CRANBERRY ORANGE BAGELS

Yield 9 bagels.

Number Of Ingredients 11

1 cup plus 4 tablespoons water (70° to 80°), divided
1/2 cup dried cranberries
1/3 cup packed brown sugar
4-1/2 teaspoons grated orange zest
1 teaspoon salt
1/4 teaspoon ground cloves
3 cups bread flour
1 package (1/4 ounce) active dry yeast
1 tablespoon sugar
1 large egg white
1 tablespoon cornmeal

Steps:

  • In bread machine pan, place 1 cup plus 2 tablespoons water, cranberries, brown sugar, orange zest, salt, cloves, flour and yeast in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., When cycle is completed, turn dough onto a lightly floured surface. Shape into nine balls. Push thumb through centers to form a 1-in. hole. Stretch and shape dough to form an even ring. Cover and let rest for 10 minutes; flatten rings slightly., Fill a Dutch oven two-thirds full with water; add sugar and bring to a boil. Drop bagels, two at a time, into boiling water. Cook for 45 seconds; turn and cook 45 seconds longer. Remove with a slotted spoon; drain on paper towels., Whisk egg white and remaining water; brush over bagels. Coat a baking sheet with cooking spray and sprinkle with cornmeal. Place bagels 2 in. apart on prepared pan. Bake at 400° for 18-22 minutes or until golden brown. Remove to wire racks to cool.

1-1/4 cups water (70° to 80°)
1/3 cup honey
2 tablespoons butter, softened
1-1/2 teaspoons salt
1 teaspoon dried orange peel
1/4 teaspoon ground mace
2 cups all-purpose flour
1-1/4 cups whole wheat flour
2-3/4 teaspoons active dry yeast
1/2 cup dried cranberries
1 large egg white
1 tablespoon water

Steps:

  • In bread machine pan, place the first 9 ingredients in order suggested by manufacturer. Select dough setting. Check dough after 5 minutes of mixing; add 1-2 tablespoons water or flour if needed. Just before the final kneading (your machine may audibly signal this), add cranberries., Preheat oven to 400°. When cycle is completed, turn dough onto a lightly floured surface. Divide and shape into 12 balls. Push thumb through center of each, stretching and shaping to form an even ring with a 1-1/2-in. hole. Place on a floured surface. Cover with kitchen towels; let rest 10 minutes. Flatten bagels slightly., Fill a Dutch oven two-thirds full with water; bring to a boil. Drop bagels, two at a time, into boiling water. Cook 45 seconds; turn and cook 45 seconds longer. Remove with a slotted spoon; drain well on paper towels., Place bagels 2 in. apart on parchment-lined baking sheets. Whisk egg white and water; brush over bagels. Bake 15-20 minutes or until golden brown. Remove from pans to wire racks to cool.

  • Transfer dough to a lightly floured surface. Knead in any extra dried cranberries and walnuts that didn’t get stirred into dough. Knead dough by hand 10 to 15 minutes until smooth, soft and elastic (the windowpane test, which I mention here, works really well to know if it’s fully kneaded).
  • Shape dough into a ball and place in a large, lightly greased bowl; turn to coat. Cover with plastic wrap or a tea towel and let rise in a warm place 1 hour until doubled.
