My mom found this recipe years ago, and now it's become a cheap and easy weeknight favorite at my house.

1 tablespoon butter
1 small onion, chopped
3 pounds chicken thighs
⅔ cup ketchup
⅓ cup brown sugar
1 tablespoon apple cider vinegar
1 teaspoon dry mustard powder
1 (8 ounce) can whole berry cranberry sauce

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Place the butter and onion in a 9x13 inch baking dish, and bake in the preheated oven, stirring occasionally, until the onion is translucent, about 15 minutes. Remove the dish from the oven, push the onion over to one end, and place the chicken thighs in the dish in a single layer. Return to the oven and bake for about 25 minutes.
  • Stir together the ketchup, brown sugar, vinegar, mustard powder, and cranberry sauce in a bowl. Remove the chicken from the oven, and scoop the cooked onions into the cranberry mixture. Spoon the mixture over the chicken thighs, and return to the oven.
  • Bake until the cranberry mixture is slightly caramelized and the chicken is done, about 20 more minutes. An instant-read thermometer inserted near the center should read 165 degrees F (74 degrees C).

1 (35 g) package onion soup mix
1 (454 g) can cranberries (whole or jelly)
1 (250 ml) bottle Russian salad dressing (regular or light)

Steps:

  • Make sure you grease your dish first.
  • Mix onion soup cranberries and Russian dressing in greased dish and then add and mix the chicken you can cut the chicken in strips or chunks if you want.
  • Once chicken is completely covered arrange chicken in sauce so it is not over lapping and bake in pre heated oven@ 350 degrees for 1 hour un covered.
  • Serve over rice.

1 (16 ounce) can jellied cranberry sauce
1 cup French dressing

Steps:

  • Place the chicken breasts in a glass or non-reactive baking dish.
  • Stir the onion soup mix, cranberry sauce, and French dressing together in a bowl until well blended. Pour over the chicken breasts. Cover the baking dish with plastic wrap, and refrigerate at least 8 hours.

1 Tablespoon minced garlic
4 sprigs fresh rosemary

  • Preheat oven to 375 degrees.

4 tablespoons brown sugar
1 teaspoon cayenne
1 teaspoon cinnamon
2 teaspoon kosher salt
1 teaspoon black pepper
4 tablespoons of butter
6 chicken thighs about 2-2.5 pounds
¼ cup of balsamic vinegar
1 tablespoon maple syrup
12 oz fresh cranberries 1 bag
2-3 sprigs rosemary
kosher salt to taste

Steps:

  • Pre-heat oven to 425 degrees.
  • In a small bowl, stir together all the spiced brown sugar rub ingredients.
  • Pat the chicken dry with a paper towel, place them on a cutting board and rub them all over with the spiced brown sugar mixture.
  • Heat butter in a large skillet over medium-high heat, until foaming. Add chicken, skin side down, and cook without moving it until well browned and crisp, about 8 minutes total, lowering heat if it starts to smoke excessively. Flip chicken and brown lightly on second side, about 3 minutes. Transfer chicken to a large plate and set aside.
  • Stir in balsamic vinegar and maple syrup until combined, then turn the heat off.
  • Nestle chicken back into pan, add the cranberries, pushing them aside so that as much chicken skin as possible is exposed. Add the rosemary sprigs. Transfer pan to oven and roast, uncovered, for about 25 minutes, until a thermometer reaches 165 when inserted.
  • Remove from the oven, taste sauce and season with salt and pepper.
  • Serve with the cranberries and sauce drizzled over the chicken thighs.

1/4 cup balsamic vinegar
1/3 cup red wine (or substitute low-sodium chicken broth)

Steps:

  • Preheat the oven to 400.
  • Heat olive oil in a large oven-safe skillet over medium-high heat.
  • Add the onion and sauté until tender, about 5 minutes.
  • Season chicken on both sides with rosemary, salt and pepper. Turn heat up to medium-high, move the onions to the side and add the chicken to the skillet. Sear over medium-high heat for 3-4 minutes per side, until browned.

  • Transfer the skillet to the oven and cook at 400 for 10-15 minutes, until the chicken breasts are cooked through. (I recommend using a meat thermometer.) Alternatively, you can continue cooking the chicken stovetop. Cover the skillet and reduce heat to medium low and cook for 10-15 minutes, until the chicken is cooked through.
  • Carefully remove the skillet from the oven. Add the butter to the skillet, if using, and stir into the sauce until melted.
  • Serve the chicken with onions and extra sauce drizzled on top.

  • Melt butter in a large wide frying pan set over medium-high heat. Add the chicken and cook until golden, from 3 to 4 minutes a side. Reduce temperature if it is turning dark brown.
  • Pour the broth over the chicken and reduce the heat to medium-low. Cover and cook 4 minutes for breasts and 3 minutes for thighs. Add the cranberry sauce to the broth. 15 ounces whole berry cranberry sauce (1 can)

3 stale kaiser rolls or 3 stale bread (for stuffing or you can use stove top or similar)
3/4 cup butter
1/4 cup milk
1/4 cup water
oregano
basil

1 (15 ounce) can whole berry cranberry sauce
2 fluid ounces Grand Marnier (orange flavored liquer you can substitute triple sec if necessary but you will need about 3 oz)

  • prepare stuffing using the stale bread or rolls,oregano,basil, and 1/2 cup of butter and milk by mixing together to a moist consistency.
  • seperate stuffing into 4 portions on a greased baking sheet and top with a chicken breast.
