CHEDDAR CHIVE SCONES
No special tools are required for these simple Cheddar Chive Scones. They're made only with flour, cream, cheddar, chives, and a smidge of baking powder, sugar, and salt.

- Preheat oven to 400 degrees F. Line a sheet pan with parchment paper or a silicone mat.
- Whisk to combine the flour, baking powder, sugar, salt, cheddar cheese, and chives.
- Make a well in the center and add the heavy cream. Gently toss the dry ingredients into the liquid, gradually moistening the dough. Take care not to overstir or work the dough too much, or the scones will be tough.
- Shape the dough into a square and cut the dough into pieces, either into 12 triangles or 12 pieces cut with a metal cutter. Place the scones on the sheet pan and bake for 15 minutes, until the dough reaches 190 F. Enjoy!

VEGAN CHEDDAR CHIVE SCONES

- Preheat oven to 400ºF (if your oven runs hot, bring it down to 375ºF)
- In a small bowl, combine flax meal and water and let thicken.
- In another small bowl, combine soy milk and vinegar and let curdle to make vegan buttermilk.
- In a large mixing bowl, combine flour, sugar, baking powder, and salt and stir until combined. Using a pastry knife (or just rub in with your fingers), cut the butter into the flour mixture until it resembles a coarse sand.
- Stir in the flax mixture and vegan buttermilk. Gently knead together dough until all flour is incorporated.
- Fold in the chives and vegan cheddar, then shape into a thick, round disc (see the video if you want to know how big) and cut into 6-8 wedges (depending on how you like the shape).
- Bake for 25-30 min at 400ºF (if your oven runs hot, bring it down to 375ºF) until you have golden edges on your scones.
- Remove from oven, let cool on a wire rack and enjoy!

- Preheat the oven to 425°F Lightly grease a baking sheet, or line it with parchment.
- Whisk together the flour, salt, baking powder, and sugar.
- Work the butter into the flour until the mixture is unevenly crumbly.
- Mix in the cheese, chives, and bacon till evenly distributed.
- Add ¾ cup of the cream, stirring to combine. Try squeezing the dough together; if it's crumbly and won't hang together, or if there are crumbs remaining in the bottom of the bowl, add cream until the dough comes together. Transfer the shaggy dough to a well-floured work surface.
- Pat the dough into a smooth 7" disk about ¾" thick. Transfer the disk to the prepared baking sheet.
- Use a knife or bench knife to cut the disk into 8 wedges, spreading the wedges apart a bit on the pan.
- Brush the scones with a bit of cream; this will help their crust brown.
- Bake the scones for 20 to 25 minutes, until they're golden brown. Remove them from the oven, and cool right on the pan. Serve warm, or at room temperature.
- Yield: 8 large scones.

Steps:
- Heat oven to 425 degrees.
- In a large bowl, combine flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Stir in 2/3 c cream.
- Add cheddar and chives and use hands to combine; dough should be crumbly. Knead dough a couple of times until it comes together. Gently pat into a ball, then flatten slightly into a 1" thick disk.
- Transfer to a baking sheet. Slice into quarters, then cut each quarter in half. Brush top with remaining cream. Bake for about 30 minutes or until golden.
