I took three different crepe recipes and combined them to come up with a real winner!

1 recipe Basic Crepes
6 slices bacon
1 tablespoon unsalted butter
½ pound fresh mushrooms, sliced
3 tablespoons unsalted butter
¼ cup all-purpose flour
1 cup milk
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 tablespoon chopped fresh parsley
2 tablespoons grated Parmesan cheese
salt and pepper to taste
⅔ cup chicken broth
2 eggs
½ cup lemon juice
salt and pepper to taste

Steps:

  • Prepare Basic Crepes recipe according to recipe directions. Separate with wax paper and keep warm until ready to serve.
  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside. Reserve about 1 tablespoon drippings, add 1 tablespoon butter, and saute mushrooms.
  • In a separate saucepan, melt 3 tablespoons butter over medium heat. Whisk in 1/4 cup flour, stirring constantly, until a smooth paste is formed. Gradually stir in 1 cup milk, stirring constantly until a smooth thick gravy is formed. Add bacon, mushrooms, spinach, parsley, Parmesan cheese, salt and pepper. Let cook until somewhat thick, about 10 minutes.
  • In saucepan bring broth to a boil. In a small bowl, whisk together eggs and lemon juice. Temper eggs and broth together whisking constantly so as to cook, but not to scramble the eggs. (Cooking eggs to 170 degrees F). Again, salt and pepper to taste.
  • Fill each crepe with spinach and meat filling, roll up, and top with warm egg sauce.

For a delicious French-style brunch, give these savory crepes with sautéed mushrooms and spinach a try! A gourmet meal that's easy to prepare!

1 cup all-purpose flour
¼ teaspoon kosher salt (or table salt)
2 large eggs
¾ cup whole milk
¾ cup water (room temperature, divided)
2 tablespoons unsalted butter (plus more for cooking)
2 tablespoons unsalted butter (or olive oil)
½ cup red onion (or shallots, ¼-inch dice)
1 tablespoon fresh thyme (chopped, or 1 teaspoon dried)
1 tablespoon minced garlic
16 ounces brown mushrooms (¼-inch thick slices, about 5 cups)
1 teaspoon kosher salt
½ teaspoon black pepper
4 cups baby spinach
⅓ cup heavy cream
1 cup shredded gruyere cheese (or parmesan)
2 teaspoons minced parsley (plus more for garnish)

Steps:

  • In a medium bowl, whisk together the flour and salt.
  • In a separate medium bowl, whisk the eggs. Add the milk and ½ cup water, whisk to combine.
  • Microwave the 2 tablespoons of butter on high power in 30 seconds intervals until just melted, stirring to dissolve any pieces. It should not be above 140ºF (60ºC) when added to the batter or the eggs will curdle.
  • Make a well in the flour mixture. Add the melted butter. Gradually add the liquid egg mixture. Constantly whisk until a smooth batter forms. Alternatively, in a blender, add the eggs, milk, ½ cup water, flour, salt, and melted butter. Blend on medium speed until smooth, about 40 to 45 seconds.
  • Strain the batter into a medium bowl to remove any clumps. Cover and refrigerate for 1 hour.
  • Once chilled, whisk in about ¼ cup of water to thin out the consistency. It should be similar to cream in texture.
  • Heat a 10-inch nonstick skillet over medium heat for 1 minute. Add ½ teaspoon butter, swirling to coat the pan. When melted, wipe the excess with a paper towel. There should be a thin film in the pan, coating the bottom and sides.
  • Add a ¼ cup (60ml) of the batter to the 6 o'clock position of the skillet. Moving quickly, lift the skillet, tilt it slightly to coat the pan, and then swirl several times in a circular motion to evenly cover the entire skillet. Fill in any holes with batter as needed.
  • Place the pan back over the heat. Cook until the edges pull away from the skillet and lightly golden brown underneath, about 45 seconds to 1 minute. Use a spatula to loosen. Use either your fingers or spatula to flip and cook until the bottom sets, about 10 to 30 seconds. Transfer the crepe to a plate.
  • Stack the crepes on top of each other to keep warm while making the next batch, loosely cover with foil.
  • Cook the remaining batter, wiping the pan clean and adding a thin layer of butter between each crepe.
  • In a large skillet melt the butter over medium heat. Add the red onions and thyme, cook until fragrant, 1 minute. Add the minced garlic, saute for 30 seconds.
  • Add the sliced mushrooms, salt, and black pepper. Sauté until the mushrooms release all their water, about 5 to 6 minutes.
  • Add the baby spinach, stir and cook until wilted, 1 to 2 minutes.
  • Remove the pan from the heat, stir in the cream and parsley. Season with salt and pepper to taste.
  • Evenly fill each crepe with the mushroom mixture, about ⅓ cup, and sprinkle some gruyere cheese on top. Fold over each side to close. Garnish with parsley, serve immediately.

