CREAMY CAULIFLOWER RICE WITH SHRIMP



Creamy Cauliflower Rice With Shrimp image

This easy recipe transforms veggies into an elegant yet comforting dinner.

Number Of Ingredients 10

3 tablespoons olive oil, divided
1 pound peeled and deveined medium shrimp, tails removed
.75 teaspoon kosher salt, divided
1 medium leek (white and light green parts only), thinly sliced (2 cups)
.25 cup dry white wine
1 12-oz. pkg. fresh riced cauliflower (4 cups)
.50 cup low-sodium chicken broth or vegetable broth
2 ounces fresh baby spinach (2 packed cups)
.25 cup heavy whipping cream
2 ounces Parmesan cheese, finely shredded (about ¾ cup), plus more for serving (optional)

Steps:

  • Heat 1 tablespoon oil in a large skillet over medium. Add shrimp and ¼ teaspoon salt; cook, stirring often, until firm and pink about 5 minutes. Transfer to a plate. Wipe skillet clean.
  • Heat remaining 2 tablespoons oil in skillet over medium. Add leek; cook, stirring often, until tender, 3 to 4 minutes. Add wine; cook, stirring constantly, until wine is fully absorbed, 1 to 2 minutes. Stir in cauliflower and broth; cook, stirring often, until broth is fully absorbed, about 3 minutes. Stir in spinach, cream, and remaining ½ teaspoon salt; cook, stirring constantly, until spinach wilts, about 2 minutes. Add cheese; cook, stirring constantly, until melted, about 1 minute.
  • Remove from heat and stir in cooked shrimp. Serve immediately with more cheese, if desired.

This creamy cauliflower rice risotto with shrimp is flavored with Parmesan cheese, garlic and fresh parsley.

unsalted butter
1 lb medium shrimp, peeled and deveined
24 ounces frozen cauliflower rice, thawed
2 shallots, diced
2 garlic cloves, chopped
2 cups chicken broth
4 ounces cream cheese
1/2 cup grated parmesan cheese
salt
pepper
freshly grated nutmeg
2 tablespoons chopped parsley, plus more for garnish
lemon wedge, for serving

Steps:

  • Heat a small heavy-bottomed pot over medium heat. Add 2 tablespoon butter and let melt. Add shrimp and season with salt and pepper. Stir occasionally with a wooden spoon and cook until just cooked through, about 5-7 minutes. Transfer cooked shrimp to a plate, cover with aluminum foil and set aside.
  • Add 3 tablespoons of butter of the pot and let melt. Add shallot and garlic and season with salt and pepper. Let cook until translucent, about 5-7 minutes. Add the cauliflower rice and cook 2-3 minutes.
  • Add 1 cup of the chicken broth and simmer on medium high until the moisture has been absorbed by the cauliflower. Add 1/2 cup of broth and let absorb. Repeat without remaining 1/2 cup broth.
  • Lower heat to medium and add the cream cheese, parmesan and a pinch of freshly grated nutmeg. Stir to combine and cook for 1 minute.
  • Add the cooked shrimp and parsley. Season with salt and pepper. Cook for 2 minutes until heated through.
  • Garnish with more parsley and serve with lemon wedges.

Here's what you need: cauliflower florets, sesame oil, carrots, garlic, large shrimp, frozen peas, eggs, low sodium soy sauce, white pepper, green onion

3 cups cauliflower florets
1 teaspoon sesame oil
3 carrots, diced
3 cloves garlic, minced
1 lb large shrimp, peeled and deveined
1 cup frozen peas, thawed
2 eggs, beaten
3 tablespoons low sodium soy sauce
½ teaspoon white pepper
green onion, for garnish

Steps:

  • Pulse cauliflower in a food processor until broken into rice-sized pieces.
  • Heat the sesame oil in a large skillet or wok. Toss in the carrots and sauté until soft, about 5 minutes.
  • Add in the garlic and shrimp and sautée until the shrimp begin to turn pink, about 2 minutes.
  • Add the peas and cauliflower rice and mix until the cauliflower has warmed through.
  • Move the contents of the pan to the side to create a well in the center. Pour in the eggs and slowly scraped the cooked bits off the bottom of the pan to scramble the eggs. Once the eggs are almost finished cooking, mix everything in the pan together.
  • Season the cauliflower with white pepper and soy sauce, give one last good mix to combine and serve with a garnish of sliced green onion.
  • Enjoy!

  • In a blender (or food processor) add 1 cup of cauliflower florets at a time (working in batches) and pulse each batch quickly about 3-5 times or until the cauliflower is the same consistency of rice. Transfer to a large bowl and repeat with remaining cauliflower until all done.
  • Melt butter in a large pan or skillet over medium heat. Add prawns (shrimp) and sear them while stirring them occasionally until they just start to change in colour. Add garlic and lemon juice and fry for an additional minute. Add the oil and the cauliflower 'rice' to the pan, and fry for a few minutes until glossy and coated in all of the pan flavours. Stir through the cream, wine and cheese. Season with salt; reduce heat to low, cover the pan and cook while stirring occasionally until cauliflower is creamy and tender (about 6-8 minutes).
