Pork loin chops get pan seared then they're baked to tender, juicy perfection. The cranberry glaze includes honey, fresh ginger, orange juice and a chile pepper.

1 cup water
3/4 cup brown sugar
2 cups fresh cranberries
2 tbsp orange juice (frozen or 1/4 cup juice)
1 tbsp fresh ginger minced
1 tbsp apple cider vinegar
1 tbsp honey
1 jalapeño or serrano pepper
4 - 8 oz pork chops bone-in (3/4-inch to 1-inch thick (2 lbs total))
salt
Freshly ground black pepper
2 tbsp unsalted butter

Steps:

  • Preheat oven to 400°F. Season pork chops with kosher salt and pepper.
  • Combine the water, brown sugar, cranberries, chile pepper, orange juice, ginger, apple cider vinegar and honey in a sauce pan. Cook on medium heat for 15 minutes until berries have started to split open and sauce starts to thicken.
  • Remove and discard the chile pepper. Transfer mixture to a blender and purée. Set aside, covered and cook pork chops.
  • Melt butter in a large oven proof skillet (like cast iron) over medium-high heat. Add the pork chops and sear until golden brown on both sides, about 3-4 minutes total. Place pan in oven and roast pork chops until completely cooked through, about 8-10 minutes. (See Note 1)
  • When done remove from oven and pour glaze over pork chops, turning to coat, heat through and serve immediately.

  • Sprinkle pork chops with salt and pepper. Heat a large skillet over medium heat. Add pork chops; cook 4-6 minutes on each side or until a thermometer reads 145°. 4 pork loin, centre chops
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons vegetable oil
2 shallots, finely chopped
2 garlic cloves, minced
1/3 cup chicken broth
1/3 cup dried cranberries
1/4 cup apple jelly
3 tablespoons cider vinegar
1 teaspoon fresh rosemary, chopped

Steps:

  • Sprinkle the pork chops with half of the salt and pepper.
  • In a large skillet, heat 1 tablespoon of the oil over medium-high heat.
  • Brown the pork chops, turning once, until golden.
  • Transfer to a plate and drain the fat from the pan.
  • Add the remaining oil to the pan and fry the shallots, garlic and remaining salt and pepper over medium heat, stirring occasionally, until softened, about 2 minutes.
  • Add the chicken broth, dried cranberries, apply jelly, vinegar and rosemary.
  • Stir until the jelly melts and cranberries soften, about 4 minutes.
  • Return the pork and any juices to the pan, turning to coat.
  • Reduce the heat, cover and simmer, turning once, until the juices run clear when the pork is pierced and just a hint of pink remains inside, about 5 minutes.
  • Transfer the pork to a platter and keep warm.
  • Boil the sauce until syrupy, about 1 minute.
  • Pour over the pork.

1/3 cup red currant jelly
1 tablespoon dijon mustard
1/4 cup dried cranberries
1 pork tenderloin (about 1 pound)
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 425 degrees F and line a rimmed baking sheet with foil. Combine the cranberry juice, jelly and mustard in a medium skillet over medium-high heat; cook, stirring occasionally, until thick enough to coat the back of a spoon, about 15 minutes. Remove 3 tablespoons of the glaze and set aside for brushing. Stir the cranberries into the remaining glaze; set aside for drizzling.
  • Meanwhile, rub the pork with the olive oil, 1/2 teaspoon salt and a few grinds of pepper. Place on the prepared baking sheet and roast, turning once, 15 minutes. Remove the pork from the oven and brush all over with the reserved 3 tablespoons glaze. 2 quarts water
1 tablespoon juniper berries
1 tablespoon freshly chopped sage leaves
1 teaspoon red pepper flakes
4 or 5 cups water
2 cups ice
4 (1 1/2-inch thick) boneless pork loin chops
2 tablespoons olive oil
Red Wine Cranberry Glaze, recipe follows
1 cup dried cranberries
3 cups dry red wine
2 oranges, zested and juiced
1 cup sugar

Steps:

  • In a medium saucepan over medium heat, bring the salt, sugar and 2 cups water to a boil and simmer until salt and sugar dissolve. Remove pan from heat. Add juniper, sage and red pepper flakes. Let steep 5 minutes. Pour 4 to 5 cups water and 2 cups ice into the brine. When brine is chilled, submerge chops into mixture for at least 6 hours and up to overnight, refrigerated. When ready to cook, preheat oven to 350 degrees F. Remove pork from liquid and pat dry. Heat oil in a medium saute pan over medium heat. Cook pork until nicely caramelized about 6 minutes per side. Remove to oven to cook through completely, about 10 minutes. Let rest 5 minutes before slicing.
  • Serve with Red Wine Cranberry Glaze.
  • Combine all ingredients into a medium saucepan over medium heat. Bring to a simmer. Reduce heat to low and reduce liquid by half.
  • Yield: 2 cups

1 teaspoon lemon juice
1/2 teaspoon ground nutmeg

1 (12 ounce) bottle stout beer
1/2 onion, chopped
1/4 cup honey mustard
3 garlic cloves, minced
1 teaspoon caraway seed

Steps:

  • Trim fat from chops. Place chops in a plastic bag set in a shallow dish. For the marinade, stir together the stout, onion, honey mustard, garlic, and caraway seed; pour over chops. Close bag. Marinate chops in the refrigerator for at least 6 hours or up to 24 hours, turning the bag occasionally.
  • Remove chops; pour marinade into a small saucepan and bring to boiling. Reduce heat; simmer, uncovered, about 15 minutes or until marinade is reduced by about half. Sprinkle chops with salt and pepper. Arrange preheated coals around a drip pan in a grill with a cover. Test for medium heat above the pan.
