QUESADILLAS WITH CHUTNEY AND BRIE
Make good use of Thanksgiving leftovers in this updated quesadilla.

Steps:
- Preheat oven to 425 degrees. Spread one side of each tortilla with 1 tablespoon mustard. Divide the turkey over one half of each mustard-coated side; dress with cranberry chutney (about 2 tablespoons per quesadilla). Layer each with 2 Brie slices, and sprinkle with salt and pepper. Fold and press to seal edges. Brush on all sides with olive oil; transfer to two rimmed baking sheets.
- Bake, rotating the baking sheets halfway through, until cheese has melted and tortillas are golden brown, 10 to 15 minutes. Let cool for 5 minutes before slicing into wedges. Serve topped with more chutney, if desired.
OPEN-FACED TURKEY MELTS
Steps:
- Heat broiler over high, with rack in the second position about 6 inches from the flame. Line a half-sheet pan with Reynolds non-stick foil.
- In a medium bowl combine the turkey with celery, mayonnaise, cranberries and red onion, and stir until combined.
- Arrange the toasted bread on a baking sheet and divide the turkey salad evenly among slices, then top each with 1 ounce of cheese.
- Broil about 6 inches from the flame until the cheese is golden and bubbling, about 2 to 3 minutes, keeping a close eye on it to avoid burning.

- In a large skillet, saute onions in 1 tablespoon of butter until tender; remove and set aside.
- Spread barbecue sauce on four slices of bread.
- Layer each with one slice of cheese, 2 slices of Canadian bacon and turkey, pickles, onions, and top of with another slice of cheese.
- Cover with remaining slices of bread.
- In the same skillet over medium-low heat, melt remaining butter as needed.
- Cook sandwiches on both sides until golden brown and cheese is melted.
TURKEY MELT WITH CHUTNEY

Steps:
- Combine turkey, celery, scallions, chutney, and optional cilantro. Mix in enough mayonnaise to bind. Chill until ready to use.
- Preheat broiler.
- Arrange English muffin halves on foil-lined baking sheet. Top with a slice of tomato, then the turkey mix, and finally the cheese.
- Broil a few inches from heat source for 3 or 4 minutes, until bubbly. Serve.
- Note: I suggest foil on the baking sheet to make cleanup easier. Butterball suggest 8 servings from this, but I think that's a bit optimistic. It depends on your family's appetites, of course.

- Toast bread and spread slices with 1000 Island dressing.
- Place a slice of cheese on each slice of bread.
- Trim asparagus to width of turkey slices.
- Roll each asparagus spear in a turkey slice.
- Line one slice of bread with the asparagus/turkey rolls.
- Top with alfalfa sprouts& the 2nd slice of bread.
- Put sandwich on a lightly greased griddle and heat until cheese melts.
- Slice on the diagonal (just my preference).

- Mix mayonnaise, chutney, and curry powder in small bowl. Season to taste with salt and pepper.
- Spread 2 tablespoons curry-chutney mayonnaise in 2-inch-wide strip down center of 1 tortilla. Top with 1/2 cup turkey, 1/4 cup cilantro, 1 1/2 tablespoons peanuts, and 1/3 cup coleslaw mix. Fold sides of tortilla over ends of filling, then roll up burrito-style, enclosing filling completely. Repeat with remaining ingredients. Cut each turkey wrap in half on diagonal.

- For sauce, mix 1/4 cup chutney, mustard and lime juice. In a large bowl, combine parsley, green onions, salt, pepper and remaining chutney. Add turkey; mix lightly but thoroughly. - In small bowl, combine the salsa, mayo, and green onions; mix well.
- Evenly divide the turkey over 4 slices of bread, then place a slice of cheese over each.
- Spread salsa mixture evenly over the cheese, then distribute sliced jalapeno peppers over the salsa mixture; top with remaining bread.
- In a large skillet, melt 2 T butter over low heat.
- Place the sandwiches in the skillet and cook for 2-3 minutes.
- Add more butter if needed, turn the sandwiches over and cook another 2-3 minutes, or until cheese is melted and bread is golden brown.
- Serve immediately.
