RUM & RAISIN CARAMEL SAUCE
Rum & Raisin Caramel Sauce is boozy, soft & sumptuous. It's a great addition to your summer ice cream eating repertoire. Go for classic vanilla or pair with chocolate or caramel ices instead.

- Put the sugar into a heavy-based saucepan and set over a medium heat to allow the sugar to gradually melt. As it melts you can gently swirl the pan a couple of times to ensure the caramel cooks evenly, but do not stir it
- Once the sugar has melted, the caramel will begin to darken. Continue to let it cook until it reaches a lovely deep amber colour (but keep a close eye on the caramel as it can burn easily)
- Add the butter and pour in the cream, taking care as it can bubble up and is extremely hot. Mix with a small handheld whisk until everything is fully incorporated
- Put the pan back on the heat and cook, stirring constantly, for a further 2 minutes, until all lumps have dissolved
- Take off the heat and stir in the salt and vanilla extract
- Mince the raisins finely and stir into the caramel along with the rum (vary the amount of rum depending on your personal preferences - 4 tsp will give a moderate alcoholic taste. Try 3 tsp for a milder flavour or 5-6 tsp for a stronger kick
- Allow to cool in the pan for 20 minutes, then carefully pour the caramel into a jar
- Let cool completely, then seal and store in the fridge for up to 3 weeks
- Bring the jar out of the fridge several hours prior to serving to allow it to soften (do not be tempted to use the microwave on it). Give it a good stir and serve

- Combine the sugar and hot water in a heavy saucepan, and cook over high heat until the sugar has dissolved, about 1 minute. Continue to cook, swirling the pan occasionally but never stirring the sugar mixture, until the mixture thickens and turns a deep amber color, 5 to 8 minutes. Remove the pan from the heat and immediately add the heavy cream (be careful -- the mixture will splatter). Return the pan to the heat and reduce the heat to medium. Cook until the sauce is thick and creamy, stirring occasionally to help incorporate the cream, about 5 minutes.
- Remove the pan from the heat and stir in the rum, vanilla, and butter. Serve warm.
RUM RAISIN SAUCE
Here's a tart fruity rum raisin sauce from Elizabeth Halls in Courtenay, British Columbia that can make an ordinary ham steak or slice something to celebrate!

- In a large saucepan, combine the raisins, 4 tablespoons water, orange juice and pineapple. Bring to a boil. Combine cornstarch and remaining water until smooth; gradually stir into raisin mixture. Cook and stir for 2 minutes or until thickened. Remove from the heat; stir in extract if desired. , Cut the ham steak into four pieces. In a large skillet coated with cooking spray, cook ham over medium heat for 1-2 minutes on each side or until browned. Serve with raisin sauce.

I make this sauce (its VERY rich) & recipe #56294 (Custard Sauce) every year and pour a little of each over a serving of my Christmas Pudding. If there's any left, its great over vanilla or rum & raisin ice cream.

CARAMEL RUM RAISIN SAUCE RECIPE

- In a small saucepan, bring the rum and raisins to a boil. Remove from the heat and let soak for 20 minutes or more. In a heavy medium saucepan, combine the sugar and water. Cook over moderate heat until a deep amber caramel forms. An alternative is to head the sugar and water mixture to the thread stage or 230 degrees on a candy thermometer. Remove the saucepan from the stove and mix in the butter until it is melted. Slowly add the heavy cream and stir well. Add the raisin/rum mixture and stir. This sauce is delicious over ham or as a dessert topping over ice cream. The sauce can be refrigerated for one week. Reheat gently, stirring occasionally.

- First, prepare the raisins. Put the rum in a small saucepan and bring to the boil. Stir in the raisins, then remove from the heat. Set aside to cool and plump up, at least 1 hr so they absorb almost all the rum. Tip into a bowl and mix with the dulce de leche and a large pinch of sea salt flakes. Divide the raisin caramel sauce between four dessert glasses, bowls or cups, and chill in the freezer while you make the mousse.
- Put the cream in a small saucepan and bring to the boil. Remove from the heat, add the chocolate and stir to melt. Put the egg yolks and sugar in a bowl and beat using an electric whisk for 3 mins until the mixture is light, fluffy and holding its shape. Gradually pour in the chocolate cream, whisking continuously until fully combined. Spoon the mousse over the raisin caramel, then chill for at least 4 hrs. Will keep chilled for up to two days. Serve cold with an extra sprinkling of sea salt.

- Combine sugar and cornstarch in a heavy saucepan.
- Stir in cream, water and corn syrup.
- Cook and stir over medium heat until thickened and bubbly (mixture may looked curdled. Not to worry).
- Cook and stir for 2 minutes more.
- Remove from heat and stir in butter, vanilla and rum (have a shot for yourself).
- Let mixture stand at room temperature until cooled.
- Store in refrigerator for up to 2 months.

- Combine first 4 ingredients in heavy medium saucepan. Stir over medium heat until sugar dissolves. Increase heat; boil without stirring until syrup turns deep amber color, occasionally swirling pan and brushing down sides with wet pastry brush, about 10 minutes (time will vary depending on size of pan). Remove from heat. Pour in cream (mixture will bubble vigorously); stir to blend. Mix in butter, then rum, cinnamon, and vanilla. Cool sauce completely. Divide among ten 4-ounce jars. Seal and refrigerate. (Can be made 2 weeks ahead.)
