Number Of Ingredients 4

1 (12-oz) bag fresh or frozen cranberries (not thawed; 3 1/2 cups)
1 cup sugar
1/2 cup fresh orange juice
1 cup water

Steps:

  • Bring all ingredients to a boil in a 2-quart heavy saucepan over moderate heat, stirring occasionally. Reduce heat and simmer, uncovered, stirring occasionally, until slightly thickened, about 20 minutes (jam will continue to thicken as it cools).
  • Force jam through a fine-mesh sieve into a bowl, discarding skins and seeds. Cool, stirring occasionally.

Number Of Ingredients 4

1 package (40 ounces) frozen unsweetened strawberries, thawed or 2-1/2 quarts fresh strawberries, hulled
1 pound fresh or frozen cranberries, thawed
5 pounds sugar
2 pouches (3 ounces each) liquid fruit pectin

Steps:

  • Grind strawberries and cranberries in a food processor or grinder; place in a Dutch oven. Add sugar. Bring to a full rolling boil; boil for 1 minute. Remove from the heat; stir in pectin and return to a full rolling boil. Boil for 1 minute, stirring constantly. Remove from the heat. , Cool for 5 minutes; skim off foam. Carefully ladle hot mixture into hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process for 10 minutes in a boiling-water canner.

Number Of Ingredients 5

2 cups fresh or frozen cranberries
1 medium orange, peeled and broken into sections
1 carton (16 ounces) frozen sliced strawberries, thawed
3 cups sugar
1 pouch (3 ounces) liquid fruit pectin

Steps:

  • In a food processor, coarsely process cranberries and orange sections. Place in a Dutch oven with strawberries and sugar. Bring to a full rolling boil over high heat, stirring constantly. Boil for 1 minute. , Remove from the heat and stir in the pectin. Skim off the foam. Carefully ladle into hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process for 10 minutes in a boiling-water canner.

To offset the cranberry tartness, I added some sweet mango, and boosted the flavorwith orange juice. This recipe went together quickly

Number Of Ingredients 4

5 cups fresh or frozen cranberries
3 cups chopped, ripe mango
1 1/2 cups orange juice
5 3/4 cups granulated sugar

Steps:

  • Add all ingredients to a large Dutch oven or other cooking pot.
  • Rub butter along the inside pot lip. This will reduce the chance of the mixture boiling over!
  • Slowly bring the mixture to a boil over medium heat,stirring until the sugar is dissolved.
  • Turn the heat up a little and cook rapidly, stirring often to prevent sticking, until the jam reaches the gelling point.
  • Use the plate method to check for gelling or use a digital thermometer. Gelling is reached at 220 degrees or 8 degrees above the boiling point of water.
  • Spoon the hot jam into prepared jars, leaving ¼ inch headspace.
  • Wipe the lip of each jar with a damp paper towel. Top thejars with a lid and lid ring.
  • Process the jars in a water bath canner for 15 minutes.Remove and let cool completely.
  • Makes about 7 (1/2 pint) jars.

CRANBERRY PINEAPPLE MANGO PRESERVES WITH CINNAMON AND GINGER



Cranberry Pineapple Mango Preserves with Cinnamon and Ginger image

Much more flavorful than traditional cranberry sauce from the addition of pineapple, mango, cinnamon, and ginger, which sweetly spice and enhance fresh cranberries. The preserves are full of chunky texture from the variety of fruits used, and can be made in just over a half hour. The preserves make a nice gift that will keep refrigerated for about one month.

1 cup water
1 1/2 cups granulated sugar
1/4 cup brown sugar (light or dark), packed
12 ounce bag fresh cranberries (about 4 cups)
1 cup pineapple, diced (I use frozen)
1 cup mango, diced large (I use frozen)
1 teaspoon+ cinnamon
3/4 teaspoon ground ginger
optional spices and flavorings, to taste (allspice, ground cloves, cardamom, pumpkin pie spice; splash of vanilla extract, rum, bourbon, etc.)

