SLOW-COOKER HAMBURGER HASH
Easy hamburger dish that's made in slow cooker - perfect for a dinner.

Steps:
- Cook beef in 12-inch skillet over medium-high heat about 10 minutes, stirring occasionally, until brown; drain.
- Mix tomato puree and mushroom soup in medium bowl. Stir in onion soup and water.
- Spray 5- to 6-quart slow cooker with cooking spray. Reserve 1 cup of the potatoes. Gently mix beef, remaining potatoes, carrots, salt and soup mixture in cooker. Sprinkle with reserved 1 cup potatoes.
- Cover and cook on low heat setting 8 to 9 hours or until vegetables are tender. Hash will hold on low heat setting up to 2 hours.

- In a large pot over medium-high heat, brown the meat with the garlic, celery and onions. Remove the pot from the heat and drain off as much fat as you can. (Discard the fat once it cools.)
- Return the pot to the heat and add the beef stock, tomatoes, tomato paste, parsley, oregano, salt, black pepper, cayenne, potatoes, carrots and green, red and yellow bell peppers. Stir to combine, then bring to a boil. Reduce the heat, cover the pot and simmer until the potatoes are tender but not overly mushy, 15 to 20 more minutes. The soup should be somewhat thick, but if you'd like it to be more "soupy," add 1 to 2 cups more broth OR hot water and heat through. Taste and adjust the seasonings, adding more salt, black pepper or cayenne if needed.
- Serve with crusty bread!
HAMBURGER HASH

- Preheat broiler to high.
- Peel the potatoes and cut them into small cubes. Place cubed potatoes in a bowl of cold water, swishing them around to remove starch. Drain in a colander and rinse. Spread potatoes out paper towels and pat dry.
- Add oil to a cast iron skillet and heat over medium-high heat. Add the potatoes and cook, stirring as needed, until the potatoes are fork tender and browned on most sides.
- Sprinkle potatoes with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Transfer to a plate and set aside.
- Stir in the onions, red bell pepper and garlic to the skillet. Cook over medium heat, stirring until golden brown.
- Stir in the beef, chili powder, and 1/2 teaspoon salt, 1/4 teaspoon black pepper and cook, breaking up any clump, until brown, about 5 minutes. Drain any excess fat.
- Add the potatoes back to the skillet and mix in. Sprinkle cheese evenly over the top of the skillet.
- Place skillet under preheated broiler until cheese is melted, about 1 minute. Garnish with fresh parsley and serve.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking dish.
- Mix hash brown potatoes, vegetable oil, and black pepper in a bowl; press into the bottom of the prepared baking dish.
- Heat a large skillet over medium-high heat. Cook and stir beef, garlic powder, and onion powder in the hot skillet until beef is browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Mix water and gravy mix into the cooked beef; bring to a boil. Reduce heat, cover skillet, and simmer until water evaporates, about 5 minutes. Fold in 1/2 cup Cheddar cheese. Spoon beef mixture onto the potato crust.

Move over corned beef, because there's a new hash in town! If you like hash, you are going to love this version made with ground beef instead of corned. Making a hash is basically a 3-step process: frying your meat and potatoes, adding onions and mushrooms, and then adding quick-cooking vegetables like peppers. But take a look in the fridge and use any ingredients you'd like because in the game of hash, whoever has the most ingredients wins! Top with a cayenne-dusted poached egg and green onions if you'd like.

- Cut a 1/4-inch slice off the bottom each potato so it sits flat on a cutting board. Cut some more 1/4-inch slices straight down and then cut potatoes into sticks. Turn sticks and cut across to create a uniform dice. Transfer to a bowl of cold water.
- Combine butter and olive oil in a skillet over high heat until butter melts. Add ground beef and cook, breaking up with a flat-edge utensil, until crumbly, about 5 minutes.
- Drain potatoes and add to the beef with a nice pinch of salt. Reduce heat to medium-high and cook, stirring occasionally, until potatoes just start to soften, 5 to 7 minutes. Smooth mixture in the skillet and press against the bottom of the pan to help everything get nice and crusty.

O'BRIEN BURGER
Being a burger fanatic, I'm always on the lookout for new recipes. How great is it that one of the latest trends is adding fries or hash browns to your burger? Yum! I discovered this little gem on a recipe card from Super K. Although I haven't tried it yet, (I found it just yesterday!) I was excited to share it with you, as it's definitely at the top of my list. I suppose you could "cheat" and use frozen O'Brien potatoes instead of the hash browns and skip the bell peppers, but then you'd end up with only small bits of them, and miss out on the whole "fresh bell pepper" experience.

- Coat grill rack with nonstick cooking spray. Preheat grill to medium (300 degrees F to 350 degrees F). In a medium bowl combine ground beef, 1/2 cup of the hash browns, plus salt and pepper to taste; mix well. Form into 4 patties about 1/2 inch thick.
- Grill patties 5 to 7 minutes per side or to desired doneness. During the last 2 minutes of grilling, top each patty with 1 cheese slice; grill until melted. Meanwhile, grill peppers 5 to 7 minutes or until lightly charred, turning occasionally.
- Prepare remaining 1 cup hash browns in a skillet according to package directions, forming potatoes into four patties.
- Place rolls, cut-side down, on grill. Grill until lightly toasted. To assemble burgers, place lettuce on bottom half of rolls, top with burgers, peppers and hash brown patties, and serve.
- Note # 1: Seems any type of cheese would work well with this. Since Swiss isn't a favorite of mine, I'll probably try it with Cheddar, Colby-Jack or American.
- Note # 2: This sounds as though it would make a mighty fine "Breakfast Burger" with a few modifications. Maybe by leaving off the lettuce and adding a few strips of cooked bacon and a fried egg instead? (Well, we ARE using lean ground beef to compensate, no?).
