Italian Fried Peppers, a fast, easy and tasty side dish. This pan-fried dish is the perfect compliment to any meat dish.

1-2 cloves garlic (minced)
3 large bell peppers (red, green or yellow or choice) sliced
1 teaspoon oregano
1/4 teaspoon salt (or to taste)
1/4 cup water ((61 grams))

Steps:

  • In a medium/large frying pan add the oil, garlic, sliced peppers, oregano, salt and water. Cover and cook on medium heat until soft and tender about 10 minutes, then uncover and cook until water dissolves and peppers are cooked to your liking. Enjoy!

The combination of the green peppers and chicken are so delicious. It is easy to fix. it is so different from other stir fry recipes because of not adding soy sauce. Also, if any left over I take for my lunch the next day. It heats up well and the flavors the next day are compiled together so nicely.

2 Tbsp olive oil
1 c onions
1 clove garlic, minced
2 boneless chicken breast, cut into 1 inch strips
3 large red, green, orange red peppers cut in strips
1 c long grain white rice (uncle ben's) uncooked
1/4 tsp dried thyme
2 c chicken stock (swanson)
2 Tbsp dried parsley
1/2 tsp salt
1/2 tsp pepper to taste

Steps:

  • 1. In a large pan over med-high heat, saute' onions and garlic. I always cut my onions in large chunks. Saute' for 2 minutes until translucent. Add chicken pieces with onions and garlic and make sure chicken is done cooking about 3 minutes, turning on each side. Add peppers to mixture for 1 minute. Add rice and thyme, cook and stirfor 1 minute. Add stock,parsley, salt and pepper to mixture and bring to a boil. Cover and simmer on low for 15 minutes until liquid has been absorbed. Remove from low heat and let stand, covered, another 10 minutes before serving.

2 tablespoons olive oil
3 green onions, sliced
3 garlic cloves, minced
2 bell peppers, deseeded and diced (the colorful the better)
1 cup champignon mushrooms, sliced
1 tablespoon chinese rice wine
2 -3 tablespoons soy sauce
1 teaspoon sesame oil

Steps:

  • Heat oil til really hot.
  • Stir fry onions (1 minute), then garlic (20 seconds).
  • Then add peppers and mushrooms. Stir-fry until it becomes a bit soft, (about 2 minutes).
  • Add the wine and soy sauce and continue to stir for 2 minutes.
  • When done, remove from heat and add the sesame sauce mixing it all together, and serve.

Steps:

  • Prepare your rice of choice.
  • In a large skillet, saute the garlic in butter for 2 minutes.
  • Add the shrimp, peas ( if using), red pepper, onion, basil, salt and pepper.
  • Stir-fry for 5 minutes or until the shrimp turn pink and the vegetables are crisp-tender.
  • Add the chicken broth. Cook for 1 minute longer or until the broth is heated through. Add the green onions and toss slightly.
  • Serve over the prepared rice.

2 chicken breasts (boneless, skinless, 7 to 8 ounces each)
8 small dried red chili peppers
2 cloves garlic
2 green onions (spring onions, scallions)
4 tablespoons oil (for stir-frying, or as needed)
Optional: 1 teaspoon Szechuan peppercorn
1/2 cup peanuts (or cashews)
Optional: few drops sesame oil
For the Marinade:
2 teaspoons soy sauce
2 teaspoons Chinese rice wine (or dry sherry)
1 teaspoon sesame oil
1 1/2 teaspoons cornstarch
For the Sauce:
2 tablespoons dark soy sauce
1 tablespoon Chinese rice wine (or dry sherry)
1 teaspoon sugar

Steps:

  • Gather the ingredients.
  • Cut the chicken into 1-inch cubes.
  • Combine marinade ingredients, adding the cornstarch last. Marinate the chicken for 25 minutes.
  • While the chicken is marinating, prepare the sauce and vegetables: In a small bowl, combine the dark soy sauce, rice wine, and sugar. Set aside.
  • Cut the chiles in half so that they are approximately the same size as the chicken cubes. Remove the seeds.
  • Peel and finely chop the garlic. Cut the green onion on the diagonal into thirds.
  • Heat the wok over medium-high to high heat. Add 2 tablespoons oil.
  • When the oil is hot, add the chicken. Stir-fry until it turns white and is 80 percent cooked. Remove from the wok.
  • Add 2 tablespoons oil. When the oil is hot, add the garlic and stir-fry until aromatic (about 30 seconds).
  • Add the chile peppers and the Szechuan peppercorn if using. Stir-fry briefly until they turn dark red.
  • Add the sauce to the wok. Bring to a boil.
  • Add the chicken back into the pan. Stir in the peanuts and the green onion.
  • Remove from the heat and stir in the sesame oil. Serve hot.
  • Enjoy.

I based this on a Cantonese dish my dad would make when I was growing up. He would take hours chopping, dicing and slicing and then throw it all into a boiling hot wok and dinner would be served within two minutes. I think he loved the cinema of this type of cooking. I miss him and the dish so much that I came up with a simplified weeknight version of it. Don't like spicy food? Simply omit the red pepper flakes. Serve this with bowls of steamed rice.

1 tablespoon canola oil
1 pound (16 ounces) ground pork
Kosher salt
3/4 teaspoon red pepper flakes

1 large or 2 medium parsnips, peeled and cut into 1/4-inch rounds
1 large knob ginger, grated to equal about 2 tablespoons

  • First, drain the tofu. Dry the tofu with kitchen paper. Slice the tofu into 4 even slices.Line a baking tray with 2 layers of kitchen paper, place the tofu on the paper.
