"My sister, who's a great cook, passed this recipe on to me," notes Nell Wheeler from Warrenton, Virginia. "These buttery bars are studded with cranberries, pecans and coconut. They're pretty enough for Christmas, but I make them all year."

1/4 cup all-purpose flour
1-1/2 teaspoons sugar
2 tablespoons cold butter
2 tablespoons chopped pecans
TOPPING:
2 tablespoons beaten egg
1-1/2 teaspoons whole milk
3/4 teaspoon grated orange zest
1/4 teaspoon vanilla extract
1/3 cup sugar
1-1/2 teaspoons all-purpose flour
1/4 cup chopped fresh or frozen cranberries
2 tablespoons sweetened shredded coconut
2 tablespoons chopped pecans

Steps:

  • In a large bowl, combine flour and sugar; cut in butter until mixture resembles coarse crumbs. Stir in pecans. Press into an 8x4-in. loaf pan coated with cooking spray. Bake at 350° for 15 minutes., Meanwhile, in another bowl, combine the egg, milk, orange zest and vanilla. Combine sugar and flour; gradually add to egg mixture and mix well. Fold in the cranberries, coconut and pecans. Spread over crust. , Bake for 15-20 minutes or until golden brown. Cool on a wire rack.

These wholesome cranberry-orange granola bars are a great healthy snack! They're made with oats, honey, nuts, dried cranberries and orange zest. This gluten free and easily vegan recipe yields 14 to 16 granola bars.

1 cup pecan pieces
1/3 cup pepitas
2/3 cup dried cranberries
1 3/4 cups quick-cooking oats (or old-fashioned oats, pulsed briefly in a food processor or blender to break them up)
1 teaspoon orange zest, preferably organic (from 1 large orange)
1/2 teaspoon ground cinnamon
1/2 to 3/4 teaspoon salt, to taste (decrease if your almond/peanut butter is salted)
1 cup creamy unsalted almond butter or peanut butter, packed
1/2 cup honey or maple syrup
1 1/2 teaspoons vanilla extract

Steps:

  • Line a 9-inch square baker with two strips of criss-crossed parchment paper, cut to fit neatly against the base and up the sides. The parchment paper will make it easy for you to slice the bars later.
  • In a medium skillet over medium heat, toast the pecans and pepitas, stirring often, until they are fragrant and the pepitas are starting to make little popping noises, about 5 minutes. Transfer the toasted pecans and pepitas to a food processor. Add the cranberries and then run the machine for about 10 seconds, until the nuts and cranberries are all broken up. (If you skip the food processor step, your bars will be more difficult to slice through and more likely to crumble at the edges.)
  • In a mixing bowl, combine the contents of the food processor with the oats, orange zest, cinnamon and salt. Whisk to combine.
  • In a smaller mixing bowl, whisk together the almond butter, honey and vanilla extract until well blended.
  • Pour the liquid ingredients into the dry ingredients. Use a big spoon to mix them together until the two are evenly combined and no dry oats remain. This takes some arm muscles, but you can do it! If the mixture was easy to mix together, that's a sign that you need to add some more oats-sprinkle in more oats until you can't incorporate any more.
  • Transfer the mixture to the prepared square baker. Use your spoon to arrange the mixture fairly evenly in the baker, then use the bottom of a flat, round surface (like a short, sturdy drinking glass), covered in a small piece of parchment paper, to pack the mixture down as firmly and evenly as possible.
  • Cover the baker and refrigerate for at least one hour, or preferably overnight. (The oats need time to soak up some of the moisture so they aren't sticky.) When you're ready to slice, lift the bars out of the baker by grabbing both pieces of parchment paper on opposite corners. Use a sharp knife to slice the bars into 1" strips, then slice them in half through the middle.
  • For portability, you can wrap individual bars in plastic wrap or parchment paper. Bars keep well for a couple of days at room temperature, but I recommend storing individually wrapped bars in a freezer-safe bag in the freezer for best flavor.

1 cup dried cranberries
1 cup pecan halves
½ cup ground flax seed
½ cup milk chocolate chips
¼ cup wheat germ
1 cup packed light brown sugar
½ cup honey
2 tablespoons vegetable oil
½ teaspoon salt
1 teaspoon vanilla extract
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line an 8-inch square baking dish with parchment paper or waxed paper.
  • Mix oats, cranberries, pecans, ground flax seed, chocolate chips, and wheat germ together in a bowl.
  • Stir brown sugar, honey, vegetable oil, and salt together in a large microwave-safe bowl; heat in microwave for 30 seconds. Stir mixture and heat in microwave again until smooth, about 30 seconds more. Stir vanilla extract and cinnamon into brown sugar mixture.
  • Stir brown sugar mixture into oats mixture until evenly mixed and chocolate is melted; pour into the prepared baking dish.
  • Bake in the preheated oven until edges are golden brown, about 30 minutes. Lift bars out of pan by pulling by the parchment paper; cool for 5 minutes before cutting into bars.

3 cups fresh cranberries
2 large unpeeled oranges, cut into quarters
2 1/2 cups sugar
3 tablespoons cornstarch
1 teaspoon grated ginger
1/2 cup chopped nuts (optional)
3 1/4 cups all-purpose flour
3/4 cup sugar
1 tablespoon grated lemon peel
1 cup butter
3 large egg yolks
3/4 teaspoon vanilla extract
1 -2 tablespoon water

Steps:

  • Grind cranberries and oranges, including peel; set aside.
  • In a saucepan, combine sugar, cornstarch, ginger.add ground fruit -- bring to a boil.
  • Reduce heat, cook and stir for 15 minutes or until thick.
  • Remove from the heat; stir in nuts, if using.
  • Set aside to cool.
  • Meanwhile for crust:.
  • Combine flour, sugar and lemon peel in large bowl.
  • Cut in butter until coarse crumbs form.
  • Add egg yolks, vanilla and just enough water so dough holds it shape.
  • Pat two thirds of dough into 13x9 pan --
  • Cover with cranberry orange mixture.
  • Crumble remaining dough on top.
  • Bake at 425°F for 20-25 minutes or until topping is golden brown.
  • Cool and cut into bars.
