MONSTER EYE COOKIES
Monster Eye Cookies are soft vanilla cookies made perfectly scary with candy eyeballs and fun colors. Easy to make and super tasty, these are the perfect Halloween cookie to celebrate the season!

Steps:
- Preheat oven to 350 degrees and line a cookie sheet with parchment paper
- Start by creaming together the sugar and butter in a large mixing bowl. Add in the egg and egg yolks one at a time and beat into the mixture before adding the next one.
- Mix in the vanilla and salt
- In a separate bowl, mix together the flour, baking soda, cream of tartar and then slowly incorporate into your sugar batter.
- Chill your cookie dough in the refrigerator for 30 minutes. Once chilled, separate batter into three or four batches and add in a dollop of food coloring to each batch.. beat until well mixed.
- Spoon or scoop into 1 inch balls and place them on your cookie sheet - do no flatten!
- Bake for 10-12 minutes. Remove from oven and immediately gently press candy eyeballs onto the cookies while they are still warm .. let cookies sit on the cookie sheet for 1 minute before moving the cookies to a wire rack
- Let cool and enjoy!!

MONSTER EYE COOKIES
Adorable, simple, and spooky, these Monster Eye Cookies are a fun way to ring in the Halloween season. All you need is gel coloring, a white cake mix, candy eyes, and a few standard baking ingredients!

- Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper and set it aside.
- With an electric mixer, beat the butter, vanilla, egg, and cream cheese. Mix in the white cake mix.
- Divide the batter into the number of small bowls equal to the number of different colors that you want. Add food coloring to each of the bowls. Mix each color well.
- Cover and chill each bowl of batter for 20-30 minutes.
- Using a small cookie scoop, make the cookie balls.
- Roll each cookie ball into powdered sugar. As each cookie is rolled, place the cookie ball on the lined cookie sheet. Use your clean hand and press the cookie dough ball down slightly to flatten.
- Bake at 350 degrees for 10-12 minutes.
- Remove from the oven. While the cookies are still warm, place the candy eyeballs in the center of the cookie.

MONSTER EYE COOKIES
I found this cute recipe on lilluna.com and just knew I had to make them for my husband to take to work for Halloween! These are easy, tasty and oh-so-cute!! I absolutely love Halloween!

- 1. Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.
- 2. In a mixing bowl, beat butter, vanilla, cream cheese, and egg until well blended and fluffy. Add food coloring. Blend. Stir in cake mix until well blended.
- 3. Roll into 1 inch balls (I used my cookie scooper) and roll in powdered sugar before placing on prepared cookie sheet. (I liked them better when I flattened the dough lightly with my palm otherwise the cookies were really poofy and round instead of flat.)
- 4. Bake in preheated oven for about 10 minutes. remove from oven and immediately lightly press a candy eye into center. Allow to cool completely before removing from pan.
- 5. Enjoy with your favorite "ghoul" ;)
