Steps:
- Cut onions into 1/2-in. slices; saute in butter until tender. Place in a greased 8-in. square baking dish. , In a small bowl, stir the flour, broth, cream, salt and pepper until smooth; pour over onions. Sprinkle with cheeses. , Bake, uncovered, at 350° for 25-30 minutes or until cheese is golden brown and mixture is bubbly.

CREAMED VIDALIA ONIONS
Steps:
- Preheat the oven to 350 degrees F. Melt 4 tablespoons butter in a stoveproof gratin dish over medium-high heat; add 4 pounds Vidalia onions (cut into wedges) and cook 5 minutes. Add a pinch each of nutmeg, cayenne, salt and black pepper, then add 3 tablespoons white wine and simmer 2 minutes. Whisk 1 1/4 cups half-and-half and 3 tablespoons flour; stir into the onions and bring to a boil. Mix 2 tablespoons melted butter, 1 cup panko (Japanese breadcrumbs), 2 tablespoons chopped chives, and salt and pepper. Sprinkle over the onion, cover with parchment paper and bake 30 minutes. Uncover and broil until golden, 5 more minutes.
BAKED ONIONS AU GRATIN
This is one of my mother's recipes. Everytime she makes it for a party or brunch, everyone demands the recipe! This dish is rich and good by itself as a side dish, or put it on some crusty bread! Enjoy!

- Saute onions in butter.
- Place onions in a 9 x 13 casserole dish with a slotted spoon.
- Stir in heavy whipping cream, white wine, and black pepper. Mix well.
- Top with cheeses.
- Bake at 375 degrees for 15-20 minutes.

- THAW 1 (14 ounce) bag Bird's Eye Frozen petite Whole Onions; LET drain; MINCE 1/4 teaspoon fresh thyme leaves; GRATE 1/2 cup Sharp Cheddar Cheese; SET aside.
- MELT 2 tablespoons butter in a 1-2 quart saucepan over medium heat; ADD drained onions; RAISE heat to medium-high; STIR onions constantly as they cook, until they begin to caramelize.
- SPRINKLE 2 tablespoons flour over onions; STIR for for 1 minute.
- DEGLAZE onions with 1/3 cup dry white wine; ADD the minced thyme; STIR, scraping the bottom, until wine evaporates.
- REDUCE heat to medium-low.
- ADD 1/3 cup cream or half and half; STIR until sauce is warmed and thickened.
- SEASON sauce with 1/4 teaspoon dry mustard (or prepared horseradish), 1 pinch freshly grated nutmeg, 1 pinch ground white pepper, and kosher salt, to taste.
- REMOVE from heat; ADD the grated cheese; STIR until cheese is completely melted.
- GARNISH with thinly snipped chives and SERVE.
- GET READY to melt into your seat after just one taste!

CREAMED CORN GRATIN WITH FRIED ONION RINGS AND BACON
This is oh so good! We had it the other night as a trial for Thanksgiving Dinner where all the family members are invited and there are some women who have had more than the 2 point something children - we are talking about Latin women! ;) Bon Appetit Magazine, November 2003 edition. It is a little time consuming to say the least but you make it only once a year!

- Preheat oven to 350°F
- Spread breadcrumbs on rimmed baking sheet; bake until lightly toasted, about 10 minutes.
- Sauté bacon in large skillet over medium heat until crisp.
- Using slotted spoon, transfer bacon to paper towels.
- Transfer 2 tablespoons bacon drippings to heavy large pot; reserve for creamed corn.
- Discard remaining drippings.
- Place flour in medium bowl.
- Sprinkle with salt and pepper.
- Separate red onion slices into rings and toss in flour to coat lightly.
- Heat 1/2 cup oil in same large skillet over medium-high heat.
- Working in batches, add onion rings to skillet and cook until golden brown, adding more oil as needed, about 2 minutes per side.
- Transfer onion rings to paper towels.
- Mix breadcrumbs, bacon, onion rings, and half of green onions in clean medium bowl.
- Sprinkle topping with salt and pepper.
- Butter 13x9x2-inch glass baking dish.
- Add butter to pot with reserved bacon drippings; melt over medium-high heat.
- Add chopped onion; sauté until light golden and beginning to soften, about 6 minutes.
- Add frozen corn; sauté 5 minutes.
- Add milk and cream; bring to boil.
- Gradually stir in grits and cayenne pepper.
- Reduce heat and simmer until mixture thickens slightly, about 3 minutes.
- Remove from heat.
- Stir in cheese and remaining green onions.
- Season with salt and pepper.
- Transfer creamed corn to prepared dish. (Topping and corn can be made 1 day ahead. Cover separately and chill.)
- Preheat oven to 350°F
- Bake gratin uncovered 25 minutes.
- Sprinkle topping over; bake until topping is slightly crisp and creamed corn thickens and is heated through, about 20 minutes longer.

CREAMY POTATO GRATIN WITH CARAMELISED ONIONS

- Up to 2 days before serving, heat oven to 200C/180C fan/gas 6. Heat the oil in a large frying pan. Add the onions and thyme, cover, and cook over a gentle heat for 10-15 mins until softened and caramelised. Pour the cream and milk into a large bowl and season well. Add the potatoes and mix to combine.
- Butter a 23 x 28cm ovenproof dish, then layer in half the potatoes. Spread the onion mixture on top, then layer on the remaining potatoes. Press down with your hands. Pour over the milk mixture, which should come just level with the potatoes. If not, add a little more milk until it does. Cover with foil, then bake for 11⁄2 hrs until tender. Remove from the oven and leave to cool. Cover and store in the fridge.
- On the day, heat the oven to 220C/200C fan/gas 7. Uncover the gratin, spread the crème fraîche on top, then sprinkle over the Parmesan. Put in the oven and cook for 30 mins until the cheese is melted, the top crisp and golden brown, and the gratin piping hot. Serve garnished with extra thyme.

GRATINEED MUSTARD CREAMED ONIONS

- Cook onions in a large heavy pot of boiling salted water (2 teaspoons salt for 4 quarts water) until just tender, 25 to 30 minutes. Reserve 1 cup cooking water, then drain (reserve pot). Cool onions to warm, then peel.
- Melt butter in dry pot over medium heat. Add flour and cook, stirring, 2 minutes. Whisk in reserved cooking water, milk, and Sherry and cook, whisking frequently, until mixture is thickened, about 8 minutes. Whisk in mustards, nutmeg, and 1/2 teaspoon each of salt and pepper. Add onions to sauce and simmer 5 minutes.
- Preheat broiler.
- Transfer creamed onions to baking dish and sprinkle evenly with cheese. Broil 4 to 5 inches from heat until top is golden brown and bubbling, about 3 minutes.

- Melt butter in heavy large skillet over medium heat. Add leeks, large onions, shallots and garlic and sauté until all are tender, about 20 minutes. Add baby onions and cook 10 minutes longer, stirring occasionally. Mix in 2 cups whipping cream. Boil until cream is thickened to sauce consistency, about 10 minutes. Transfer vegetable-cream mixture to 6-cup shallow baking dish. (Can be prepared 1 day ahead. Cover and refrigerate. Return mixture to room temperature before continuing.)
- Preheat oven to 425°F Sprinkle breadcrumbs over onion mixture. Bake until breadcrumbs are golden brown and onion mixture bubbles, about 20 minutes. Sprinkle with parsley.
