- Put all the ingredients into a saucepan over medium heat and simmer until the cranberries burst and the sauce thickens, about 15 to 20 minutes. Serve at room temperature or cool and refrigerate. Remove the cinnamon stick before serving.

- Place sweet potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until tender. Drain. When potatoes are cool, peel and cut into 1/2-in. slices. Arrange in a greased shallow 3-qt. baking dish; set aside., In a large saucepan, combine the brown sugar, cornstarch, salt and cinnamon. Stir in the orange juice, honey, butter, water and orange zest. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in walnuts. , Pour mixture over the potatoes. Bake, uncovered, at 350° for 25 minutes or until heated through.

CRANBERRY-GLAZED SWEET POTATOES
Steps:
- Preheat the oven to 400 degrees F.
- On a baking sheet, toss together the sweet potatoes, oil and some salt and pepper. Roast until the potatoes are golden brown and cooked through, 30 to 40 minutes.
- In the meantime, in a small saucepan over medium-high heat, reduce the cranberry juice by half. Add the brown sugar, butter and cinnamon, stirring to dissolve and incorporate.
- When the potatoes come out of the oven, add them to a large bowl. Pour the glaze over top and toss to coat completely. Serve topped with the toasted almonds.
BAKED SWEET POTATOES IN ORANGE SAUCE
This fabulous sweet potato dish is a must with a roast chicken or turkey dinner, but just as good with beef also. Recipe can easily be doubled to serve more than 6 people. This recipe can be completely made in advance to be baked later.

- Prepare and butter a shallow 3-quart baking dish.
- Arrange the potato slices overlapping in rows in the baking dish; set aside.
- In a small saucepan combine sugar, cornstarch and salt.
- Stir in orange juice until well blended; bring to a boil, and cook stirring constantly for about 1 minute.
- Remove from heat and add in butter, and orange peel, and mix until butter has melted.
- Pour over the sweet potatoes in the baking dish (at this point you can cover and set aside until ready to bake later on).
- Set oven to 375 degrees.
- Bake covered for about 45-50 minutes.
- Uncover and baste with sauce, then bake (uncovered) for another 15-20 minutes, or until the potato slices are cooked to desied tenderness (this might take more than 20 minutes).
- When serving, arrange the orange slices around the dish if desired.
- Delicious!

CRANBERRY ORANGE SAUCED SWEET POTATOES

- Heat oven to 400 degrees F.
- Wash sweet potatoes; pat dry. Prick with a fork; place in a shallow baking dish. Bake 40 to 50 minutes or until soft. During the last 10 minutes of baking, prepare sauce.
- Melt shortening in medium saucepan (or place oil in saucepan). Add brown sugar, salt, orange juice and water, stirring over low heat until sugar dissolves. Add cranberries; bring to a boil. Reduce heat; simmer, covered, 5 minutes or until cranberries start to pop.
- Stir cornstarch mixture into cranberries; cook, stirring constantly, until sauce comes to a boil. Reduce heat and cook 1 to 2 minutes or until mixture is slightly thickened.
- Make a lengthwise cut in the center of each potato; press open from bottom. Place sweet potatoes on serving platter. Top each with cranberry sauce.

- Place sweet potato in a saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or just until tender. Drain; set aside., In a food processor, combine the cranberries, orange, sugar and jalapeno if desired; cover and process until finely chopped. Transfer to a bowl; stir in the sweet potato, pecans, cilantro, salt and cinnamon. Cover and refrigerate for at least 1 hour before serving.

This will work for either sweet potatoes or carrots, I use both sweet potatoes and carrots for this, make certain to chop your carrots into about 1-1/2 inch pieces. This is a great dish, and one that goes great with a turkey or roasted chicken dinner. If you like a lot of sauce or you are using more sweet potatoes then then double the sauce ingredients, adjust the amount of sugar, if you prefer a sweeter sauce then add in more sugar, you can use brown sugar in place of white if desired

- Place the sweet potatoes in a buttered casserole dish (use a baking dish large enough to hold the potatoes).
- In a small saucepan, combine cranberry sauce, orange juice, sugar, melted butter; bring to a boil, reduce heat and gently simmer for about 8 minutes (you will have to break up the cranberry jelly with a fork to smooth out).
