CRANBERRY BRIE BITES
Baked Brie gets dressed up for the holidays, stuffed into little golden parcels of puff pastry, along with a hit of cranberry sauce and the crunch of walnuts.

- Preheat the oven to 425 degrees F and line 2 baking sheets with parchment paper.
- Whisk together the egg with 1 tablespoon of water in a small bowl for an egg wash. Cut the side rind off the Brie, then cut the Brie into 32 even pieces. Set aside.
- Unfold a puff pastry sheet on a lightly floured surface. Roll out into a 13-inch square. Cut into 16 squares. Repeat with the second sheet so you have 32 squares total.
- Top a pastry square with about 1/2 teaspoon cranberry sauce, 1/4 teaspoon walnuts, a piece of Brie and a pinch of thyme.
- Use your finger or a pastry brush to brush the edges of the pastry square with egg wash until lightly coated and tacky. Pinch 2 opposite points together, then pinch the remaining 2 points together so that you have a little package. Repeat with the remaining pastry squares and filling.
- Transfer the pouches to the prepared baking sheets and brush with the remaining egg wash. Bake until puffed and golden brown, 15 to 20 minutes.
CRANBERRY WIENER BITES
These little dogs are served with a zippy curry-spiked sauce, & the recipe comes from the 1967 Better Homes and Gardens cookbook 'so good with FRUIT.'

- In saucepan, mix sugar, curry powder, salt, ginger, cranberry sauce, vinegar, molasses & Worcestershire sauce.
- Bring to boil, then lower heat & simmer 5 minutes.
- Add franks & simmer another 5 minutes.

WIENER BITES
These were served at our Finger Food Fiesta For New Years. My sons gobbled them up. They were extremely easy to make. The recipe calls to serve them hot but they are great after they have cooled down as well. From Company's Coming - Appetizers - by Jean Paré.

Steps:
- Wieners that are 5 inches (13cm) in length can be cut into 6 pieces each for bite-size servings. (I don't usually count. I just cut them up into little bites).
- Fry bacon slices until fat part has lost its whiteness. Do not fry until crisp or it won't roll. Cut slice in half crosswise and lengthwise. Allow to cool.(I usually do about 4 slices of bacon in the microwave for about 4 to 5 minutes. Then while I am getting the next plate ready to microwave, the first batch of bacon is cooling.).
- When cool enough to handle, wrap around wiener section and secure with toothpick. Uncooked bacon may be used but it takes longer to cook (they need broiling) at the last minute.
- To serve: Arrange on baking tray (or plate for microwave) and heat in hot oven, 400°F (200°C) until sizzling hot. Can be kept hot on serving tray. (We served them piled nice and high in a pretty bowl.)
- Watch for toothpicks!

CRANBERRY-BRIE BITES
Steps:
- Preheat oven to 375 degrees F.
- Thaw puffy pastry sheet flat. Cut puff pastry sheet into approximately 3-inch squares and place them into mini muffin tins, pressing them into the shape of the muffin hole. Place a 1-inch slice of brie in the center of each puff pastry and then top it with approximately 1 tablespoon of cranberry sauce.
- Bake 10 minutes or until puff pastry corners are toasted light brown. Let cool 5 minutes before serving.

- Thaw the puff pastry according to package directions.
- Preheat the oven to 400°F. Spray a 24-well mini muffin pan with non-stick cooking spray. Place the brie in the freezer for 20 minutes or until firm to the touch.
- On a well floured surface, roll the sheet of puff pastry into a 10x15-inch rectangle. Cut the pastry into 4 strips lengthwise. Then, cut the pastry crosswise into 6 strips, creating 24 squares. Press the pastry squares into each well of the muffin pan, letting the excess stick up over the edges.
- Cut the firm brie into 24 (½-inch) slices. Place a piece in the center of each pastry square. Top each with about 1 teaspoon of cranberry sauce. Sprinkle with chopped pistachios.
- Bake for 15 minutes or until the puff pastry is golden brown on the edges and the cheese is bubbly. Let cool in the pan for 5 minutes. Remove the bites from the pan and garnish with sea salt and pepper, if desired.
