1 (16 ounce) can jellied cranberry sauce
1/2 cup sugar
1/2 cup cranberry juice
1 teaspoon dry mustard
1/4 teaspoon ground cloves
2 tablespoons cornstarch
2 tablespoons cold water
salt

Steps:

  • Place pork roast in a slow cooker.
  • In a medium bowl, mash cranberry sauce; stir in sugar, cranberry juice, mustard and cloves.
  • Pour over roast.
  • Cover and cook on low for 6-8 hours or until meat is tender.
  • Remove roast and keep warm.
  • Skim fat from juices; measure 2 cups, adding water if necessary, and pour into a saucepan.
  • Bring to a boil over medium-high heat.
  • Combine the cornstarch and cold water to make a paste; stir into gravy.
  • Cook and stir until thickened.
  • Season with salt.
  • Serve with sliced pork.

1 (1 1/2-pound) boneless pork loin roast
1 (16 ounce) can jellied cranberry sauce
¼ cup white sugar
½ cup cranberry juice
1 teaspoon dry mustard
¼ teaspoon ground cloves
salt to taste
2 tablespoons cold water
2 tablespoons cornstarch

Steps:

  • Place pork roast in a slow cooker. Mash cranberry sauce in a bowl; stir in sugar, cranberry juice, mustard, cloves, and salt. Pour cranberry mixture over pork roast.
  • Cook on Low for 6 to 8 hours. Transfer roast to a plate; cover and keep warm.
  • Skim fat from cranberry mixture in slow cooker. Measure 2 cups of cranberry mixture, adding water if necessary. Pour into saucepan and bring to a boil. Whisk cold water with cornstarch until pasty; pour into cranberry mixture. Cook and stir until thickened, 5 to 10 minutes. Serve alongside pork.

2 (16 ounce) cans jellied cranberry sauce
½ cup white sugar
½ cup cranberry juice
1 teaspoon mustard powder
¼ teaspoon ground cloves
4 pounds pork roast
2 tablespoons cornstarch
2 tablespoons cold water
salt to taste

Steps:

  • Mash cranberry sauce with a fork or a potato masher. Stir in sugar, cranberry juice, mustard, and cloves.
  • Place pork roast in a large, roasting pan. Pour cranberry sauce mixture over the roast.
  • Cook at 275 degree F (135 degrees C) for 6 to 8 hours, or until meat is tender. Remove roast, and keep warm.
  • With a metal spoon, skim the fat from the liquid in the roasting pan. Pour 2 cups of the remaining roasting liquid (add water to fill out the measure if necessary) into a small saucepan. Bring to a boil over medium-high heat. Blend cornstarch and cold water to make a paste; stir gradually into boiling liquid. Continue cooking, stirring constantly, until mixture thickens. Add salt to taste. Serve with the roast.

5 pound pork loin
2 tablespoon olive oil
1 tablespoon thyme (dried)
¼ teaspoon nutmeg (ground)
1 teaspoon allspice
1 teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
¼ cup honey
1 tablespoon orange zest
2 cups cranberry sauce

Steps:

  • Preheat the oven to 375 F degrees and arrange the rack in the middle of the oven.
  • Drizzle the olive oil all over the pork loin. Season with thyme, nutmeg, allspice, salt and pepper on all sides evenly.
  • Heat a large 12 inch cast iron pan with a little bit of olive oil, then brown the pork on all sides, 4 to 6 minutes per side. Sear until it's a deep golden brown and easily releases from the pan. Remove from heat.
  • Drizzle honey on all sides of the pork loin then grate some orange zest over it.
  • Cover with aluminum foil, transfer the skillet to the oven and roast for 30 minutes. Remove the foil and finish roasting for another 30 minutes or until an instant-read thermometer inserted into the thickest part of the pork reads anywhere from 145 to 160 F degrees.
  • Meanwhile prepare the cranberry sauce. I used my own cranberry sauce recipe, however, store bought cranberry sauce will work as well.
  • Transfer the pork roast to a cutting board and let it rest for at least 15 to 20 minutes before slicing into it.
  • Slice then top with cranberry sauce before serving it.

Steps:

  • Preheat oven to 350°F. Combine spice rub ingredients in a small bowl. Set aside. Heat corn oil and butter in a large skillet over medium heat. Add celery, onions and 2 tablespoons of spice rub. Cook for 5 to 7 minutes, or until the vegetables are tender but not browned. Add cranberries and apricots; cook 1 to 2 minutes, or until heated through. Transfer to a large bowl. Add bread cubes to cranberry-and-onion mixture and toss. Stir in chicken broth. Rub remaining spice rub on exterior and interior of roast; transfer to a roasting pan.   • Chutney:
  • Preheat oven to 450 degrees F.
  • Pork Roast:

1 celery rib, chopped

2 tablespoons honey
2 tablespoons brown sugar
3 tablespoons chili sauce or 3 tablespoons barbecue sauce
1 orange, sliced

Steps:

  • Rub salt onto pork tenderloin and place in bottom of crock pot. (You may lightly brown it in a small amount of oil, if you wish.).
  • In a medium bowl, place onion, celery, cranberry sauce, orange juice, dry mustard, cinnamon, lemon juice, honey, brown sugar and chili sauce. Stir and pour over pork tenderloin.
  • Turn crock pot on high for first hour and then allow to cook an additional 2 to 3 hours. Lift lid and quickly place orange slices over pork without stirring. Cook an additional hour.
  • In a small bowl mix cornstarch and cold water. Add last 10 minutes of cooking time for thickening purposes.
  • Serve over cooked rice and enjoy!

1 (16 ounce) can whole sweetened cranberries
1/4 cup peeled and chopped yellow onion
3/4 cup orange juice
ground cinnamon and ginger

  • Rub the roast with salt and pepper, and place on a rack in a baking pan. Roast at 325 deg. for 2 1/2 to 3 hours, or until an inserted meat thermometer registers 175 deg.
  • In the mean time, combine all the remaining ingredients in a stainless-steel saucepan and bring to a boil. Remove from the heat.
  • Halfway through the roasting process, begin basting the roast every 15 minutes with the cranberry mixture. The remaining sauce can be served on the side with the thinly sliced pork.
