These are moist and have a wonderful flavor of spice. You can freeze persimmon pulp to use later if you grow your own and have an excess. These are great fall cookies!

2 ripe persimmons, pureed
1 teaspoon baking soda
2 cups all-purpose flour
½ teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground nutmeg
½ teaspoon salt
1 egg
1 cup white sugar
½ cup butter
1 cup raisins
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Dissolve baking soda in persimmon pulp and set aside.
  • Sift flour, spices and salt together, set aside.
  • Cream together butter or margarine and sugar until fluffy, beat in egg and persimmon. Stir in dry ingredients. Stir in nuts and raisins.
  • Drop by teaspoonfuls onto greased cookie sheet. Bake for 15 minutes.

A sweet and spiced persimmon cookie recipe with cranberries, white chocolate chips, and pecans. A perfect soft and moist cookie to make during the holidays!

½ cup unsalted butter (softened)
¾ cups granulated sugar
¼ cup brown sugar (light or dark)
1 large egg
1 cup persimmon pulp (puréed (3-4 very ripe and soft Fuyu persimmons))
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon kosher salt
½ teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon ginger
⅛ teaspoon allspice
⅓ cup old fashioned oats
½ cup dried cranberries
¼ cup white chocolate chips
¼ cup pecans (roughly chopped)

Steps:

  • Set the oven rack to the middle position. Heat to 325°F (163ºC).
  • Using the paddle attachment on your mixer, cream the butter and sugars together until light and fluffy.
  • Add the egg and mix on medium speed until combined.
  • Add 1 cup of persimmon pulp purée and mix until combined.
  • Sift the dry ingredients together; flour, baking soda, salt, cinnamon, ginger, nutmeg, and allspice. Whisk the dry ingredients together, and then slowly add into the mixer on low speed. Mix until just combined.
  • Add the oats, dried cranberries, white chocolate chips, and pecans. Mix on low speed until combined, approximately 1 to 2 minutes.
  • Portion the dough (about 1 ¼ tablespoon) onto a parchment paper lined sheet pan. Make sure that the cookies are at least 2 inches apart. Use your fingers or a spoon to flatten the dough into ¼-inch thick cookies, the dough will be slightly sticky. Top with extra cranberries, white chocolate, or pecans if desired.
  • Bake the cookies one tray at a time. Bake until the edges set, the surface feels firm and golden brown, arproximately 14 to 16 minutes.
  • Cool on the sheet pan for 5 minutes and then transfer to a cooling rack. Bake the remaining cookies, making sure the oven increases back up to the proper temperature.

1 cup sugar
1/2 cup butter
1 large egg
2 cups flour
1/2 teaspoon ground allspice
1/2 teaspoon salt
1 cup persimmon pulp (2-3 ripe hachiya persimmons)
1/2 teaspoon baking soda
1 cup dried cranberries
1 cup walnuts
1/2 cup white chocolate chips (plus additional for drizzling)

Steps:

  • Preheat oven to 375
  • Cut the top off the persimmon and squeeze the ripe fruit pulp into a measuring cup. You'll need 1 cup pulp, this is about three ripe persimmons. Sprinkle with baking soda, set aside.
  • Add the sugar, butter and egg to a large mixing bowl. Cream this together until light and fluffy. Add the persimmon and mix again.
  • In aa separate bowl, mix together the flour, allspice and salt. Mix the flour mixture into the butter and sugar mixture until well combined.
  • Stir in the cranberries, walnuts and white chocolate chips by hand.
  • Drop by spoonfuls onto a greased baking sheet. Bake in the preheated oven for 12-15 minutes until golden brown.
  • Allow to cool completely, on wire rack. Drizzle with additional melted white chocolate on cookie tops if desired.

1 ½ cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon ground ginger, or more to taste
¼ teaspoon ground nutmeg, or more to taste
½ cup chopped toasted walnuts
½ cup dried cranberries
2 large eggs
¾ cup light brown sugar
½ cup vegetable oil
4 ripe Fuyu persimmons, chopped into small pieces

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan and dust the bottom with flour.
  • Mix flour, cinnamon, baking soda, salt, ginger, and nutmeg together in a small bowl. Add walnuts and cranberries; toss or mix using your fingers to ensure cranberries don't stick together.
  • Whisk eggs, brown sugar, and oil together in a medium bowl until eggs are well beaten. Stir in persimmon pieces followed by flour mixture. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a knife inserted into the center comes out clean, 1 hour and 15 minutes to 1 1/2 hours.
  • Remove from the oven and let cool on a wire rack for 15 minutes. Slide a knife around the sides and slide loaf out onto the rack to finish cooling, 15 to 30 minutes more, before cutting.

1/4 cup orange juice
3/4 cup dried cranberries
1/2 cup butter, softened

1-1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon cream of tartar

Steps:

  • Preheat oven to 350°. Pour boiling water and orange juice over cranberries in a small bowl; let stand 5 minutes. Drain., In a large bowl, cream butter and sugars until light and fluffy. Beat in egg, orange zest and vanilla. In another bowl, whisk flour, salt, cream of tartar and baking soda; gradually beat into creamed mixture. Stir in pecans and cranberries., Drop dough by tablespoonfuls 3 in. apart onto ungreased baking sheets. Bake until until edges begin to brown, 10-12 minutes. Remove from pans to wire racks to cool. Store in an airtight container.

