CRANBERRY LEMON BARS

Cranberry Lemon Bars image

Cranberries that are quick-cooked into jam add a striking magenta color and complex tartness to these two-toned lemon bars. A thin layer of the classic lemon filling coats the cranberry mix like icing, and lemon zest boiled with the berries echoes the citrus taste of the lemony top. (Its pectin also thickens the jam.) To achieve a sturdy crust that isn't tough, melted butter is stirred into a flour blend and simply patted into the pan. That vanilla cookie base, generously salted to balance the tangy sweetness on top, comes out crisp and holds up well even as the bars keep in the refrigerator for up to five days.

Time 1h

Yield 2 dozen bars

Number Of Ingredients 14

1 (12-ounce/340-gram) bag fresh or frozen cranberries
3/4 cup/150 grams granulated sugar
2 to 3 large lemons
Nonstick cooking spray
1 1/2 cups/190 grams all-purpose flour
1/3 cup/65 grams granulated sugar
1 teaspoon fine sea salt
1 teaspoon vanilla extract
3/4 cup/170 grams unsalted butter (1 1/2 sticks), melted and cooled
1 cup/200 grams granulated sugar
1/4 cup/30 grams all-purpose flour
1/8 teaspoon fine sea salt
3 large eggs, at room temperature
Confectioners' sugar (optional)

Steps:

  • Start preparing the cranberry layer: Combine the cranberries, sugar and 3 tablespoons water in a medium saucepan. Zest 2 of the lemons directly into the saucepan; reserve the lemons. Bring to a boil over medium-high heat, stirring occasionally. Continue boiling, stirring occasionally, until the berries burst and the mixture is jammy, 7 to 9 minutes. Remove from the heat and reserve.
  • Make the crust: Heat oven to 350 degrees. Line the bottom and sides of a 9-by-13-inch baking pan with one large sheet of heavy aluminum foil, making sure there are no gaps or holes, then generously coat with cooking spray.
  • Whisk the flour, sugar and salt in a medium bowl. Whisk the vanilla into the butter, then pour over the flour mixture. Stir until the dough comes together in a mass. Press into an even layer in the prepared pan. Bake until golden brown around the edges and dry and golden on top, 17 to 20 minutes.
  • While the crust bakes, begin preparing the lemon layer: Squeeze the juice from the 2 reserved zested lemons. You should have 1/2 cup. Squeeze the juice from another lemon, if needed.
  • Whisk the sugar, flour and salt in a medium bowl. Add the eggs and whisk gently just until incorporated. Add the lemon juice and stir gently with the whisk just until smooth.
  • Let the crust cool for 5 minutes, then spread the cranberry mixture evenly over the crust. Carefully and slowly pour the lemon mixture on top to create two distinct layers.
  • Return the pan to the oven and bake until the filling is set, 18 to 22 minutes. Cool completely in the pan on a wire rack, then refrigerate until cold and firm, at least 2 hours. Using the foil, slide the bars out of the pan and onto a cutting board. Cut into 24 squares, wiping your knife between cuts for clean slices. If desired, sift confectioners' sugar over the tops just before serving.

CRANBERRY JAM BARS

Time 2h45m

Yield 18

Number Of Ingredients 12

1 (12 ounce) package fresh or frozen cranberries (not thawed if frozen)
⅔ cup white sugar
½ cup water
1 ½ cups all-purpose flour
1 cup rolled oats (not quick-cooking)
⅔ cup chopped pecans or walnuts
¾ cup packed light brown sugar
¾ teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon nutmeg
½ cup unsalted butter at room temperature - cut into 1-tablespoon chunks

  • Preheat oven to 350 degrees F. Line bottom and sides of an 8-inch square baking pan with foil and spray with cooking spray.
  • Pulse flour, rolled oats, pecans, brown sugar, baking powder, salt, cinnamon, and nutmeg in a food processor 3 times to mix. Add butter and pulse until mixture begins to clump. Firmly press half of dough evenly in bottom of prepared pan. Spread with jam, then sprinkle on remaining dough and gently press into an even layer.
  • Bake until golden brown, 45 to 50 minutes. Cool completely in pan on a rack. Lift foil to remove pastry from pan and cut into bars.

CRANBERRY CINNAMON JAM BARS

Cranberry Cinnamon Jam Bars image

In these easy Cranberry Cinnamon Jam Bars the cinnamon streusel doubles as both the top and bottom crusts with a gooey, spiced cranberry filling in between.

Provided by Lindsey

Categories     Dessert

Time 50m

Number Of Ingredients 9

2 cups butter (salted, room temperature)
2 cup sugar
2 egg yolks
1 tablespoons vanilla extract
4 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon salt
2 cups cranberry jam (or Christmas jam)
Candied ginger (minced (optional))

Steps:

  • Preheat the oven to 325°. Butter a 9x13 baking dish or a quarter sheet pan.
  • In a large bowl combine butter and sugars, mix on medium speed until light and fluffy. Add the egg yolks one at a time and beat to combine after each addition.
  • Add the vanilla and beat until combined.
  • Add the flour to the butter mixture and mix low speed until a soft dough forms. Do not over mix.
  • Press approximately ½ of the dough into the prepared baking pan, and bake in preheated oven for 10 minutes. It won't look done, because it's not... Refrigerate the remaining 2/3 of the dough.
  • Pour the cranberry jam over the crust and spread it out evenly with an offset spatula. Crumble the remaining dough over top.
  • Bake until the filling is bubbly and the topping is lightly golden, about 20-30 minutes. Sprinkle candied ginger over the top.
  • Let cool before cutting into squares. (I know, I know...go ahead and cut a corner out for quality control...the things we must do as bakers...)

  • To make the chia seed jam, combine all ingredients in a small saucepan and bring to a gentle boil while stirring. Once it reaches a very gentle boil, turn the heat down. Continue stirring, while starting to mash the cranberries, for 6-10 minutes until it’s thick and has a jam-like consistency. Set aside.
  • Mix the oats, flour, baking powder, salt and sugar together in a large mixing bowl until well combined.
  • Add the melted coconut oil, lemon juice and nut milk (start with 3 tbsp). Mix into a crumbly dough, adding more almond milk as needed until you can press the dough together in your fingers. It should be crumbly but moist enough to start sticking together. It should not be overly wet or as moist as cookie dough or cake batter.

  • Note: If you are using 1.5 cups of leftover cranberry sauce, skip this step. If you don't have leftover cranberry sauce, heat 1 ½ cups of cranberries (fresh or frozen), 1/2 cup pure maple syrup, ¼ cup of water, a pinch of sea salt and cinnamon cinnamon a saucepan and bring it to a full boil.
  • Once boiling, mash the cranberries with a fork until the mixture resembles more of a sauce or jam. Continue cooking until the mixture is very thick, about 5 to 8 minutes. Set mixture aside until ready to use (note: the cranberry filling will thicken as it sits). If need be, you can add 2 teaspoons of tapioca flour to the sauce to make it very thick and gooey. You want it to be as thick or thicker than jam.
  • Stir all of the ingredients for the crust and topping together in a bowl until well-combined - it will form a thick, sticky dough. Measure out ½ cup of the almond flour mixture and set it aside to use later for the crumb topping.
