HOMEMADE YEAST ROLLS



Homemade Yeast Rolls image

Number Of Ingredients 9

1 1/2 sticks (12 tablespoons) unsalted butter
1/4 cup sugar
3/4 cup whole milk, at room temperature
Three 1/4-ounce packets active dry yeast
5 cups all-purpose flour, plus extra for dusting
2 teaspoons kosher salt
3 large eggs
Olive oil, for greasing
Flaky sea salt, for sprinkling

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt 1 stick of the butter in a small saucepan, then bring to a boil and cook until there are light brown specks in the butter, 3 to 4 minutes. Pour the browned butter into a small bowl and whisk in the sugar until dissolved. Whisk in the milk; the mixture should be lukewarm, around 110 degrees F. Next, whisk in the active dry yeast. Set aside until foamy, 5 minutes.
  • In a large bowl, mix together the flour and salt. Make a well in the center, add the eggs and whisk the eggs together with a fork. Pour the browned butter mixture into the well. Using a fork, gradually incorporate the flour into the liquids. Continue stirring just until a shaggy dough comes together. Transfer to a lightly floured work surface and knead with floured hands until the dough becomes very smooth, about 5 minutes.
  • Lightly grease a large bowl with olive oil. Add the dough, turning it once to coat. Cover with a clean kitchen towel and let rise until doubled in size, about 1 hour.
  • Punch down the dough. Melt the remaining 1/2 stick of butter and use half of that to grease the bottom and sides of a 9-by-13-inch baking dish. Divide the dough into thirds and divide each third into 10 balls. To create smooth tops: roll each ball between your palms, and then stretch the dough across the top of the ball, pinching the excess at the bottom.
  • Place the dough balls, seam-side down, in the prepared baking dish -- 5 to the short side, 6 to long side. Cover and let rise until slightly puffy, 30 minutes. Brush the tops with the remaining butter and sprinkle generously with flaky sea salt.
  • Bake until the tops are golden brown and the rolls sound hollow when lightly tapped, 15 to 17 minutes. Serve warm.

1/2 cup sugar, plus a pinch
1/2 cup warm water (105 to 115 degrees F)
2 packages active dry yeast
2 teaspoons salt
1/3 cup solid vegetable shortening
1 cup cold water
1 egg, well beaten
4 1/2 cups all-purpose flour
2 tablespoons butter, melted

Steps:

  • In a large bowl, add a pinch of sugar to the warm water. Sprinkle the yeast over the top and let stand until foamy, about 5 minutes. Stir to dissolve yeast. Beat in the remaining sugar, salt, shortening, cold water, and egg until well blended. On low speed, beat in 2 cups of flour and beat for 2 minutes. Beat in enough of the remaining flour, 1/2 cup at a time, to make soft dough. Place the dough in a well-greased bowl and turn to coat the dough. Cover with a towel and let rise until doubled in bulk, about 1 1/2 hours.
  • Punch the dough down and refrigerate for 2 hours. The dough will almost double in bulk. Grease 2 (9-inch) cake pans. Turn the dough out onto a floured surface. Pull off pieces of the dough, about a 1/4 cup each and shape into 24 rolls. Place 12 rolls, sides touching in each of the 2 prepared pans. Brush with butter. Let rise in a warm place for 1 hour or until doubled.
  • Preheat oven to 425 degrees F. Bake the rolls until well browned on the top, about 15 minutes. Transfer the pan to wire racks to cool for 5 minutes.

I have tried many roll recipes and never been completely satisfied but this one finally fits the bill! It is easy, no complicated ingredients, and the rolls rise up to make very fluffy bread. Thanks go to my aunt Joyce in Nova Scotia for this one.

6 cups flour
1/2 ounce fast rising yeast
1/2 cup sugar
1/2 teaspoon salt
1/2 cup oil
2 eggs
2 cups warm water
1 egg, beaten (for brushing)

Steps:

  • Proof the yeast with a bit of the warm water and sugar in a small bowl.
  • Meanwhile, mix the flour, remaining sugar and salt together in a large bowl.
  • When the yeast is foaming and bubbling after a few minutes, mix it into the dough along with the two eggs, warm water and oil.
  • Knead the dough (it will be sticky) until smooth and elastic.
  • In a KitchenAid mixer this only takes a couple minutes on speed 3.
  • Let rise in a warm place for 1 1/2 to 2 hours.
  • Punch down and then shape into rolls and let rise again.
  • I like to make cloverleaf rolls with this recipe, which involves placing three balls of dough, no bigger than a ping pong ball, in a greased muffin cup.
  • Once the balls have risen again, brush with the beaten egg for a nice brown finish and bake in a hot oven.
  • The time will depend on the size, but mine take about 15 minutes at 200 C.

