CHEESECAKE-STUFFED BANANA BREAD
Banana bread and cream cheese frosting are a winning combination. The cream cheese filling is swirled into the batter just before baking for easy assembly. You get a balanced combination of cream cheese and banana bread in every bite.

- For the banana bread: Position an oven rack in the bottom third of the oven and preheat to 325 degrees F. Generously spray a 9-by-5-inch loaf pan with nonstick spray and dust with flour.
- For the cheesecake swirl: Combine the cream cheese, granulated sugar, sour cream and egg in a large bowl and beat with a hand mixer until well combined; set aside.
- For the banana bread: Whisk together the flour, baking soda and salt in a medium bowl; set aside. Mash the granulated sugar and bananas in a large bowl to a paste. Whisk in the oil, vanilla and egg. Whisk in the flour mixture until just combined.
- Reserve 3/4 cup of the bread batter. Spread the remaining batter in the bottom of the prepared loaf pan. Spoon the cream cheese mixture over the batter and put the reserved 3/4 cup batter in a line down the center of the pan. Insert the tip of a paring knife into the batter and drag it through and up to swirl 5 to 6 times.
- Bake until the top is cracked and a cake tester inserted in the center comes out clean, about 1 hour. Cool on a wire rack for 30 minutes, then carefully invert onto a platter or cake stand and then flip upright. Cool completely, at least 1 1/2 hours. Dust with confectioners' sugar and serve.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan with cooking spray.
- Combine butter, brown sugar, 1 egg, sour cream, 1/4 cup white sugar, and vanilla extract in a large bowl; whisk until smooth. Mash in bananas using a fork. Whisk in 1 cup flour, baking soda, baking powder, and salt until just combined.
- Whisk cream cheese, 1 egg, 1/4 cup white sugar, and 3 tablespoons flour together in a separate bowl.
- Pour half of the banana mixture into the prepared loaf pan. Spread cream cheese mixture evenly on top. Pour remaining banana mixture over cream cheese mixture.
- Bake in the preheated oven until top is firm, about 50 minutes. Cool in the pan, about 5 minutes.

- Preheat oven to 350°. In a large bowl, cream butter, cream cheese and sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla. - Mix together cream cheese, sugar and butter until smooth.
- Add eggs and bananas and mix well.
- Combine dry ingredients and add to wet and mix until blended.
- Fold in nuts.
- Pour into greased and floured 9x5 loaf pan.
- Bake at 350 degrees for 1 hour and 10 minutes.
- Cool in pan for 10 minutes before moving to cooling rack.
- Serve warm or cool.

- Preheat oven to 350 degrees F.
- In a mixing bowl toss blueberries with 2 Tbsp flour. Set aside.
- In a large mixing bowl cream together butter, cream cheese, sugar and vanilla. Add eggs, one at a time, beating well after each addition.
- In another bowl combine the rest of the flour, baking powder and salt. Slowly mix into wet batter until combined. Fold in blueberries.
- Pour batter into two greased 9'' x 5'' loaf pans and baked for approximately 45 minutes or until a toothpick inserted into the middle of the loaves comes out clean.
- Let rest on wire rack for 10 minutes. Run a knife along the outside of the pan and then flip bread out and let cool completely on wire rack.

- Preheat oven to 350.
- Grease/flour two loaf pans.
- First bowl:.
- Cream butter and cream cheese
- Gradually add sugar, beating until light and fluffy.
- Add eggs one at a time.
- Second bowl:.
- Combine flours, baking powder, baking soda, salt
- Third bowl:.
- Mash bananas.
- Slowly add flour mixture into cream cheese/butter/sugar mixture. It will be a little dry at this point - don't worry!
- Stir in bananas and vanilla, mix well.
- Stir in cranberries, fold well.
- Spoon into pans. Bake, uncovered, for 1 hour. For the last fifteen minutes cover with foil so doesn't brown too much.

BANANA CRANBERRY CAKE
Cranberry bread & banana bread are so good and thought this cake would taste great. I found this recipe on another website and adapted it for posting here. If you prefer a quick bread, use 1/2 cup sour cream instead of the 4 ounces of cream cheese.

- In a bowl, add beaten eggs with cream cheese. With a whisk blend in brown sugar and oil, mix well.
- Stir in cinnamon, baking soda, baking powder, mashed banana and flour.
- Pour mixture into a greased 9-inch round cake pan or if making quick bread a 12 x 4 x 4-inch loaf pan. Can also use 6 mini loaf pans for mini loaves.
- Bake in 375° oven for 50 minutes checking for doneness using a knife in the center of the cake.
- Cool for 10 minutes in the pan. When cool, loosen edges and turn onto rack to completely cool.
- Slice and serve or wrap in plastic wrap and foil for freezing. This will keep in the freezer for 6 months.