12 ounces fresh cranberries
1 1/2 cups sugar
2 ripe persimmons, peeled and cubed
3/4 cup orange juice
1 orange, zested
2 tablespoons ground cloves
1 tablespoon triple sec (optional)
1/2 cup chopped walnuts (optional)

Steps:

  • In a large saucepan, combine the cranberries, sugar, persimmons, juice, and zest. Cook over medium heat, stirring occasionally, until the sugar has dissolved. Simmer about 10 minutes, until most of the berries have "popped". Stir in the ground cloves, and the triple sec and walnuts if desired. Remove from the heat and allow to cool. Refrigerate until ready to serve, at least 2 hours.;

3/4 lb fresh or frozen cranberries (3 1/2 cups)
1/4 cup dry red wine
2 tablespoons water
1/2 star anise or 1/4 teaspoon star-anise pieces
1/2 to 2/3 cup sugar
3 firm-ripe Fuyu persimmons (about 1 lb total), peeled and cut into 1/4-inch dice

Steps:

  • Bring cranberries, wine, water, star anise, 1/2 cup sugar, and a pinch of salt to a boil in a 2-quart heavy saucepan, stirring occasionally, then reduce heat and simmer 5 minutes. Add more sugar, to taste (up to about 2 1/2 tablespoons), and discard star anise. Fold in persimmons.
  • Transfer to a bowl and serve at room temperature or chilled. Stir gently before serving.

PERSIMMON AND CRANBERRY PIE

I'm lucky enough to have both neighbors and coworkers with prolific persimmon trees, so wanted a pie recipe to use some of the Fuyu (crisp) persimmons. I wasn't too thrilled with the few I found, so came up with this colorful pie. I have NOT tried to make this with the Hachiya (soft) persimmons and have no idea how it would turn out! I used Splenda, but the same amount of sugar should work. NOTE: If your persimmons are still hard and have not ripened until they give just slightly to pressure, you may want to increase the stovetop cooking time. Personally I like it with the persimmons a little crunchy but I was definitely in the minority. Also, this makes a slightly tart pie. If you like your pies sweet, increase the Splenda or sugar to 3/4 cup. UPDATE: I made this pie for a holiday luncheon at work and substituted sugar for the Splenda. It received rave reviews! UPDATE 6/25/10: My pie just won RESERVE BEST OF SHOW at the Solano County Fair! WOOHOO!!!

2 (9 inch) unbaked pie crusts
4 cups peeled and diced fuyu persimmons, cut about 1/4-inch square
2 cups raw cranberries
2 cups apple juice, divided
1/4 cup cornstarch
1/2 cup Splenda granular, sugar substitute
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg, preferably freshly ground

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the diced persimmons, cranberries and 1 3/4 cups of the apple juice in a saucepan. Add the cinnamon and nutmeg.
  • Heat over medium low heat until the cranberry skins split.
  • Combine the remaining 1/4 cup of apple juice with the 1/4 cup of cornstarch.
  • Add the cornstarch/juice mixture to the persimmon mixture and stir until thickened.
  • Remove from the heat and stir in the Splenda until well blended.
  • Set aside to cool while you prepare the pie crust; put it in a 9" pie pan. If you're using pre-made pie crusts allow the mixture to cool until very warm but not hot.
  • Put the mixture in the pie pan and top with the second crust in whatever manner you like. (I used free-floating pastry cut-outs).
  • Bake at 400F for 30 to 40 minutes, until the filling is bubbly. Be sure to put a cookie sheet or sheet of aluminum foil on the rack below the pie to catch any drips. (Putting the pie directly on the cookie sheet will disrupt the flow of hot air around the pie).

RAW CRANBERRY RELISH WITH FUYU PERSIMMON



Raw Cranberry Relish With Fuyu Persimmon image

Tart cranberries meet their perfect match in persimmons, the glorious fruit that ripens in time for Thanksgiving. For this cranberry relish, use Fuyu persimmons, which are eaten while still hard, like apples.

Yield Makes about 2½ cups

Number Of Ingredients 6

12 oz. fresh cranberries
1 large navel orange
2-3 Fuyu persimmons (8 oz.)
Pinch sea salt
⅓ cup sugar, plus more to taste
2-3 tsp. fresh lemon juice

Steps:

  • Wash the cranberries well and pick them over, discarding soft ones. Scrub the orange and dry it. Use a microplane to grate off the zest and measure out 2 teaspoons, then peel the orange and remove the white pith, and break into segments. Wash the persimmons, trim out their stems and cores, and cut them into roughly 1-inch pieces.
  • Combine the cranberries, orange, grated zest, persimmons, and a pinch of sea salt in the container of the food processor and pulse briefly, just to break everything up. Add the sugar and 2 teaspoons lemon juice, pulse again, and taste. If you think you need more sweetness, add a tiny bit more sugar; if you need acid, add a drop of lemon juice.
  • Pulse once more to blend the seasonings, but do not overprocess. This relish should have a gravelly texture, with distinct pieces of golden persimmon showing among the cranberries.

WHITE CHOCOLATE AND CRANBERRY COOKIES

  • In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the egg and brandy. Combine the flour and baking soda; stir into the sugar mixture. Mix in the white chocolate chips and cranberries. Drop by heaping spoonfuls onto prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. For best results, take them out while they are still doughy. Allow cookies to cool for 1 minute on the cookie sheets before transferring to wire racks to cool completely.

  • In a small bowl, mix together 1/2 teaspoon orange zest, 3 tablespoons orange juice and confectioners' sugar until smooth. Spread over the tops of cooled cookies. Let stand until set.
