Add the A-1 Steak Sauce, cayenne Pepper, minced garlic, and paprika to the ground beef and pork mixture; mix together well.
  • Form the patties by taking a ring (about 4 to 5 inches across and 1 to 2 inches high) and placing it on a plate; fill it with about 1/8 of the meat mixture. Add about 1/4 of the cheese mixture.
  • Add another 1/8 of the meat mixture and press together with something heavy, to make sure that the cheese mixture doesn't come out of the patty when you are cooking. (I use a plate with a brick on it)
  • Repeat this step till you have 4 patties.
  • When your grill reaches 450 degrees Fahrenheit, add the patties and cook for about 7 to 8 mintues on each side. I test this with a meat thermometer and stick it about 1/4 of the way into the patty; it should be about 165 degrees Fahrenheit when it is cooked. Push the probe in until you feel it loosen up a bit which means you either poked all the way through or you reached the cheese. If you can't see the probe through the other side of the patty, it should read about 250 degrees Fahrenheit.
  • While the patties are cooking, put a frying pan on the grill next to the patties.
  • Once the pan reaches about 300 degrees Fahrenheit add the bacon (which I microwave on high for 1 mintue to speed up the cooking process).
  • Put the brick on the bacon to keep it from curling up; only do this because the bacon cooks faster and makes it easier to eat the burger when it is done.
  • Butter the buns with melted butter and grill for about 1/2 to1 minute.
  • Take the buns off the grill and put the patties on the buns.
  • Add the bacon over the patty.
  • Add any condiments you choose.

I know, this sound weird. I've been a vegetarian for 5 years and there are some items I missed from my meat eating days. I was having a craving for a Carl's Jr. Western Bacon Cheeseburger one day and decided to vegetarianize it. This is super easy to make and tastes very much like the original. To save time and to make it taste more authentic, use onion rings from a fast food restaurant like Sonic. I prepared the burger while I send my boyfriend down the street to Sonic. Also, slightly burning the Lightlife Smart Bacon is what makes it taste like real bacon.

1 large hamburger bun
1 Morningstar Farms grillers
1 slice cheddar cheese
2 slices lightlife smart bacon
2 onion rings
2 tablespoons barbecue sauce

Steps:

  • If cooking your own onion rings, preheat the oven and start those first.
  • Spray a small pan with cooking spray and heat to medium. Cook Smart Bacon until crispy and slightly burned, turning occasionally. Set aside.
  • Thaw Griller patty in microwave and transfer to heated pan on medium-low. Cook until slightly crispy, but not burned. While the patty is cooking, lightly toast the buns on a skillet. Have cheese slice ready and immediately after turning the patty, place cheese on top followed by the bacon and BBQ sauce. You may put some drops of water into the pan at this time, the steam will help melt the cheese.
  • Pull the bottom bun from skillet and place the onion rings on it. Pull the rest of the burger on top. ENJOY!
  • NOTE: Cooking time is based on baking onion rings at home. If you buy them from a fast food place, the cook time is closer to 10 minutes.

  • Arrange the 8 whole bacon slices on a broiler pan and bake at 375 degrees until crisp, 10-12 minutes.

  • Make the queso sauce in a medium sauce pan, melt the butter over medium heat. Whisk in the flour for 1 minute then whisk in the milk. Stir in the cheese to melt. Stir in the tomatoes.
