  • Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepper to taste and cool to room temperature before serving.

Steps:

  • 1. Mix sugar and water in medium saucepan. Bring to boil on medium-high heat. Add cranberries, cinnamon and orange peel; return to boil. Reduce heat to medium-low; simmer 10 minutes or until cranberries burst and sauce begins to thicken, stirring occasionally.
  • 2. Remove from heat. Stir in vanilla. Cool to room temperature. Cover.
  • 3. Refrigerate until ready to serve.
  • Cranberry sauce can be prepared up to 1 week ahead. Store in refrigerator. Stir before serving.

1 (12 ounce) bag fresh cranberries (about 3 cups)

  • Drain syrup from strawberries into a 1 cup measuring cup and set strawberries aside.
  • Add water to syrup to make 1 cup liquid.

2 medium oranges
1 1/4 cups sugar
1 teaspoon ground coriander
Kosher salt

Steps:

  • Put all but 1 cup cranberries in a saucepan. Remove wide strips of zest from 1 orange with a peeler; add to the saucepan with the juice of both oranges (about 1/2 cup). Add the sugar, coriander, a pinch of salt and 1/2 cup water. Bring to a simmer over medium heat; cook, stirring occasionally, until the berries burst and the sauce thickens, 15 to 20 minutes.
  • Stir in the remaining 1 cup cranberries; cook until softened, 3 to 4 minutes. Remove from the heat and let cool; remove the orange zest. Transfer to a serving dish and refrigerate at least 3 hours.

1 (12 ounce) bag cranberries, rinsed and picked over (I used Ocean Spray)
1 large sweet apple, such as mcintosh or macoun,peeled,cored,cut into pieces (organic if possible)
1 cup apple cider or 1 cup cranberry-apple cider, not apple juice
1 cup Splenda sugar substitute
2 teaspoons cinnamon
1 (10 ounce) bag frozen strawberries, slightly thawed (organic, if possible)

Steps:

  • Take frozen strawberries out to thaw.
  • Wash, peel, core, and chop apple.
  • Rinse and inspect cranberries.
  • Whisk together apple cider and Splenda in medium saucepan.
  • Over medium heat bring mixture to a boil, stirring occasionally.
  • When boiling, add cranberries and apple pieces.
  • Return mixture to boiling over medium heat, then cover and cook 10 minutes or until cranberries have"popped" and compote is thickened.
  • Remove saucepan from heat.
  • Add cinnamon and partially thawed strawberries and stir until strawberries are thoroughly incorporated.
  • Serve warm or chilled.
  • Better second day after chilling in refrigerator.

FRESH SWEET CRANBERRY SAUCE WITH A TWIST

I've been making these cranberries for nearly 30 years. It's the first thing I prepare for Thanksgiving and Christmas. I make them the weekend before so they have lots of time to sit and have even better flavor! I hollow out fresh oranges for serving cups. Makes a beautiful presentation and I use the orange segments in my turkey brine. Cut the oranges in a zig-zag pattern around the center to make it even more holiday special! Make ahead several days before serving for best flavor. I suppose they could be served warm as well, but I find the coolness of the berries is a nice contrast with the other hot foods in the meal. You can use 2 to 3 cinnamon sticks in place of ground cinnamon, which will yield a lighter color.

3 Cornish hens
1/4 cup honey
1/4 cup soy sauce
1 inch peeled gingerroot
1 small peeled pear
3 garlic cloves
1/2 cup strawberry
1 cup chicken broth
1 cup cranberry juice
2/3 cup heavy cream
1 small onion
1/4 teaspoon allspice
1 teaspoon dried thyme
2 teaspoons sugar
1 tablespoon butter
1 teaspoon parsley

Steps:

  • Thaw hens place in large bowl and set aside.
  • Take the next 5 ingredients and put in blender or food processor.
  • Pour mixture over hens, cover with plastic and let marinate in the refrigerator for at least one hour.
  • About 20 minutes before you take out the hens begin the basting sauce and preheat the grill to about 400 degrees.
  • First saute onion with butter in a small sauce pan.
  • Add broth, cranberry sauce, sugar , strawberries and allspice bring to a boil.
  • Add heavy cream as needed to bring to desired thickness.
  • Strain the sauce then divide mixture in half.
  • Sprinkle parsley and thyme on hens before grilling. I like to place hens directly on the grill to sear them then I move them to a pan to finish (because of grease and drippings).
  • Use one half of the mixture to brush on hens while grilling to really pop the flavor. I baste around every 15 minutes or so. Again, do to your preference.
  • When inside temp reaches 180 degrees the hens are finished usually takes at least 40 minutes. Use the thermometer it is the most accurate way to cook to perfection.
  • Warm the other half of the sauce and serve with the hens and your favorite side dish.

1 (15 ounce) can crushed pineapple
1 (15 ounce) can jellied cranberry sauce
1 (8 ounce) bag frozen strawberries

  • Open and drain all liquid from pineapple.
  • In casserole dish fix Jell-o with hot water only, stir until dissolved.
  • Add can of cranberry sauce (I use a whisk to help break it up and remove from can).
  • Gently stir until thoroughly mixed.

  • Cut whole strawberries into halves or quarters, gently stir berries into jell-o mixture.
  • Cover and refrigerate until set, usually a few hours.

½ cup brown sugar
1 (12 ounce) package fresh cranberries, rinsed
1 medium orange, finely zested, divided

Steps:

  • Combine orange juice and both sugars in a saucepan over medium heat and allow the sugar to melt down. Add cranberries, 3/4 of the orange zest, and crystallized ginger.
  • Cook sauce, mashing down berries, over medium-low heat for 10 minutes.
  • Meanwhile, toast pecans in a small skillet over medium heat until fragrant, 2 to 3 minutes. Set aside.
