½ cup heavy cream
2 tablespoons unsalted butter
½ teaspoon ground nutmeg
½ teaspoon salt
ground black pepper to taste
1 pound fresh spinach

Steps:

  • In a medium saucepan over medium heat, mix heavy cream, butter, nutmeg, salt and pepper. Stirring constantly, bring to a boil, then reduce heat to simmer.
  • Place spinach in a vegetable steamer, and steam until leaves are wilted. Drain in a colander, pressing out excess water with a large spoon.
  • Coarsely chop spinach in a food processor, and gradually stir into the heavy cream mixture. Briefly return to boiling, then remove from heat.

2 tablespoons unsalted butter
1 tablespoon minced fresh garlic
1/2 teaspoon Diamond Crystal kosher salt
1/4 teaspoon black pepper
1/4 teaspoon ground nutmeg
1/4 cup heavy cream (plus up to 1/4 cup more if needed)
1/4 cup grated Parmesan cheese

Steps:

  • Place the frozen spinach in a microwave-safe bowl. Cover and microwave on high just until thawed, about 4 minutes.
  • Place the spinach in a colander and press on it with the back of a large spoon to remove as much liquid as possible.
  • In a medium saucepan, melt the butter over medium heat. Add the garlic and cook for 1 minute.
  • Stir in the spinach, salt, pepper, nutmeg, heavy cream, and Parmesan.
  • Cook, stirring, just until heated through, 1-2 minutes, then serve.

This pasta nods to everyone's favorite steakhouse side, and it comes together in no time, making for a fine weeknight meal. One full pound of fresh spinach is cooked down in garlicky butter before cream is added, then simmered until thickened. The cooked pasta is added directly to the sauce, then tossed with ricotta cheese for even more richness. Fettuccine or tagliatelle pasta work best, but the creamy sauce will cling to any long noodles. Top with pine nuts, walnuts or hazelnuts for crunch, or leave the nuts out entirely. Serve as a side to grilled steak, chicken or fish, or serve it on its own, paired simply with a glass of bubbles.

1 cup whole-milk ricotta
Kosher salt and black pepper
1 pound long pasta, such as fettuccine or tagliatelle
3 tablespoons pine nuts (optional)
4 tablespoons unsalted butter
3 garlic cloves, thinly sliced
1 pound fresh baby spinach
1 cup heavy cream
1/4 teaspoon grated nutmeg
Grated pecorino or Parmesan, for serving

Steps:

  • Add the ricotta to a large bowl; season well with salt and pepper and set aside.
  • Bring a large pot of well-salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water and drain.
  • Prepare your sauce while the pasta cooks: If using, cook the pine nuts in a deep 12-inch skillet over medium heat until toasted, stirring occasionally to make sure they do not burn, 2 to 3 minutes. Transfer to a small bowl.
  • Wipe skillet clean and melt the butter over medium-low heat. Add the garlic and sauté until pale golden, about 2 minutes. Add the spinach, stirring it in by the handful if needed, and cook until it wilts, adding a few tablespoons of the pasta water to help it along if needed, about 4 minutes. Season with salt.
  • Add the cream, bring to a simmer over medium heat and cook until sauce begins to thicken slightly, about 2 minutes more. Stir in the nutmeg then season with salt and pepper. Add the cooked pasta directly to the skillet and toss until the noodles are glossy with sauce.
  • Turn off heat and stir in the prepared ricotta, thinning the sauce with a bit of pasta cooking water if needed. Taste and adjust seasonings as needed. Divide among bowls. Top with pine nuts, if using, and pass grated pecorino or Parmesan at the table.

