MARVELOUS MICROWAVE CHOCOLATE CREAM PIE
I always hated to stand over the stove stirring and stirring......waiting for the custard to thicken and worried that it would stick and burn on the bottom of the pan. NOT ANYMORE!! This chocolate cream pie is delicious and no one will ever know you made it in the microwave unless you tell them!

Steps:
- Place first 6 ingredients in a blender and blend until well mixed.
- Pour mixture into a Pyrex or microwave-safe glass bowl or measuring cup.
- I use a 4-cup Pyrex measuring cup with a handle.
- Add butter to chocolate mixture.
- Microwave on HIGH for 10 minutes.
- During last 5 minutes, stop and stir every minute.
- (if your microwave doesn't have a turntable, you will need to turn the bowl, also, during the last 5 minutes.) By this time, chocolate mixture should be thickened.
- Remove and let cool slightly.
- Add vanilla and continue to cool.
- Pour into a cooked 9-inch pie crust which has been allowed to cool.
- For Meringue: Pre-heat oven to 350 degrees.
- Beat egg whites until foamy.
- Gradually add sugar and continue beating until meringue becomes stiff and glossy.
- Add vanilla and mix in well.
- Spread meringue over cooled pie filling in pie shell.
- Spread all the way to the edges and make"seal" over the filling.
- Place pie on cookie sheet.
- Bake in 350°F oven approximately 10-12 minutes or until peaks of meringue turn golden brown.
- Cool thoroughly before slicing.

MICROWAVE VANILLA CREAM PIE & VARIATIONS
This is a breeze to make! We love cream pies but I have arthritis and a lot of times I don't feel like all the stirring it takes to make a cream pie the traditional way. This cuts out all of that! The taste is exactly the same, delicious! This recipe comes from an old Tappan O'keefe & Merrit Microwave Cooking Guide.

Steps:
- Mix together sugar, cornstarch, salt and 1/2 cup milk in a 1 1/2 qt.
- casserole until smooth.
- Stir in remaining milk.
- Microwave on HIGH for 5 to 8 minutes or until thickened.
- Stir occasionally the last half of cooking.
- Beat a little of the hot mixture into the beaten egg yolks, then add the egg yolk mixture to the remaining hot mixture.
- Microwave on HIGH for 1 1/2 to 2 minutes or until thickened.
- Stir occasionally.
- Blend in butter and vanilla.
- Pour into the cooled baked pastry shell.
- Beat egg whites and cream of tartar until foamy.
- Gradually add sugar, beating until stiff peaks form.
- Spread over filling.
- Seal around edges.
- Microwave on MEDIUM-HIGH for 3 to 4 minutes.
- *Ifmicrowave has a browning element, brown as desired.
- Variations:.
- BANANA CREAM PIE.
- Follow Vanilla Cream Pie recipe as directed except slice 2 medium bananas in the bottom of the 9 inch baked pastry shell.
- Pour vanilla cream pie filling over the bananas.
- Top with meringue.
- BUTTERSCOTCH CREAM PIE.
- Follow Vanilla Cream Pie recipe as directed except substitute the granulated sugar with dark brown sugar and add 3 tablespoons butter instead of the 2 tablespoons butter.
- COCOA CREAM PIE.
- Follow Vanilla Cream Pie recipe as directed except add 1/3 cup cocoa in Step 1 and increase cornstarch to 1/4 cup.
- (I use the larger amount of sugar for this one.) COCONUT CREAM PIE.
- Follow Vanilla Cream pie recipe as directed except add 1 cup coconut to cream pie filling and sprinkle 1/3 cup toasted coconut over the meringue.
- I bake my meringue in my gas oven just because I prefer it that way.
MICROWAVE SUGAR CREAM PIE
This recipe was the grand prize winner a few years ago in a recipe contest held by an area newspaper. I love sugar cream pie, but didn't have an easy recipe until I found this one. I used a store bought pie shell, and ended up with more filling than the shell would hold so we ate the leftover filling like pudding.

Steps:
- In a large bowl, combine sugar, flour and salt.
- Gradually stir in the half and half, then the melted butter.
- Place bowl in microwave.
- Cook mixture on high power, stopping to stir every 1 minute and 30 seconds, for a total of ten minutes cooking time.
- Note: It is very important to stop and stir the mixture.
- Finally, add vanilla and microwave for an additional 30 seconds or until mixture is bubbly.
- Pour filling into a 9- inch pie shell.
- Sprinkle with cinnamon, if desired.
- Allow pie to cool completely before cutting.
CREAM PIE FILLING - MICROWAVE RECIPE

- Mix eggs, sugar and cornstarch together w/ whisk. Add milk. Microwave for 3 mins. Stir, microwave for 3 mins Stir, Microwave for 2 mins. Add 1/2 t. vanilla. Variations: Peanut butter: add 3-4 tsp peanut butteer after cooked. Date Cream: make filling: 4 oz. chopped dates, 1/4 c suagr, 1/4 c water, 1/2 T lemon juice. Bring to boil, simmer for 5 mins. Add date mixturre to vanilla cream filling after it is cooked. Chocolate: add 2 T cocoa to egg mixture. Maple cream: 1 c milk and 1 c maple syrup (replaces other milk) add to mixture in beginning and cook as directed--add little extra cornstarch. Coconut cream: add 1 cup coconut to mixture after it is cooked. Coconut Cream: add 1 coconut after cooked.

- Preheat oven to 375 degrees F (190 degrees C).
- In 1 1/2 quart casserole dish, mix together sugar, cornstarch, cocoa, salt and 1/2 cup of milk until smooth. Once it is mixed well, stir in remaining milk. Microwave on high for 5 to 8 minutes or until thick; stir halfway through cooking.
- In a small bowl, place a small amount of the hot mixture and beat together with egg yolks. Stir back into original mixture in casserole dish. Microwave on high for 1 1/2 to 2 minutes or until thickened; stir frequently. Blend in butter and the 1 teaspoon of vanilla. Pour mixture into pastry shell.
- To Make Meringue: In a small bowl, beat egg whites and cream of tartar until foamy. Gradually stir in 2 tablespoons of sugar at a time until stiff peaks form; stir in vanilla. Spread meringue over top of pie filling.
- Seal rim of pie with aluminum foil, then bake in preheated oven for about 8 minutes or just until meringue gets browned.

CREAM PIE FILLING
I am a pie maker. My grandmother was a professional pie maker. She taught all of us. This is an old family recipe we made in a double boiler--- but I now make this filling in the microwave. My friend, Nan, gave me that tip about 25 years ago. It is no fail--- no lumps!!

- For Chocolate - add 2 heaping Tbls. Hersheys Dry Cocoa and an extra 1/4 cup sugar. Mix sugar, cocoa and flour before adding milk. After cooking add vanilla and butter.
- For Coconut - After cooking add small can of coconut, vanilla and butter .
- For Pineapple - After cooking add small can of crushed pineapple drained well, vanilla and butter.
- For Banana - After cooking add 3-4 sliced bananas, vanilla and butter.
- In large mixing bowl combine sugar and flour (and cocoa).
- Add milk using wire whip and mix well.
- Cook in microwave for 2 minutes and whip.
- Add beaten eggs and cook for 2 minutes and whip.
- Cook 1 minute in microwave and whip.
- (You may need to cook for another minute or two until the right consistency.)
- After cooking add butter and vanilla.
- Cool for 30 minutes and pour into cooked pie shell.
- Cover filling with plastic wrap and refrigerate.
- When pie is chilled, top with whipping cream.
- I usually make the pie the night before serving and add the whipping cream the next day.