Steps:

  • In a large saucepan, combine water and sugars, and heat over medium-high heat to dissolve sugar, stirring until it's dissolved. Add the cranberries, pineapple, mango (if using frozen fruit, no need to unthaw it first, just add in the frozen pieces as is), cinnamon, ginger, optional spices and flavorings, and stir to combine. Bring mixture to a rolling boil and allow it to boil steadily for about five minutes, stirring occasionally to ensure fruit is not sticking to the bottom. Reduce the heat to medium-low and allow mixture to thicken and reduce by almost half; this will likely take about 30 minutes, depending on strength of the boil, juiciness level of the fruit, and preferred thickness for preserves. Preserves will thicken up dramatically as they cool, as well as over time in the refrigerator, so don't over reduce and I wouldn't go past about 45 minutes.
  • Pour preserves into a heat-safe vessel such as glass jars, glass measuring cup, or a ceramic bowl. Covered preserves will keep in the refrigerator for about one month; however, because it was not canned, use common sense with regard to shelf life. Canning the preserves using standard canning protocols, with sterile jars, a water bath, and processing for about ten minutes could be done, but I don't bother because the small batch size is hardly worth canning.

1 orange
31/2 cups fresh or frozen cranberries
2 cups sugar
2 cups water

Steps:

  • Zest the orange, then supreme the sections (remove the fruit from the white pith completely). Place the orange zest and sections into a food processor and process 3-4 seconds, it should remain chunky. Place the cranberry mixture, sugar and water in a saucepan. Cover the saucepan and cook on medium-low, stirring every couple minutes, for 15 minutes. Pour into *sterilized canning jars and seal as directed. Label the jars and tie ribbons around them for gift giving.
  • *Follow the directions on your canning jars for sterilization.

Steps:

  • Combine cranberries, white sugar, turbinado sugar, water, orange zest, cinnamon, ginger, cloves, allspice, and pepper in a large pot over medium heat. Simmer, stirring frequently, until sugar dissolves and cranberries pop, 10 to 12 minutes.
  • Blend cranberry jam into desired consistency using an immersion blender.

4 ounces dried candied mango, finely diced
1 lemon, zested and juiced
1 orange, zested
1 teaspoon finely grated fresh ginger
1 cup fresh orange juice
1 cinnamon stick
1 whole star anise pod
1 teaspoon garam masala
1 pinch salt
⅓ cup water
1 cup white sugar
1 (12 ounce) package fresh cranberries
2 drops hot sauce (preferably ghost pepper hot sauce), or more to taste

Steps:

  • Place diced mango into a saucepan and stir in lemon zest, orange zest, and ginger. Pour in lemon and orange juice and mix in cinnamon stick, star anise pod, garam masala, and salt. Pour in water and sugar; stir until sugar has dissolved.
  • Place saucepan over medium heat, bring just to a simmer, and reduce heat to low. Simmer until mango has softened and flavors blend, about 15 minutes.
  • Pour cranberries into sauce, raise heat to medium, and cook until cranberries pop and begin to break down, about 10 minutes. Mash any unpopped berries.
  • Turn off heat and drizzle 2 or 3 drops of ghost pepper hot sauce. Let cranberry sauce cool to room temperature and transfer to a serving bowl. Remove cinnamon stick and star anise pod before serving.

3 cups finely chopped pitted, peeled mangoes (about 3 pounds)
1 1/2 cups crushed red raspberries (about 1 1/2 pints)
2 tablespoons lemon juice
1 (1 3/4 ounce) package fruit pectin
5 1/2 cups granulated sugar

Steps:

  • Prepare home canning jars and lids according to manufacturer's instructions.
  • Combine mangoes, raspberries, lemon juice and pectin in a large saucepot. Bring to a boil over high heat, stirring occasionally. Add sugar, stirring until dissolved.
  • Return to a rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam if necessary. Ladle hot jam into hot jars, leaving 1/4-inch headspace.
