Steps:
- Preheat oven to 375 degrees. Add butter to a rimmed baking sheet and place in oven to melt, being careful not to burn butter. Remove when melted.
- In the bowl of your standard mixer, combine yeast, water & sugar. Set aside and let sit 5-10 minutes or until yeast is foamy and dissolved. If it doesn't get foamy, then start again. (Either your water was too cold/too hot or your yeast is too old).
- Gradually add salt and flour to the yeast, mixing on LOW with your hook attachment for 1 minute. Once combined, continue to mix on medium-low speed for approximately 5-7 minutes. If your dough is too wet, add up to 1/4 cup more flour one tablespoon at a time. After kneading, your dough should be smooth and elastic and slowly bounce back when pressed with a finger. If not, continue to knead.
- Transfer dough to a cutting board and divide into 15 equal balls. (If dough is too sticky, you can spray your hands with nonstick spray). Roll dough into sticks and place on buttered baking sheet. Roll sticks butter. (There will be remaining butter on the baking sheet after rolling breadsticks.)
- Top dough breadsticks with garlic salt and Parmesan OR Garlic Parmesan Seasoning (Note that you will NOT use all of the seasoning*). Let the breadsticks rise for 15-20 minutes.
- Bake breadsticks for 15 -20 minutes or until golden. Best served warm.

Steps:
- Put 3/4 cup warm water in a food processor. Sprinkle the yeast on top and let sit until foamy, about 5 minutes. Add the sugar and 1 teaspoon salt and pulse until dissolved. Add the flour, olive oil and 1 tablespoon butter and pulse until the dough forms a ball, about 1 minute. Continue to process with the motor running until smooth, about 2 more minutes.
- Line 2 baking sheets with parchment; brush with olive oil. Turn the dough out onto a floured surface. Divide into 12 equal pieces, then roll each piece into a 12- to-16-inch rope. Arrange the ropes 1 1/2 inches apart on the prepared baking sheets, rolling them to coat with the oil. Cover each baking sheet with a damp cloth and set aside in a warm place until the breadsticks double in size, 45 minutes to 1 hour.
- Preheat the oven to 400 degrees F. Put the remaining 3 tablespoons butter and the garlic in a microwave-safe bowl and microwave until melted, about 1 minute. Brush the breadsticks with the garlic butter; sprinkle with herbs and salt. Bake until golden, 15 to 20 minutes.

Steps:
- Prep: Thaw rolls according to package drections. Two rolls makes one breadstick. You can increase/decrease the number of rolls you thaw depending on how many breadsticks you want to make. I let my bread thaw in the fridge and then I let it sit at room temp for 1-2 hours before using it. Preheat oven to 400 degrees F. Line two baking sheets with parchment paper or silicone baking mats.
- Make the Breadsticks: Smush two rolls together, and then roll out into a rope about 9-10 inches long. Slice this down the middle, leaving a tiny piece attached at the top. Cross one piece over the other all the way down the rope, and pinch the ends together. Repeat this with remaining dough. Place on prepared baking sheet, leaving some space between each to avoid them sticking together in the oven.
- Bake: Bake for 4 minutes to start. While they're in the oven, melt the butter and stir in the Italian seasoning and garlic powder. After the 4 minutes is up, remove the pans from the oven, brush the breadsticks with this mixture and then return the pans to the oven to bake for 12 more minutes. Breadsticks will be lightly golden when done.
- Serve + Store: Enjoy immediately! Brush with leftover butter + seasoning mix, and sprinkle with parmesan. These are best fresh, but can be stored in an airtight container at room temp for an extra day or two.

PARMESAN AND GARLIC BREADSTICKS
These are really good and easy to prepare. They have a nice crisp crust and we loved the addition of the garlic salt on top. You can make these any size you want, from thin to larger. Just adjust the cook time. From TOH made my way. Cook time does not include the time it takes for the dough to rise. The amount of servings depends on how large you make the breadsticks.

PARMESAN GARLIC BUTTER
This stuff is fabulous! I love to use this to spread on top of warm breadsticks or rolls right out of the oven. Before when I made breadsticks, I could never get a strong enough flavor to come through in my breadsticks. Just slather this on top of or inside of homemade breadsticks or rolls. It's so much better than just sprinkling on Parmesan and garlic powder. You can also add Italian seasoning if you like. If you don't have minced garlic, you can substitute 1/4 to 1/2 tsp. garlic powder. However, I prefer minced with an additional dash of garlic powder. Mmmmmm... I have added to mashed potatoes or to butter up noodles. Make a bunch and store it in the fridge- it'll become a regular staple!

Steps:
- Fit your food processor with a steel blade. Place the bread flour, yeast, sugar, salt, Italian seasoning, garlic, 1/4 cup grated Parmesan and softened butter in the processor; pulse to blend. Stir together hot water, milk and egg. Start the processor and slowly pour in the milk mixture into the feed tube until a ball forms around the blade. Run for 30 seconds to knead. Remove dough from processor and knead briefly by hand. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
- Deflate the dough, and turn it out onto a lightly floured surface. Roll the dough into a 10x12 inch rectangle. Use a knife or pizza cutter to slice the dough lengthwise into ten strips, and then cut these strips in half. Brush tops of strips with 2 tablespoons melted butter, and sprinkle with 1/4 cup Parmesan cheese. Cover, and let rise until nearly double, about 30 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
- Bake in preheated oven for 18 to 23 minutes, or until golden brown. Turn broiler on, and brush breadsticks with remaining melted butter and Parmesan cheese. Broil just until the cheese starts to turn light brown, about 2 to 3 minutes. Serve warm.
