BEET BROWNIES [VEGAN, OIL-FREE]



Beet Brownies [Vegan, Oil-Free] image

Soft and fudgy whole food plant-based chocolate beet brownies that are gluten-free and exceptionally easy to make. You'll only need a food processor and 15 minutes of your time.

2 cans (480g, 16.9oz) cooked unsalted black beans
1 cup (130g, 4.6oz) cooked beetroot (if grated, then loosely packed cup)
60g (2.1oz) rolled oats
6 medjool dates (juicy dates), stones removed (see notes for sub info)
2 tbsps cocoa powder
3 tbsps carob powder
¼ tsp Himalayan salt
2 tbsps (40g, 1.4oz) additive-free peanut butter
3 tbsps coconut flour
½ cup (120g, 4.2oz) additive-free oat milk
20g (0.7oz) of cacao liquor (buttons, chips)

Steps:

  • Simply add all ingredients (except cacao liquor) into food processor and process until you have homogeneous batter.
  • Preheat oven to 175C (350F).
  • Next, chop cacao liquor (if you don't use chips or buttons) and mix it into brownie batter leaving a quarter to sprinkle on the brownie.
  • Pour the mixture onto baking sheet lined with parchment paper and, using a spatula, form a square of about 19×19 cm (7.5×7.5 inches).
  • Sprinkle the remaining cacao liquor onto the brownie and bake for 30 minutes. Those brownies will remain of a soft and moist side. So, you don't need to check any toothpicks inserted in the centre. Let cool before slicing.

Steps:

  • Preheat the oven to 350 degrees F; spray a 9-by-13-inch pan with nonstick cooking spray.
  • Stir together the chocolate-hazelnut spread, flour and eggs in a medium bowl. Pour into the prepared pan and spread the mixture to the edges.

1 cup pureed beet (from about 280g raw, roasted and pureed)
1/2 cup canola oil
1 cup sugar
1 tablespoon vanilla extract
2 teaspoons hazelnut extract
2 large eggs
1 tablespoon strong black coffee
1/2 cup flour
1/3 cup Dutch-processed cocoa powder (my favourite is Guittard's Cocoa Rouge)
1/3 cup crushed chocolate covered hazelnuts

Steps:

  • Preheat oven to 350F Grease an 8″ pan. Set aside.
  • Whisk together beets, oil, sugar, extracts, eggs and coffee, and beets.
  • Add the flour and cocoa, stirring just until combined.
  • Spread in the pan and sprinkle with the chocolate covered hazelnuts.
  • Bake 35-45 minutes or until toothpick in center comes out clean. Cool completely before cutting.

I got this recipe from my mom. These are rich, chocolaty, incredibly moist absolutely some of the best tasting brownies I have ever tried. This is the only brownie recipe I use anymore. They are known around my house as "Mom's Brownies" to not give away the secret ingredient. They always disappear fast and no one ever knows they have beets in them!

1 1/2 cups sugar
1 cup vegetable oil
1 (15 ounce) can beets, pureed (juice and all)
2 ounces cocoa
1 (3 ounce) package instant chocolate pudding mix
1 1/2 cups flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 teaspoon vanilla

Steps:

  • Beat together eggs and sugar.
  • Add oil, beets, cocoa and pudding, mix well.
  • Blend in vanilla, flour, soda and salt.
  • Bake in greased and floured 11 x 15 x 1" sheet cake pan for 30 minutes at 375.
  • Top with chocolate icing or glaze such as Nana Lee's #155392.

2 sticks (16 tablespoons) unsalted butter, plus more for greasing the foil
1 3/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon fine salt
1/2 cup chocolate-hazelnut spread, such as Nutella
2 cups sugar
4 large eggs, slightly beaten

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking pan with foil, leaving a 2-inch overhang on at least 2 sides. Butter the foil (not including the overhang).
  • Whisk together the flour, cocoa powder and salt in a medium bowl. Melt the butter and chocolate-hazelnut spread in a medium saucepan over medium heat, stirring frequently. Let cool slightly. Stir in the sugar and eggs. Add the flour mixture, and stir to combine. Pour the batter into the prepared pan, and bake until a toothpick comes out with just a few crumbs, 30 to 35 minutes.
  • Let the brownies cool completely in the pan on a cooling rack. Use the foil overhang to help lift them out of the pan. Cut into 16 squares. Store in an airtight container at room temperature for up to 3 days.

FLOURLESS BEET BROWNIES

Despite being flourless, these beet brownies bridge the gap between fudgy and cakey, offering the best of both worlds. Raw beets make the brownies dense and moist, helping them stay luscious and soft long after they've finished baking. Though the beets bring their own natural sweetness, pulsing the chopped raw beets in a food processor with some additional granulated sugar breaks down the hard root into a vibrant red base. In fact, the food processor does most of the work in this recipe. Baked until just cooked through, the resulting brownies are rich, subtly sweet and deeply chocolatey. If you prefer your brownies a little sweeter, sub the bittersweet chocolate baking chips for semi-sweet baking chips. You can top them with a little flaky sea salt out of the oven. Serve them warm with ice cream for dessert or at room temperature with a cup of coffee in the morning.

