1 pound light brown sugar
1 cup heavy whipping cream
½ teaspoon baking soda
½ cup butter
¼ cup chopped pecans

Steps:

  • In a medium, heavy saucepan, bring the brown sugar and cream to a rolling boil; boil 1 minute. Add baking soda; boil 1 more minute. Remove from heat. Add butter, but do not stir yet. Let the mixture cool.
  • Beat well. Stir in pecans if desired.

This classic frosting couldn't be easier to make and is a must for finishing red velvet and carrot cakes (or a batch of cupcakes). Using vanilla bean paste gives it a pretty speckled look, but if you don't have it on hand, pure vanilla extract will lend the same flavor.

2 (8-ounce packages) cream cheese, room temperature
1 cup (2 sticks) unsalted butter, room temperature
1 tablespoon plus 1 teaspoon vanilla bean paste or vanilla extract
1/8 teaspoon kosher salt
2 1/3 cups powdered sugar

Steps:

  • Using an electric mixer on medium-high speed, beat cream cheese and butter in a medium bowl until smooth, about 1 minute. Beat in vanilla bean paste and salt. Reduce mixer speed to low and gradually beat in powdered sugar. Increase speed to high and continue to beat until light and fluffy, about 2 minutes.
  • Do Ahead
  • Frosting can be made 5 days ahead; chill, or freeze up to 1 month. Bring to room temperature, then beat with electric mixer on medium speed until smooth. If texture is not smooth, beat in water 1 tsp. at a time.

1 tablespoon vanilla bean paste

Steps:

  • Preheat the oven to 350 degrees F. Line 2 regular size cupcake pans with cupcake liners.
  • In a large bowl using an electric mixer on low speed, combine the sugar, eggs, butter, and vanilla extract until blended. 2 teaspoons baking powder
1/4 teaspoon salt

6 eggs
1 teaspoon vanilla extract
1 cup milk
1/2 cup evaporated milk
1/4 cup light brown sugar
10 tablespoons butter, divided
1/3 cup heavy whipping cream
8 ounces cream cheese, softened
1/2 teaspoon vanilla extract
1 dash salt
1 3/4 cups powdered sugar
1/2 cup sugar
1/4 cup water
1/2 cup pecans, chopped

Steps:

  • FOR THE CAKE:.
  • Preheat oven to 350°. Grease 2 (9-inch) round cake pans; line with lightly greased parchment or wax paper.
  • Combine flour, baking powder, and salt in a bowl; set aside. Place 1 3/4 cups granulated sugar, 1/4 cup light brown sugar, and 1 cup butter in a large bowl; beat with a mixer at medium speed 5 minutes or until well blended. Add eggs, 1 at a time, beating well after each addition. Stir in vanilla. Quickly spread filling over cake layer on plate. Cover loosely with plastic wrap; chill 15 minutes or until set.
  • Spread a thin layer of Caramel Cream Cheese Frosting over filling. Top with second layer. Frost cake. Chill 20 minutes or until frosting sets, then cover and chill 4 hours or overnight. Let stand 10 minutes at room temperature before serving. Garnish, if desired.

1 cup sugar
4 tablespoons water
2 tablespoons light corn syrup
1/2 cup heavy cream
2 tablespoons butter
1/2 teaspoon lemon juice
1/2 teaspoon kosher salt or 1/2 teaspoon sea salt
12 tablespoons butter, room temperature (1 1/2 sticks)
6 ounces cream cheese, room temperature
4 -5 cups powdered sugar, sifted
3/4 cup salted caramel (recipe above)

Steps:

  • Combine the sugar, water and corn syrup in a large saucepan and stir with a wooden spoon over medium heat until sugar is dissolved.
  • Cover the saucepan and let it cook over medium heat for 3 minutes. Do not open lid.
  • After 3 minutes, remove the lid, increase the heat to medium and bring to a boil.
  • Do not stir from this point on, but instead swirl the liquid around the pan so that the caramel doesn't burn. Stirring forms sugar crystals and it will become grainey.
  • Continue to cook until the caramel turns an even amber color then remove from the heat and let stand for about 30 seconds.
  • Carefully pour the heavy cream into the mixture. The mixture will bubble up significantly and is very hot. Stir the mixture; add the butter, lemon juice and salt. Stir, again, until combined.
  • Pour caramel into a heat-proof measuring cup. Stir occasionally and allow to cool until thickened and warm to the touch, about 20 minutes.
  • Beat butter and cream cheese at medium speed until creamy.
  • Add 4 cups sifted powdered sugar into the butter/cream cheese mixture and beat to combine.
  • Add 3/4 cup of the prepared salted caramel and beat to combine.
  • Add additional powdered sugar until the frosting is the sweetness and consistency desired.