1 cup flour (125g) (spooned and leveled)
3 large eggs
3/4 cup milk
1/2 cup water
2 tablespoons melted butter (or vegetable oil)
1 teaspoon thyme
1/2 teaspoon sugar (optional)
1/4 teaspoon salt
pinch of black pepper
butter (for cooking the crepes)
3 tablespoons frying oil
4 shallots (or 2 medium onions)
4 cloves garlic
1 teaspoon thyme
1 1/2 lbs (700g) mushrooms, button, cremini, or fresh wild mushrooms
2 handfuls spinach (90g)
1 1/2 cups shredded Gruyere cheese (150g or 5 1/2 ounces, or sharp cheddar)
salt and pepper (to taste)

Steps:

  • Add all the ingredients for the crepe batter into a medium/large bowl. Mix with a hand (immersion) blender or in a stand blender until smooth. You can also just whisk it by hand.
  • Cover the bowl with a kitchen towel and let stand for 30 minutes. While the batter is resting, prepare the filling.
  • Prepare the ingredients: Cut the mushrooms into 1/4-inch (5mm) slices (cut bigger mushrooms in half and then into slices). Chop the shallots, finely chop the garlic. Wash thoroughly spinach and chop it roughly into smaller pieces. Shred the cheese on the large holes of a box grater.
  • Heat 1 tablespoon of oil in a large frying pan over medium-low heat. Add the shallots, cook for 2-3 minutes until soft. Add the garlic and thyme, cook for 30 seconds. Transfer the onion with garlic to a large bowl.
  • Heat another 1 tablespoon of oil over high heat, add 1/2 of the mushrooms in an even layer. Don't stir for the first 1-2 minutes then stir from time to time and cook the mushrooms until the water is evaporated and the mushrooms are browned. Repeat with the remaining mushrooms. Transfer the mushrooms to the bowl with onions.
  • Add the spinach to the pan and cook it briefly until lightly wilted. Transfer to the bowl.
  • Add the shredded cheese to the bowl, season the filling with salt and pepper, stir until combined.
  • Whisk the crepe batter before using. Add a small amount of butter (about 1/2 teaspoon) to a non-stick skillet/pancake pan and heat the butter over medium heat (high heat if you don't have a powerful stovetop) until it's melted and the pan is well-heated.
  • Keeping the pan in your left hand (not on the burner) and the bowl with batter in your right hand, pour a small amount of batter into the pan, tilting and swirling the pan until a thin layer of batter coats the bottom of the pan. You can also pour in the batter with a measuring cup (1/4 cup) or with a ladle if that's more convenient for you, although the amount of batter needed will vary depending on the size of the pan.
  • Cook the crepe for about 30 seconds or until the edges are looking dry and the bottom is light brown (lift the crepe with a spatula to check).
  • Slide a flexible silicone spatula under the crepe and flip it on the other side. Cook for about 10 seconds. Transfer to a plate. Repeat with the remaining batter.
  • Place some of the filling on one half of the crepe. Fold the crepe in half then again in half creating a triangle (you can also roll them up if you wish).
  • Heat a small amount of butter in the pan, add the filled crepes and cook on both sides until golden and crispy and the cheese is melted.
  • Enjoy!

1 1/2 ounces unsalted butter, melted and cooled
1/4 teaspoon kosher salt
4 1/2 ounces all-purpose flour
1/4 cup fresh herbs (parsley, tarragon or chives), finely chopped
8 ounces shiitake mushrooms, thinly sliced
8 ounces cremini mushrooms, thinly sliced
3 tablespoons unsalted butter
1 medium onion, diced
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup whole milk
1 tablespoon chopped tarragon
1 tablespoon chopped chives
2 ounces provolone, shredded
Nonstick cooking spray or very cold butter, for the pan
1 1/2 ounces Parmesan, shredded

Steps:

