Stuffed zucchini boats filled with the flavors of chicken parmesan. This low carbohydrate, high protein meal will leave you feeling satisfied!

4 medium zucchini (about 1 3/4 pounds)
1 lb. ground chicken
1/4 tsp. salt
1/4 tsp. ground black pepper
2 garlic cloves (minced)
1 cup pasta sauce
1/4 cup grated parmesan cheese
1/2 cup shredded mozzarella cheese
Optional: sliced fresh basil for topping

Steps:

  • Preheat oven to 400 degrees F. Spray a 9x13 inch baking dish with cooking spray.
  • Place a large non-stick skillet over medium-high heat. Add the chicken and break it apart with a spoon. Add the salt and pepper. Cook for 8 to 10 minutes, until chicken is cooked through. Stir occasionally and break down the chicken into small chunks.
  • Reduce the heat to low. Add the garlic to the chicken. Cook 1 minute stirring often. Add the pasta sauce. Cook 3 minutes, stirring occasionally.
  • As the chicken cooks, cut the zucchini in half, lengthwise. Use a spoon to scoop the seeds and center out of each zucchini half, leaving a 1/4 inch thick zucchini boat.
  • Place the zucchini in the baking dish cut-side up.
  • Spoon the chicken mixture into the zucchini boats. Press the mixture down into the zucchini using the back of the spoon.
  • Sprinkle the zucchini evenly with the parmesan, then the mozzarella cheese.
  • Cover the baking dish with foil. Bake for 35 minutes.
  • Sprinkle with fresh basil and serve.

1 large zucchini
2 cups shredded cooked chicken
1 cup shredded low-fat mozzarella cheese
1 cup grated Parmesan cheese
salt and ground black pepper to taste
1 tablespoon olive oil
1 (8 ounce) package sliced fresh mushrooms
1 (10.75 ounce) can low-fat cream of mushroom soup

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Cut zucchini in half and remove the seeds. Set aside.
  • Place chicken, mozzarella cheese, and Parmesan cheese in a mixing bowl and mix well; season with salt and pepper. Transfer mixture into zucchini halves; place on a baking sheet.
  • Bake in the preheated oven until zucchini boats are tender, 20 to 30 minutes.
  • While zucchini bakes, heat oil in a pan over medium-high heat. Saute mushrooms in the hot oil until soft, about 5 minutes.
  • At the same time, pour mushroom soup into a pot and cook over medium-low heat until warmed. Stir sauteed mushrooms into the soup. Spoon mixture over baked zucchini boats and serve.

4 medium zucchini
1 tablespoon plus 1 teaspoon olive oil
Kosher salt and freshly ground black pepper
1 pound ground chicken
1 teaspoon dried Italian seasoning
2 cloves garlic, minced
1 1/2 cups homemade or jarred marinara (I like Rao's)
1/2 cup shredded mozzarella
2 tablespoons grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F.
  • Slice off the ends of the zucchini and cut in half lengthwise. Use a spoon to remove the flesh of the zucchini, then chop the flesh and set aside. Place the zucchini boats on a baking sheet and drizzle with 1 teaspoon of the olive oil. Season lightly with salt and pepper. Bake for 20 minutes.
  • Meanwhile, heat the remaining 1 tablespoon olive oil in a medium skillet over medium-high heat. Add the ground chicken and cook, using a wooden spoon to break up the chicken, until browned, 8 to 10 minutes. Add the Italian seasoning, garlic, zucchini flesh, 3/4 teaspoon salt and 1/4 teaspoon pepper. Cook an additional 2 to 3 minutes. Add 1/2 cup of the sauce and mix well.
  • Spoon some of the chicken mixture into each zucchini boat. Top each zucchini boat with some of the remaining marinara, then top with the mozzarella and a sprinkle of Parmesan. Bake until the cheese is bubbly and golden brown, an additional 15 to 20 minutes.

1/2 yellow onion, sliced
1 1/2 teaspoons extra virgin olive oil
6 ounces boneless skinless chicken breasts
1 garlic clove, crushed
1/8 teaspoon dried basil
1/8 teaspoon dried oregano
1/8 teaspoon black pepper
1 cup zucchini, sliced
1/2 cup canned diced tomato
1 ounce part-skim mozzarella cheese, shredded
1 teaspoon parmesan cheese
2 cups salad greens
2 tablespoons fat-free salad dressing, any flavour

Steps:

  • Preheat broiler.
  • Spray a jelly roll pan with non-stick cooking spray.
  • Wash and peel onion and cut into ¼ inch thick slices.
  • Arrange onion slices in a single layer in the prepared pan and spray lightly with non-stick cooking spray.
  • Broil onion slices 5 inches from heat for 10 minutes, turning over after 5 minutes, or until tender and lightly charred.
  • Meanwhile, prepare chicken by placing between two pieces of plastic wrap and pounding with a wooden mallet to approximately ½ inch thickness; set aside. Crush that garlic and mix it in a small bowl with the 1 ½ tsp oil, 1 tsp water basil, oregano and pepper.
  • Brush both sides of zucchini and chicken with herb-oil mixture.
  • Using a metal spatula, push the onions toward the centre of the pan, creating a stack.
  • Place the chicken on top of the onions and arrange the zucchini slices around the stack.
  • Broil 7-9 minutes, or until chicken is cooked through and zucchini slices are tender.
  • Change broiler setting to bake at 450° F and preheat.
  • Spray a shallow baking dish with non-stick cooking spray.
  • Transfer the chicken and onions to the baking dish, then place the zucchini on top. Spoon the canned tomatoes and their juice over the chicken and vegetables.
  • Sprinkle with the cheeses and bake for 10 minutes, or until the sauce is bubbly and the cheeses are melted.
  • Meanwhile, assemble your tossed salad with a variety of washed salad greens and vegetables, and toss with your favourite fat free salad dressing.

Using a spiralizer, zucchini is turned into a tasty stand-in for pasta in this non-breaded take on chicken Parmesan.

4 zucchini, cut into spirals using a spiral slicer
1 teaspoon salt
1 tablespoon Italian seasoning
4 skinless, boneless chicken breast halves
salt and ground black pepper to taste
1 cup marinara sauce
cooking spray
4 slices mozzarella cheese
¼ cup freshly grated Parmesan cheese, or to taste

Steps:

  • Line a baking sheet with parchment paper.
  • Place zucchini spirals in a colander and sprinkle 1 teaspoon salt and Italian seasoning over zucchini; toss to coat. Set colander over a bowl to allow water from zucchini to drain.
  • Wrap chicken in plastic wrap and place on a work surface; pound into 1/4- to 1/2-inch thickness. Remove plastic wrap and season chicken with salt and pepper.
  • Heat marinara sauce in a saucepan over low heat.
  • Coat a nonstick skillet with cooking spray and place over medium-high heat. Cook chicken in the hot skillet until browned and no longer pink in the center, 4 to 5 minutes per side. Transfer chicken to the prepared baking sheet.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Place zucchini in the same nonstick skillet over medium-high heat; cook and stir until tender yet firm to the bite, 3 to 4 minutes.
  • Spoon marinara sauce over each chicken breast and top with mozzarella cheese.
  • Broil chicken in the preheated oven until cheese is melted, 1 to 2 minutes.
  • Transfer zucchini to each serving plate and add chicken. Spoon warm marinara over each piece of chicken and top with Parmesan cheese.
