MICROWAVE ACORN SQUASH

Microwave Acorn Squash image

Just microwave! You don't have to use the oven. You can just do one acorn squash instead of two, if you choose. Pricking all over, then putting in the microwave for a few minutes to soften a little, makes it easier to cut.

APPLE-STUFFED ACORN SQUASH MICROWAVE-STYLE!

Apple-Stuffed Acorn Squash Microwave-Style! image

Only 7 ingredients and made in the microwave, so you can throw this together in a jiffy. Great comfort food for the fall and winter months. Tart, sweet and good for you too. Perfect for those on a low sodium diet. NOTE: I have made the celery optional and I agree it is better without. I also use WAY more butter and cinnamon than what the recipe calls for :)

Time 25m

Yield 2 serving(s)

Number Of Ingredients 8

1 acorn squash
1 large granny smith apple, peeled and chopped
1/4 cup chopped celery (optional)
2 tablespoons dried cranberries (or cherries, I have also used dried apricots)
2 tablespoons butter, melted
1 tablespoon brown sugar (or Splenda)
2 tablespoons chopped walnuts
1/4 teaspoon pumpkin pie spice (can substitute 1/4 tsp cinnamon with a dash of nutmeg if need be)

Steps:

  • Cut acorn squash in half, lengthwise. Remove and discard seeds and fiber.
  • In a shallow microwave-safe dish, place squash cut-side down. Put 1 tbsp of water in bottom of dish. Microwave covered on high power 7 minutes until almost tender.
  • In the meanwhile, combine apple, celery, cranberries, brown sugar, spice and butter in a mixing bowl.
  • When squash is done, turn them over. Fill centers with apple mixture. Microwave covered on high power 5 minutes longer until squash and apple filling are tender. Let stand 3 minutes in microwave after done cooking.

CRANBERRY STUFFED ACORN SQUASH

Cranberry Stuffed Acorn Squash image

From a Cranberry Cookbook put out by the Westport-Grayland Washington Chamber of Commerce. (The Cranberry Coast) NOTE: Everyone said this made too much filling for 1 squash, so I changed the recipe to 2 squashes, to serve 4. Easy to halve for 2 servings. Microwave instructions included at end of regular instructions.

PECAN CRANBERRY SPREAD

Pecan Cranberry Spread image

I find any excuse possible to serve this. Great around the holidays but worthy of being made all year round. It is the dish I am most often asked to bring to a gathering requiring finger foods or appetizers. Really good on Townhouse Wheat Crackers. If I don't have any orange juice concentrate, I use just enough fresh squeezed juice to make it the right consistency and the zest from the orange for more flavor. *PLEASE NOTE!!* You REALLY need to make this ahead of time! The flavors must blend for it to taste good!

  • Add 1 teaspoon of coconut oil and 1/2 tablespoon brown or coconut sugar to each squash half; use your hands to rub into the flesh of the squash, even on the top (but not on the skin). Sprinkle each squash half with a little bit of cinnamon. Place flesh side down on baking sheet and roast in the oven for 45 minutes to 1 hour or until squash is just fork tender.
  • While the squash roasts, you can make the quinoa. Add quinoa, water and thyme sprigs to a large pot and place over medium high heat. Bring to a boil, then cover, reduce heat to low and cook for exactly 15 minutes. After 15 minutes, remove from heat and fluff quinoa with a fork. Remove thyme sprigs from quinoa and discard.
  • Next stir in coconut oil, orange juice, honey, turmeric and salt and stir to combine. Fold in dried cranberries and chopped pecans.
