CRANBERRY PECAN BARS

Number Of Ingredients 9

2 cups graham crackers crumbs
8 tablespoons melted butter
1/3 cup sugar
3/4 cup flour
1 cup Southern Comfort (a fruity spiced liquor) substitute rum if desired
1 1/2 teaspoon cinnamon
3 cups pecans chopped and toasted
3 cups cranberries
1 1/2 cups light corn syrup

Steps:

  • Mix graham cracker crumbs with butter and sugar and press into a half sheet pan prepared with baking spray.
  • Mix flour with Southern Comfort and cinnamon.
  • Toast chopped pecans over a med heat.
  • Put the toasted nuts in a bowl with cranberries and light corn syrup, then pour flour mixture on top and stir to coat well.
  • Pour over top of graham cracker crumbs.
  • Bake at 350 degrees for 25 minutes or unit firm.
  • Let cool before slicing.

3/4 cup all-purpose flour
3/4 cup quick-cooking oats
1/3 cup packed brown sugar
1/3 cup butter, melted
FILLING:
1 package (12 ounces) fresh or frozen cranberries
1/2 cup cranberry juice, divided
1/2 cup golden raisins
1/3 cup honey
Sugar substitute equivalent to 3 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon cornstarch
1/4 cup chopped pecans

Steps:

  • In a small bowl, combine the flour, oats and brown sugar. Stir in butter until blended. Set aside 2/3 cup. Pat remaining mixture onto the bottom of a 9-in. square baking pan coated with cooking spray; set aside., In a small saucepan, combine the cranberries, 7 tablespoons cranberry juice, raisins, honey, sugar substitute, cinnamon and cloves. Cook and stir over medium heat for 10-12 minutes or until berries pop. , Combine the cornstarch and remaining cranberry juice until smooth; stir into berry mixture. Bring to a boil; cook and stir for 1-2 minutes or until thickened. , Pour filling over crust. Sprinkle with pecans and reserved oat mixture. Bake at 350° for 30-35 minutes or until lightly browned. Cool on a wire rack. Cut into squares. Store in the refrigerator.

1 cup pitted dates (not dates rolled in oat flour)
1 cup shredded, unsweetened coconut - divided
1 cup dried cranberries (I used fruit-juice sweetened dried cranberries)
1/8 teaspoon salt
1/2 teaspoon vanilla
1/2 cup coarsely chopped raw pecans

Steps:

  • If dates are very hard, place in saucepan with 2 tablespoons water, cover, bring to boil, and then remove from heat. If dates are soft, go to step 2.
  • Place dates, 1/2 cup coconut, dried cranberries, salt, and vanilla in food processor and process until all ingredients are finely chopped and mixture clumps together. (This takes about 2 minutes in my food processor.)
  • Add remaining coconut and process until coconut is chopped fine and mixture begins to stick together again. (About 30 seconds.)
  • Add pecans and pulse a few times until mixed.
  • Press mixture into an 8-inch x 8-inch dish. (I like to line my baking dish with parchment paper to make it easier to remove the Cranberry Pecan Bars.) Makes 16 squares. Can be stored in freezer.

These cranberry bars are delicious, with a delightful balance of sweet and tart. Don't count on leftovers - these moist squares get gobbled right up!

1/4 cup cold butter
1 cup flour
3/4 cup sugar, divided
2 tablespoons 1% low-fat plain yogurt
2 eggs
1 pinch salt
1/2 cup coarsely chopped pecans

Steps:

  • In small saucepan, combing cranberries with enough water to cover.
  • Cover and bring to boil. Remove from heat and let stand 1 minute.
  • Drain and let cool.
  • In bowl, cut butter into flour until fine crumbs.