1 small onion, finely chopped
2 tbsp plain flour
200ml full-fat milk
2 x 200g bags spinach
100ml single cream
fresh nutmeg, for grating

Steps:

  • Heat 25g butter in a saucepan, then add 1 finely chopped small onion and cook for 5 mins until softened.
  • Stir in 2 tbsp plain flour and cook for 2 mins, then slowly start to whisk in 200ml full-fat milk. When it has all been incorporated, gently cook for 5 mins until the sauce has thickened.
  • Meanwhile, place two 200g bags spinach in a large colander. Pour over a kettle full of boiling water until the leaves have wilted (you may have to do this twice).
  • Place the spinach in a clean dishcloth, squeeze out any excess liquid, then roughly chop.
  • Stir into the sauce with 100ml single cream, gently heat, then finely grate over some fresh nutmeg and season well.

½ cup finely chopped shallots, from 1 to 2 shallots
2 garlic cloves, finely chopped
1 pint (2 cups) heavy cream
½ teaspoon salt

Pinch freshly grated nutmeg, or use ground nutmeg
½ cup finely shredded Parmigiano-Reggiano
2 pounds frozen cut leaf spinach, thawed and squeezed very dry (see note)

Steps:

  • Melt the butter in a large skillet over medium-low heat. Add the shallots and cook, stirring frequently, until soft and translucent, about 4 minutes. Add the garlic and cook, stirring constantly, for 1 minute more. Do not brown. Add the heavy cream, salt, pepper, and nutmeg and bring to a gentle boil. Cook, uncovered, stirring occasionally, until the cream is thick enough to coat a wooden spoon, about 10 minutes. Add the cheese and stir until melted. Add the spinach and stir until evenly combined with the cream sauce. Taste and adjust seasoning if necessary. (If the spinach seems a little watery, cook over medium-low heat until any excess liquid evaporates.) Serve warm.
  • Note: Cut leaf spinach is not the same as chopped spinach. If your market doesn't carry cut leaf spinach, look for frozen whole leaf spinach. (Chopped spinach will work but the texture won't be as appealing.) Some markets carry 1-lb bags and some carry 10-oz boxes; if you can only find the 10-oz boxes, you'll need three of them. If you'd like to start with fresh spinach, you'll need about 2 pounds baby spinach leaves. Steam and drain the baby spinach, then roughly chop and measure out 2 packed cups.
  • Make-Ahead Instructions: This dish can be made and refrigerated a day ahead of time. Reheat in the microwave, uncovered, stirring every 30 seconds or so, until hot, a few minutes. 500 g frozen spinach
1/2 cup light cream
2 1/2 tablespoons cream cheese
1/2 teaspoon chicken stock
1 cup parmesan cheese

Steps:

  • Cook time reflects the total cook time if you boil spinach and it is not already thawed.
  • Either thaw spinach or you can boil (also fresh may be used I use frozen in this to save on time, you don't have to wash and chop it down.) If boiling spinach drain and rinse under cold water to cool, then take spinach in handfuls and squeeze out all excess water and place in microwave safe bowl. If you thawed the spinach just make sure all excess liquid is squeezed out.
  • Add the half cup of cream and chicken stock and microwave for 1 minute on high, remove and stir. Add the cream cheese and mix, again cook for one minute on high. Remove from microwave and stir, add the Parmesan in about 3 lots, melting in the microwave after each addition. Finally once cheese has melted just make sure heated through.
  • This process can also be done on the stove in a saucepan, I just find it quicker in the microwave you can also make this ahead of time as it reheats fine.

2 1/2 pounds spinach in bulk, or two 10-ounce plastic wrapped bags
1 tablespoon butter
1 tablespoon flour
1 cup milk
1/2 teaspoon freshly grated nutmeg

Steps:

  • If bulk spinach is used, pick it over to remove and discard any tough stems and blemished leaves. Rinse the spinach thoroughly and shake off excess water. There should be about 2 pounds cleaned weight, or 16 cups.
  • Bring enough water to a boil to cover the spinach when it is added and stirred down. Add spinach and cook 2 minutes and drain. Run under cold running water until chilled. Empty the spinach into a deep colander and press to extract most of the water.
  • Put the spinach into the container of a food processor or an electric blender and blend thoroughly. There should be about 1 3/4 cups.

Remove the garlic and put the spinach into a colander and let it drain well. Press out as much liquid as you can from the leaves and chop them coarsely.
