~ MY SAUCY CRANBERRY - CHILI SAUSAGE BITES ~
This is my personal version of this sweet & tangy appetizer. Good enough to be served as a side, such as I did tonight. They went well with crispy cheesy potato stuffed Pierogies. A Pennsylvania staple. I hope you try my version sometime. If you don't like the heat of the pepper flakes, just leave them out. They'll still be delicious!

Steps:
- Add oil to a large skillet over medium heat. Once hot add the sausages, garlic and onion. Cook and stir until onion is tender and sausages are caramelizing. About 5 minutes. Remove from skillet & drain.
- In the same skillet. Add the cranberry sauce, chili sauce, brown sugar, Worcestershire sauce, cayenne, paprika, chili powder, garlic powder and heat over medium. Stir well to blend and keep stirring as the cranberry sauce melts and sugar dissolves. Simmer about 5 minutes.
- Add the sausage back to the pan and stir to coat with sauce. Add the pepper flakes now if using. Simmer for about 20 minutes or until desired thickness of the sauce.
- Serve as an appetizer or as a side for dinner. These are great for parties. Keep warm in a crock pot. Serve with tooth picks if serving as an appetizer.
CRANBERRY SAUCE WITH CHILES
Heat is an integral aspect of Southwestern cooking, so it's no surprise that local chiles of all kinds accent the flavor of Thanksgiving. Cooks put them in everything from Hatch turkey rubs to chipotle mashed potatoes to chiltepin cranberry sauce, which uses the small, round, fiery hot chiles that are native to Arizona and northern Mexico. You can make this sauce a day ahead and chill it; if it's too stiff for your tastes when you remove it from the fridge, add a little water and sugar, reheat until simmering and then cool once more. Steps:
- Set aside the zest of 1 lime (about 1 teaspoon) for garnish. In a large saucepan, combine all the remaining ingredients with 1/4 cup water. Bring to a simmer over medium heat, then reduce heat to low and simmer, stirring often, until thick, 10 to 15 minutes. Remove from heat.
- Transfer to a serving dish and allow to cool. (Sauce will continue to thicken.) Garnish with the reserved lime zest.

CRANBERRY CHILI SMOKED SAUSAGE BITES
This recipe was personally prepared for the September 2015 meeting with the Curious Cuisiners by Mary Sreves. Hillshire Farm Beef is my sausage of choice - I put everything in a casserole dish, cover with foil and bake in the oven.

Steps:
- Preheat oven to 450 degrees or grill to medium-high.
- Combine cranberry sauce, chili sauce, flour and mustard. Add sausage, onion and green pepper.
- Open foil bag, spoon in mixture into foil bag. To seal: double fold open end of foil bag. Place foil bag into a one inch deep pan.
- Leave foil bag in the supporting pan and place in oven or slide onto the preheated grill. Bake 30 to 35 minutes in pan or Grill for 12 to 15 minutes in covered grill.
- Use oven mitts to open foil bag with a sharp knife. Carefully fold back the foil bag to allow steam to escape. Stir before serving.
CHILLI CRANBERRY SAUCE

Steps:
- Gently heat sugar and wine in a saucepan. Once sugar has dissolved, bring to the boil.
- Tip in the chilli and cranberries, return to the boil, then turn the heat down and simmer for about 10 mins until the berries have popped but not completely collapsed. Take off the heat. The sauce will continue to cook with the heat from the pan, then thicken as it cools.