QUICK YEAST BREAD

If you don't have a bread machine, this is the easiest yeast dough recipe by far. There is no overbearing yeast flavour and it is a good dense bread. Please note: time to make includes rising time.

2 tablespoons yeast (or 2 x 7g pkts)
2 teaspoons sugar
1 teaspoon salt
2 cups warm-hot water
1/4 cup cooking oil

Steps:

  • Put 4 cups of the flour, yeast, sugar and salt into large bowl.
  • Pour in hot water and oil and mix until combined- it will be sticky.
  • Add the remaining flour in increments until dough is no longer sticky.
  • Knead for about 5 minutes until dough is elastic and smooth.
  • Place dough back into bowl and cover with a damp teatowel and let it rise until double its size- about 1/2 hour.
  • Punch it down and divide dough into two pieces.
  • Roll pieces long enough to fill two well oiled loaf pans and leave to rise until dough has reached the rim of the pan.
  • Bake at 400F for 40 minutes.
  • Rub hot breads with water and wrap in a teatowel to'sweat' to soften the crust.

Steps:

  • For the filling, in a small bowl combine softened butter, brown sugar and cinnamon to form a crumbly mixture.
  • Sprinkle 1/2 of the mixture over the bottom of a 9x9 pan.
  • In a large bowl mix together flour, sugar, baking powder, and salt.
  • Cut in softened butter (sometimes your hands are the best tools).
  • Stir in milk to form a soft dough.
  • Roll out dough on a lightly floured surface into a rectangle about 1/4 inch thick.
  • Spread the remaining filling on the rolled out dough.
  • Roll up the rectangle, with a sharp knife slice into 18 small rolls (12 if you want them a little bigger).
  • Bake for 20-25 min at 400°F.
  • For glaze, combine powdered sugar and milk in a small bowl and stir until smooth.
  • Once rolls are finished, drizzle on glaze and serve warm.

Steps:

  • In a large bowl, dissolve yeast in warm water. Add potato flakes, sugar, salt, egg, vegetable oil, onion powder, and 1cup of the flour. Beat until smooth. Stir in remaining flour. Continue stirring until smooth, scraping batter from sides of bowl.

2 pkg active dry yeast
2 cups warm water (105 to 115 degrees F)
1/2 cup granulated sugar
1 large egg (lightly beaten)
1/4 cup unsalted butter (melted + extra for brushing at the end)

Steps:

  • Dissolve the yeast in the warm water in a very large bowl, then stir in the sugar and let stand for 5 minutes.
  • Stir in the egg, melted butter, and salt. Stir in as much of the flour as you can with a wooden spoon.
  • Transfer the dough to a stand mixer fitted with a dough hook and mix on low speed for 6 to 8 minutes. Alternatively: You can turn the dough out onto a lightly floured surface and knead by hand until the dough is smooth and elastic.

500g strong white bread flour , plus extra for dusting
7g sachet fast action yeast
1 tsp white caster sugar
2 tsp fine salt
1 tsp sunflower oil , plus extra for the work surface and bowl

Steps:

  • Tip the flour, yeast, sugar, salt and oil into a bowl. Pour over 325ml warm water, then mix (with a spatula or your hand), until it comes together as a shaggy dough. Make sure all the flour has been incorporated. Cover and leave for 10 mins.
  • Lightly oil your work surface and tip the dough onto it. Knead the dough for at least 10 mins until it becomes tighter and springy - if you have a stand mixer you can do this with a dough hook for 5 mins. Pull the dough into a ball and put in a clean, oiled bowl. Leave for 1 hr, or until doubled in size.
  • Tip the dough onto a lightly floured surface and roll into a long sausage shape. Halve the dough, then divide each half into four pieces, so you have eight equal-sized portions. Roll each into a tight ball and put on a dusted baking tray, leaving some room between each ball for rising. Cover with a damp tea towel and leave in a warm place to prove for 40 mins-1 hr or until almost doubled in size.
  • Heat the oven to 230C/210C fan/gas 8. When the dough is ready, dust each ball with a bit more flour. (If you like, you can glaze the rolls with milk or beaten egg, and top with seeds.) Bake for 25-30mins, until light brown and hollow sounding when tapped on the base. Leave to cool on a wire rack.

I've tried many, many bread recipes, and this is the best roll recipe I've come across. It's super fast, super easy, and you'd have to try hard to mess it up. The easiest way to get the perfect temperature water for your yeast is to do 1 part boiling water to 2 parts cold. Perfect every time!