  • For the crepes: Combine the eggs, milk, butter, salt and 1/2 cup water in the blender and blend for 7 to 10 seconds. Add the flour and blend until just combined, about 5 seconds, then stir in the herbs. Rest the batter in the refrigerator for 1 hour.
  • For the mushroom filling: Meanwhile, finely chop half of the shiitake and cremini mushrooms and set aside.
  • Heat a 12-inch saute pan over medium-low heat and add 2 tablespoons butter. When it has melted, add the onion and cook until translucent, about 5 minutes. Add all the mushrooms
  • (sliced and chopped), salt and pepper to the pan and cook, stirring occasionally, until the mushrooms are soft and the entire mixture has reduced to about one third of its original volume, 4 to 5 minutes.
  • Add the milk and cook until the mixture becomes a loose paste, about 2 minutes. Add the tarragon, chives and provolone and cook for another minute.
  • Heat the oven to 200 degrees F or its lowest setting. And set a cooling rack inside a half-sheet
  • pan.
  • Place an 8-inch nonstick pan over medium-low heat and coat with cooking spray or 1 tablespoon butter. Pour 1 ounce of the batter into the center of the pan and swirl the pan to spread it around evenly. Cook for 30 seconds, or until the edges of the crepe begins to turn up. Flip (you can use a small offset spatula) and cook for another 10 seconds.
  • Place the crepes in the oven on the cooling rack setup and cover with parchment until all the
  • crepes are ready.
  • Remove the crepes from the oven and turn broiler on high.
  • Spread a thin layer of the mushroom mixture on a crepe. Top with Parmesan and another crepe. Transfer to a broiler-proof plate. Repeat with 1 more layer, finishing with Parmesan. Build another crepe on another broiler-proof plate. Put the plates into the oven (if they can fit) and broil until the cheese is just browned, about 1 minute.

1 3/4 cups flour, sifted
1/4 teaspoon salt
3 egg yolks
6 tablespoons melted butter, plus more softened butter for pan
1 pound frozen chopped spinach
2 cloves garlic, minced
1 small onion, sliced
3 tablespoons butter
Salt
1/4 cup half-and-half
3 teaspoons flour
Steamed vegetables, for serving, optional
Grated Parmesan, for topping
Roasted red peppers, sliced, for topping

Steps:

  • For the batter: Put half of the milk into a mixing bowl, along with the flour, salt and egg yolks, and mix at medium speed until smooth. Slowly pour the remaining milk into the mixture and keep mixing at a low speed. Slowly add the melted butter and mix at medium speed.
  • Warm your frying pan. Take a paper towel, dip it in soft butter and wipe the bottom of the frying pan so it is lightly coated. Depending on your pan size, pour a paper-thin layer to cover the pan and move it around. Fry until the crepe slides around the pan and flip. Cook until golden brown spots appear. Repeat with the remaining batter.
  • For the filling: Put a little water at the bottom of a medium pot. Add the spinach, garlic, onion, butter and salt to taste and cook about 20 minutes, stirring constantly.
  • In a separate container, mix the half-and-half and flour until smooth. Pour slowly into the spinach and stir it in. Cook for 15 to 20 minutes.
  • Put some creme of spinach into a crepe and any steamed veggies you would like, such as broccoli, zucchini or bell pepper. Fold the crepe over on itself a couple times and top it with Parmesan and roasted red peppers.

salt, pepper, cayenne
1/4 lb. (1 cup) minced mushrooms
1 T. minced green onions or shallots

Steps:

  • Spinach filling Cook onions in butter still soft, not brown. Add spinach, stir over high heat 2-3 minutes to evaporate moisture. Stir in 1/3 to 1/2 c. cheese sauce to make a thick paste. For cheese mushroom filling: Mash cheese in mixing bowl with seasonings. Beat in 1/3 to 1/2 c. cheese sauce to make thick paste. Saute mushrooms and shallots in butter and oil for 5-6 minutes in a skillet. Stir them into cheese mixture and correct seasoning. Mornay Cheese Sauce -about 3 cups 5 T. flour 4 T. butter 2 3/4 c. very hot milk 1/2 t. salt 1/8 t. pepper Big pinch nutmeg 1/4 c. whipping cream 1 c. coarsely grated Swiss cheese Cook flour and butter slowly in sauce pan for 2 minutes without coloring flour. Off heat, add milk and seasonings. Boil, stirring for 1 minute. Reduce to simmer and stir in cream by T. Sauce should be thick enough to coat spoon fairly heavily. Stir in all but 2 T. cheese. Film top of sauce with milk to prevent skin from forming. Fill crepes and put in shallow baking dish (1 layer only). Pour sauce over and bake 350 on upper third of preheated oven until hot, maybe 20-30 minutes. Sprinkle herbs or extra cheese on top if desired. All of these can be done ahead and put in frig to assemble later. Just warm everything up and go.

This is a recipe for a delicious and cheesy creamed spinach. It's easy and tastes much better than any store bought or frozen versions. I made it for Thanksgiving and it was great!

1 ¼ cups heavy cream
¼ cup butter
2 tablespoons minced garlic

Steps:

  • Heat a large skillet over medium-high heat. Add spinach and cook until wilted, stirring constantly. Remove from the skillet and drain in a colander. Try to squeeze out as much liquid as possible.
  • Melt the butter in the skillet over medium heat. Add garlic and onions; cook and stir until tender, about 5 minutes. Add the spinach and stir in the heavy cream. Sprinkle in the provolone cheese and stir to melt and coat the spinach. Once the provolone has melted, stir in the Parmesan cheese and continue to cook and stir until thickened.
