CRANBERRY, APPLE, AND WALNUT CONSERVE
Adding the cranberries in three stages, along with crumbled nuts, results in a wonderful conserve with layers of texture and flavor. The turbinado sugar imparts subtle caramel undertones.

Steps:
- Simmer water, sugar, cinnamon stick, allspice, and half of cranberries (about 5 1/2 cups) in a 4- to 5-quart heavy pot over moderate heat, stirring occasionally, until cranberries just start to pop, about 5 minutes. Add half of remaining cranberries (about 3 cups) and simmer, stirring occasionally, 5 minutes.
- Meanwhile, peel and core apples, then cut into 1/4-inch dice. Add to cranberry mixture along with walnuts and remaining cranberries, then simmer, stirring occasionally, 5 minutes. Stir in Calvados and simmer 1 minute. Remove from heat and cool to warm or room temperature. Discard cinnamon stick.

- Just cover cranberries with fresh cold water and bring to a boil, cooking until berries are soft. Add the sugar, orange pulp, and raisins, and simmer slowly until thick. Add the nut meats. Continue cooking for 5 more minutes. May be served warm or chilled.

- In a colander, rinse the cranberries under water. Pick out any squishy or rotten cranberries. Add to the food processor bowl.
- Wash the orange. Leave the orange unpeeled. (Yes, keep the rind on.) Chop into chunks so that it fits into the food processor more easily. Add the orange to the food processor bowl.
- Drizzle in the honey. Add the walnuts.
- If desired, add the vanilla extract. This gives the relish an orange-vanilla flavor. I like it, but it may not be what you're looking for.
- Put the lid on the food processor bowl. Pulse in quick pulses. You want everything to start breaking down to the size of large crumbs. Don't let it go too far or it will turn into mush. It's okay to have a little texture, but you probably don't want the pieces too big. Use your judgment.
- Store for up to a week in the refrigerator.

- Set oven to 350 degrees.
- Grease a shallow baking dish (about 1-1/2-quart size).
- Place the cranberries and brown sugar in the baking dish; toss gently to combine.
- Cover and bake for 1 hour, stirring the mixture after about 30 minutes of baking time.
- After 1 hour baking remove from oven and stir in lemon juice, marmalade and chopped walunuts (if using).
- Return to oven and bake uncovered for another 15 minutes.
