- Preheat the oven to 350 degrees F (175 degrees C).
- Beat butter and cream cheese together in a bowl using an electric mixer until creamy. Mix in sugar until light and fluffy. Add egg yolk, lemon zest, lemon extract, and vanilla extract. Mix well. Add flour and salt gradually until dough is combined.
- Shape dough into small logs; place a log into a cookie press and press out onto ungreased cookie sheets. Repeat with remaining dough logs.
- Bake in the preheated oven until lightly browned, 12 to 14 minutes.

- Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Whisk the flour, baking powder and salt in a medium bowl.
- Beat the butter, granulated sugar and lemon zest in a large bowl with a mixer on medium-high speed until fluffy, about 3 minutes. Beat in the egg and both extracts. Reduce the mixer speed to low and beat in the flour mixture until just combined.
- Fill a cookie press with the dough according to the manufacturer?s directions; press the dough 1 1/2 inches apart onto unlined baking sheets. Decorate with sanding sugar and/or nonpareils.
- Bake, switching the pans halfway through, until the cookies are golden around the edges, 14 to 17 minutes. Let cool 5 minutes on the pans, then transfer to racks to cool completely.

- Sift cake flour, all-purpose flour, baking powder, and salt together in a medium bowl.
- Combine butter, cream cheese, white sugar, and powdered sugar in the bowl of a stand mixer fitted with the paddle attachment; beat until light and fluffy, 4 to 5 minutes. In a large bowl with an electric mixer on medium, beat together the butter and half the cream cheese until combined, about 2 minutes. Beat in the granulated sugar and 4 teaspoons lemon zest until creamy, 1 to 2 minutes more. Beat in the egg until combined. Add flour mixture and beat until combined.

- Preheat oven to 375F
- Put butter and cream cheese in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until creamy. Mix in granulated sugar. Add egg, lemon zest, and lemon juice; mix well.
- Sift together flour, baking powder and salt into a medium bowl mix into butter mixture on low speed.
- Line a baking sheet with parchment paper. Place small amount of the dough in a pastry bag fitted with a large star tip. (If your dough feels too stiff to pipe, you can scoop the dough with a small cookie scoop, and roll into balls and flatten with the greased bottom of a glass cup)

- Combine 1 cup powdered sugar with the lemonade drink mix in a large plastic bag and shake to mix.
- When the cookies are removed from the oven and while they are still hot, add 4 or 5 at a time to the bag and shake it until the cookies are well coated. Repeat with the remaining cookies.

This recipe comes from a Southern Living paperback called Christmas Cookies. You can decorate these with colored sugar crystals, assorted candies, and or sprinkles if you so desire! I have a fondness for cookies with cream cheese and enjoy these. Sometimes I use almond or anise flavoring. Note added Dec. 2013: It seems improvements are in need so I am making corrections which are my own since I cannot find the original recipe. I am sorry for the mishaps you have had with the given recipe. I may recommend dividing the dough in thirds and working with smaller amounts.

- Changes were made to the amount of cream cheese, flour, and the addition of 1 egg yolk. I found this made a delicious cookie. If you like you may add up to 1/2 teaspoons salt. We are sensitive to sodium so I use as little as possible.
- Cream together butter and cream cheese in a large mixing bowl.
- Gradually add sugar, beating until light and fluffy.
- Add egg yolk and beat well.
- Stir in vanilla extract.
- Combine flour and salt; gradually add to creamed mixture, beating until well blended.
- Shape dough into 3 balls and chill thoroughly at least 25 minutes.
- Press dough from a cookie press 2 inches apart onto ungreased cookie sheets, using desired shaping discs.
- If desired, sprinkle with sugar crystals, etc. to decorate.
- Bake at 400 degrees for 8-10 minutes or until very lightly browned.
- Remove to wire racks to cool.
- May decorate with colored icing, if desired.
- Yield: About 4 dozen.