1 cup/70 grams unsweetened regular or Dutch-process cocoa powder
1 teaspoon baking soda
1 medium red beet (about 1/4 pound), peeled and cut into 1/2-inch pieces
1/2 cup/100 grams granulated sugar
2 teaspoons vanilla extract (optional)
1 cup plus 3 tablespoons/7 ounces bittersweet or dark (60 percent cacao) baking chocolate chips
2 large eggs
Flaky sea salt, for garnish

Steps:

  • Heat the oven to 350 degrees. Lightly grease an 8-by-8-inch baking pan with olive oil and set aside.
  • In a small bowl, whisk the cocoa powder and baking soda together. Set aside.
  • Add the chopped beets, sugar and vanilla, if using, to the bowl of a food processor, and pulse until the beets are just puréed but before they begin to liquefy, scraping down the sides of the bowl as needed.
  • In a small microwave-safe bowl, add 1 cup/6 ounces chocolate chips and the remaining 2 tablespoons olive oil. Heat in the microwave in 15-second intervals, stirring between each round, until the chocolate is almost completely melted, up to 75 seconds total. Remove the chocolate from the microwave, stir until completely smooth, then immediately add it to the food processor. Blend it with the beets on high until smooth. Add the eggs, blend to incorporate, then add the dry ingredients and blend until just combined, stopping to scrape down the sides of the bowl as needed.
  • Remove the blade, and using a rubber spatula, scrape the brownie batter into the prepared pan, then smooth it into an even layer. Sprinkle the remaining 3 tablespoons/1 ounce chocolate chips on top and bake until the brownies have puffed and set on top but are still a little fudgy when a toothpick is inserted inside, about 25 to 30 minutes.
  • Remove the brownies from the oven and allow to cool for at least 30 minutes before cutting into squares and topping with flaky sea salt.

SALTED CHOCOLATE & HAZELNUT BROWNIES

100g slightly salted butter , cut into small pieces, plus extra for the tin
200g 70% dark chocolate , broken into chunks
150g chocolate and hazelnut spread
3 eggs , beaten
200g golden caster sugar
150g plain flour
100g toasted pecan nuts , roughly chopped
ice cream and caramel sauce, to serve

Steps:

  • Heat oven to 180C/160C fan/ gas 4. Butter and line the base and sides of a 20cm square tin. Put the butter, chocolate and chocolate spread in a heatproof bowl and melt over a pan of lightly simmering water. Once melted, stir and set aside to cool a little.
  • In another bowl, use an electric whisk to beat the eggs and sugar together for 5 mins until light and fluffy. Pour in the chocolate mixture and whisk briefly to combine. Sift in the flour and gently fold through the mixture, then add most of the pecans. Scrape the mixture into the tin and spread out with a spatula. Scatter over the last of the pecans and a good sprinkling of sea salt.
  • Bake for 30-35 mins until set but a little gooey in the middle. Cool, then cut into squares and serve with ice cream and caramel sauce.

Ferrero Rocher chocolates make an indulgent finishing touch to these fudgy chocolate brownie squares studded with chopped nuts

box of 16 Ferrero Rocher chocolates
250g pack salted butter , plus extra for greasing
250g golden caster sugar
225g light muscovado sugar
100g cocoa powder
4 large eggs
100g self-raising flour
85g ready-chopped hazelnuts
4 tbsp Frangelico or Fratello hazelnut liqueur (or Disaronno)

Steps:

  • Unwrap the chocolates, place on a tray and pop in the freezer. Heat oven to 180C/160C fan/gas 4. Lightly grease and line the base and sides of a 21-22cm square tin with baking parchment.
  • Put the butter, sugars and cocoa into your largest saucepan and gently melt together, stirring regularly so the mixture doesn't catch. Once the sugar granules have just about disappeared, take off the heat, tip into a bowl and leave to cool for 5 mins.
  • Use a whisk or wooden spoon to beat the eggs, one by one, into the mixture. When they're completely incorporated and the mixture is smooth and shiny, stir in the flour, hazelnuts and liqueur. Tip the mixture into the prepared tin and bake for 35 mins.
  • Remove the tin from the oven and use a cutlery knife to mark the top of the brownies into 16 squares (don't cut through, it's just as a guide). Use a teaspoon to push a little dent in the centre of each portion and add a frozen Ferrero Rocher chocolate into each dip. Return to the oven for 3 mins, then remove and leave to cool completely.
  • Once cool, cut into 16 squares. Will keep for 3 days in an airtight container.
