2 granny smith apples
2 golden delicious apples, red
2 tablespoons lemon juice
1 1/2 cups celery, thinly sliced
1/2 cup pecans, roasted & halved
1/2 cup mayonnaise
1/2 cup sour cream
2 teaspoons lemon juice
1 teaspoon honey
1 pinch cinnamon
1 pinch nutmeg

Steps:

  • Core and quarter apples, slice thinly, dip in lemon juice; combine with celery in bowl.
  • Add pecans to salad, toss lightly, serve topped with dressing.
  • Dressing; Combine all ingredients.

1 cup water
1/2 cup dried cranberries
1/4 cup golden raisin
1/2 cup mayonnaise
3 tablespoons plain yogurt
2 tablespoons sugar
2 teaspoons grated lemon rind
1 tablespoon fresh lemon juice
4 apples, 1 granny smith and 3 gala, peeled, chopped and cored
1/2 cup chopped toasted pecans

Steps:

  • Bring one cup water to a boil in a saucepan. Remove from heat and stir in cranberries and raisins. Let stand for 10 minutes and drain.
  • Stir together mayonnaise, yogurt, sugar, lemond rind and lemon juice.
  • Stir in apples, cranberries and raisins.
  • Cover and chill.
  • Sprinkle with pecans before serving.
  • This is also good when served in a pita pocket with mixed greens!

1/4 cup chopped pecans
2 tablespoons maple syrup (or 1/8 cup brown sugar mixed with 2 tsp. water)
1/8 teaspoon cinnamon
1 tablespoon fresh cranberries (or frozen, may use dried craisins if you like)
1 tablespoon golden raisin
2 tablespoons balsamic vinegar
1/4 cup red onion, chopped
2 teaspoons brown sugar
1 1/2 teaspoons Dijon mustard
1/2 cup extra virgin olive oil
salt and pepper
5 cups mixed salad greens, rinsed and dried
1 fuji apple, cored and chopped (or try Pink Lady or Gala)
2 tablespoons fresh lemon juice
1 tablespoon water

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat the pecans with the 2 tbls. maple syrup(or brown sugar mixture) and 1/8 teaspoons cinnamon.
  • Spread the pecans out on a baking sheet in a single layer. Bake for 5 to 8 minutes in the preheated oven, or until lightly toasted.
  • In a food processor, combine the cranberries, raisins, vinegar, onion, brown sugar, and mustard. Chop coarsely; remove from processor and place in a bowl.
  • Gradually whisk in olive oil, and season with salt and pepper.
  • Chop apple into bite size pieces, then mix with lemon/water mixture in a bowl to prevent browning. Keep apples in mixture until you toss ingredients into salad.
  • In a salad bowl, toss together the greens, apples, and enough of the cranberry mixture to coat.
  • Sprinkle with pecans, and serve.

2 tablespoons low-fat sour cream
2 tablespoons white wine vinegar (I used rice wine vinegar)
1 teaspoon sugar (not necessary if using rice wine vinegar)
8 -10 stalks celery, peeled and sliced
1 apple, halved, cored and thinly sliced

Steps:

  • Preheat oven to 350. Spread pecans on a rimmed baking sheet; bake until lightly browned, 5 to 7 minutes. Set aside to cool.
  • In a med bowl, whisk together sour cream, vinegar and sugar (if using) until smooth.
  • Add celery and apple. Toss gently to combine.
  • Crumble toasted pecans on top, serve immediately.

Steps:
