2 cups all-purpose flour
¾ cup white sugar
¾ teaspoon salt
1 ½ teaspoons baking powder
½ teaspoon baking soda
1 cup chopped cranberries
½ cup chopped walnuts
1 egg
2 tablespoons vegetable oil
¾ cup orange juice
1 tablespoon orange zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  • Combine the flour, sugar, salt, baking powder, and baking soda. Add the cranberries and walnuts, and stir to coat with flour. Mix together the egg, oil, orange juice, and orange zest. Pour the egg mixture into the flour mixture, and stir until just blended. Spoon the batter into the prepared pan.
  • Bake for 50 minutes in the preheated oven, or until a toothpick inserted near the center comes out clean. Cool in pan for 10 minutes, then remove to a wire rack, and cool completely.

2 1/2 cups cranberries, chopped, divided (fresh or frozen)
2/3 cup sugar
2 teaspoons orange zest, minced
2 1/4 cups all-purpose flour
3/4 cup light brown sugar, packed
1 tablespoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground cloves
2 eggs, lightly beaten
3/4 cup sour cream
1/4 cup unsalted butter, melted
1 cup pecans, chopped

Steps:

  • In a large saucepan, combine 1 1/2 cups of chopped cranberries, sugar & orange zest.
  • Brink to a boil, then reduce heat & cook 6 to 8 minutes or until cranberries are softened.
  • Remove from the heat & stir in the remaining berries before setting them aside.
  • Preheat oven to 350 degrees F & grease two 8-inch loaf pans.
  • In a large bowl, whisk together the flour, brown sugar, baking soda, cinnamon, salt & cloves.
  • In another bowl, combine the eggs, sour cream & butter, then stir this mixture into the dry ingredients until just blended.
  • Fold in the cranberries & pecans, then pour batter into the two prepared loaf pans.
  • Bake for 55 to 60 minutes or until a toothpick inserted near the center comes out clean.
  • Cool in the pan for 10 minutes on a wire rack before removing the loaves from the pans to cool completely on the wire rack.

2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup butter or 1/2 cup margarine, softened
1/2 cup sugar
1 egg
1 (16 ounce) can ocean spray whole berry cranberry sauce
1 cup chopped walnuts

Steps:

  • DIRECTIONS:.
  • Preheat oven to 350ºF. Grease an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan.
  • Combine flour, baking powder, cinnamon and nutmeg in a small mixing bowl; set aside.
  • Using an electric mixer, beat butter or margarine with sugar in a medium mixing bowl until light and fluffy. Add egg; mix well. Break up cranberry sauce with a fork and add to the butter mixture. Add nuts. Add dry ingredients to the cranberry mixture, mixing just until the dry ingredients are moist.
  • Spread batter evenly into prepared loaf pan. Bake until golden brown and a toothpick inserted into the center comes out clean, about 1 hour and 15 minutes. If bread begins to brown too quickly, loosely cover with foil and continue to bake until bread tests done.
  • Makes 1 loaf.

3 cups all-purpose flour
1-1/4 cups sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons shortening
2 teaspoons grated orange zest
2 teaspoons grated lemon zest
1/2 cup orange juice
1 tablespoon lemon juice
3 large eggs, lightly beaten
1-1/2 cups shredded sharp cheddar cheese
1-1/2 cups fresh or frozen cranberries
1 cup chopped walnuts

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. Cut in shortening until well blended. Stir in the orange zest and lemon zest. In a measuring cup, combine orange juice and lemon juice; add enough water to measure 1 cup. Add eggs and juice mixture to dry ingredients; stir just until moistened. 1 cup coarsely chopped cranberries
1/3 cup coarsely chopped walnuts

Steps:

  • In a food processor or in a bowl with a pastry blender blend together the flour, the sugar, the baking powder, the salt, the baking soda, and the butter until the mixture resembles meal and transfer the mixture to a large bowl. In a small bowl whisk together the zest, the juice, and the egg, add the mixture to the flour mixture, and stir the batter until it is just combined. Stir in the cranberries and the walnuts and transfer the batter to a well-buttered 9- by 5-inch loaf pan. Bake the bread in the middle of a preheated 350°F. oven for 1 1/4 hours, or until a tester comes out clean. Let the bread cool in the pan for 15 minutes and turn it out onto a rack.

Steps:

  • Preheat oven to 350°. In a large bowl, combine the flour, sugar, baking powder, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. In a small bowl, whisk the egg, orange juice and zest; stir into dry ingredients just until moistened. Fold in cranberries and walnuts. , Spoon batter into a greased and floured 8x4-in. loaf pan. Bake until a toothpick inserted in the center comes out clean, 65-70 minutes. Cool in pan 10 minutes before removing to a wire rack to cool completely.

2 cups all-purpose flour
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter
1 egg
3/4 cup orange juice
1 tablespoon grated orange rind
1 1/2 cups chopped fresh cranberries
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees. Greasing 9-by-5-by-3-inch baking pan.
  • Sift flour, sugar, baking powder, baking soda and salt into a large bowl. Using a pastry blender or two knives, cut in butter until the mixture resembles corn meal.
  • Beat egg until thick and light. Stir in orange juice and rind. Lightly stir this mixture into the flour mixture just until the ingredients are blended. Fold in cranberries and nuts.
  • Pour batter into prepared pan and bake for 1 hour and 15 minutes, until the bread is golden brown and springs back when lightly touched.
  • Cool on a rack, wrap in foil and hold overnight before slicing.
