CRANBERRY MEDLEY
I saw a cranberry chutney recipe that used sugar, oil and other flavors I didn't care for, so I made this combination with sugar substitute and eliminated the oil. Now it's a family favorite. -Gloria Wiech, Frontenac, Minnesota

- In a large saucepan, combine all ingredients. Cook, uncovered, over medium heat until berries pop, about 15 minutes, stirring occasionally. Transfer to a small bowl; refrigerate, covered, until cold.

CRANBERRY SALAD

Steps:
- Pulse the cranberries in a food processor until fine and no large pieces remain. Transfer to a large mixing bowl and stir in the sugar. Cover and refrigerate for at least 2 hours or up to overnight.
- Drain any accumulated juices from the cranberries and reserve for another use, and then stir in the marshmallows and drained pineapple and set aside.
- Whip the heavy cream in a large mixing bowl until it begins to thicken, about 1 minute, and then beat in the powdered sugar and vanilla until soft peaks form, 3 to 5 minutes. Fold the whipped cream into the cranberry mixture, one third at a time, until fully incorporated. Transfer to an 8-by-8-inch baking dish.
- Refrigerate or freeze for about 2 hours. Right before serving, garnish with the pomegranate seeds.
COPYCAT CRANBERRY CELEBRATION SALAD
This is a copy-cat recipe for Smith's/Kroger's Wholesome@Home Cranberry Celebration recipe, derived from a combination of an Ocean Spray recipe from the can, and the listed ingredients from Kroger's. I'll be trying it the first time this year. :)

- Boil pineapple juice, cranberry juice and lemon juice together. Add jello. Remove from heat and stir in cranberries. Put in fridge till almost set. Add pineapple and nuts. Add a half cup of chopped celery if you like. Can Substitute Cherry Jello if preferred.

CRANBERRY CREAM SALAD
So easy, so pretty, and so very tasty. This salad/dessert is very light with a bit of a tang. Very refreshing. Don't save it just for Christmas or Thanksgiving. It's wonderful on a hot summer day. Because of the colour, it fits very well into 'pink' themed occasions like girls birthday parties, Mother's Day, or bridal and baby showers. Unlike others posted, this version has less added sugar and marshmallows. The recipe makes a large amount, but can easily be cut in half for smaller gatherings. Cooking time listed is standing time.

Steps:
- Chop cranberries in a food processor or blender. Don't cut them too finely as you'll want to have larger chucks in there too. If using frozen berries, chop while still frozen.
- Combine cranberries and sugar. Let stand for 2 hours.
- In a large bowl, whip cream until stiff.
- Fold in the marshmallows and pineapple.
- Give the cranberries and sugar a stir, then gently fold it into the whipped cream mixture. Over mixing will turn the entire mixture pink. While it won't change the taste, or make it any less attractive, try to have a few 'ribbons' of cranberry throughout the bowl.
- Spoon into a large glass serving bowl or individual parfait glasses. Chill until ready to serve.
KELLEY'S CRANBERRY SALAD
My kids insist I make this every Thanksgiving, Christmas, Easter and their birthdays! A big hit for many years.

Steps:
- Pick through cranberries discarding soft ones and stems, rinse and drain well.
- In a food processor, mince cranberries. (It'll take hours if you try to mince cranberries by hand!).
- Add sugar and chopped nuts to the cranberries and let sit at room temperature for an hour or so until sugar dissolves.
- Pour pineapple into cheesecloth and squeeze to drain liquid.
- Add to cranberry mixture.
- Once sugar is dissolved, add marshmallows and Cool Whip and mix well.
- Refrigerate until serving.