2 (1/4 ounce) packages yeast
3 1/2-4 1/2 cups white bread flour
3 tablespoons sugar
1 teaspoon salt
1 cup milk
1/2 cup boiling water
1/4 cup butter, room temperature

Steps:

  • In a small bowl, mix milk with water. Add sugar, yeast, and butter. Stir until yeast is dissolved and set aside for 10 minutes or until yeast has foamed up a bit.
  • In a large bowl, mix flour and salt. Use the lower amount of flour to start with and add more only if the dough is really too sticky.
  • Add yeast mixture to flour and mix.
  • Knead until smooth and elastic. (I use a hand mixer with a kneading attachment.).
  • Place in greased bowl, cover tightly with plastic wrap, and let rise in a warm place for 15 minutes.
  • Oil your hands and shape the dough into rolls and place in a well-greased pan. I use 2 round non-stick cake pans.
  • Cover loosely with plastic wrap and let rise another 15 minutes.
  • Bake at 400 for about 10 minutes or until golden brown.
  • Let these cool down before you remove them from the pan or they will likely tear.

Steps:

  • In a large mixing bowl or a stand mixer fitted with the bread hook, combine sugar and yeast, giving a quick stir to combine. Add warm water and allow to bloom for 10-15 minutes. The mixture should be frothy and fragrant.
  • Preheat oven to 400 degrees and grease a 9x13 baking dish with a cold stick of butter.

⅓ cup oil

1 egg (beaten)
1 tablespoon softened butter

⅛ cup milk (room temperature)

Steps:

  • Preheat oven to 400*F.
  • In a large bowl, combine 1 cup water, oil, sugar, and yeast. Let sit until yeast is bubbly (about 8 minutes). Stir in beaten egg, softened butter, and salt.
  • With a stand mixer or by hand, add flour, one cup at a time until you have a soft dough that isn't sticky. Knead by hand 10 minutes or 5 minutes with a stand mixer.

This recipe is one of our family traditions. We don't know how old it is, but it is at least Depression Era (no milk, no eggs). It was handed down from my Grandma Pearl Nash. She never wrote down the recipe, always measured by memory and her hands. She developed breast cancer in the early 60's and shortly before she died. My Daddy asked her to measure out all the ingredients so the recipe would not be lost. He carried her into the kitchen, where she carefully placed the ingredients on newsprint paper. My mama (who my kids called Tutu) shifted the ingredients into measuring cups and spoons to record the amounts.

2 ½ cups warm water
1 ½ tablespoons active dry yeast
½ cup white sugar
1 tablespoon salt
¾ cup shortening (such as Crisco®)
7 cups all-purpose flour, divided, or more as needed
½ cup butter, melted

Steps:

  • Dissolve yeast in warm water in the bowl of a stand mixer fitted with the dough hook. Stir in sugar and salt until you see foam rising. Add 3 cups flour and 3/4 cup shortening; mix with the dough hook until the mixture is the consistency of a thick pancake batter.
  • Fill a pot with hot (not boiling) water.
  • Remove the mixer bowl and cover it with plastic wrap and a towel. Place the bowl over the pot of hot water, making sure the bottom does not touch the water. Let rise until doubled in size, 45 minutes to 1 hour.
  • Place the bowl back on your stand mixer and gradually mix in remaining 4 cups flour until dough is smooth and elastic; you may need to add up to 1 additional cup.
  • Heavily grease two 9x13-inch pans with shortening.
  • Divide dough into 24 balls. Place 12 balls into each of the prepared pans; cover with plastic wrap and a towel. Let rise in a warm area until doubled in size, about 1 hour; balls will start out at about 1 1/2 inches in diameter but will rise and touch the sides of the pans.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bake rolls in the preheated oven until golden brown on top, 25 to 30 minutes. Remove from the oven and brush melted butter over top.

I have been making these for quite a long time. I found the recipe in an old church cookbook my mother had. No kneading or shaping required! They are homemade, with yeast and all. 1 cup warm water
2 tablespoons sugar
1 egg (beaten)
2 tablespoons oil
2 1/4 cups flour

  • Dissolve yeast, water and sugar together. Let sit for a few minutes until yeast bubbles a bit. Add beaten egg, oil, flour and salt. Mix with mixer on low speed. Let rise 15 minutes. Spoon ino greased muffin tins, let rise again, about 15-20 minutes. Bake at 400 degrees for 15-20 minutes, or until browned. Makes 12 rolls. Serve with butter and enjoy!
