There are quite a few recipes for Cranberry Chicken, but this one is a little different. I love this chicken! I cook on low in crock pot for at least 6 hours, the yummmy scent fills the house. From Recipetips.com

10 pieces chicken breasts (skinless)
15 ounces whole berry cranberry sauce (1 can)
3/4 ounce dry onion soup mix (1 envelope)
8 ounces Catalina dressing (fat free)
fresh rosemary, a few needles from the sprig (optional)
1/4 cup dried cranberries (optional)

Steps:

  • Preheat oven to 350°F
  • Mix onion soup, whole cranberry relish and Catalina salad dressing together in a bowl.
  • Place chicken breasts in the bottom of the baking dish and pour the cranberry mixture over the chicken. Sprinkle a little fresh rosemary and dried cranberries over the chicken, if desired.
  • Cover the dish and bake for 45 minutes. Remove the cover and bake an additional 15-20 minutes. Serve.

This cranberry chicken is amazing! It really is. I especially love how easy it is to throw together. You can prepare the chicken for baking in less than 5 minutes.

4 boneless (skinless chicken breasts, cut in half)
1 can cranberry sauce (whole berry )
1 packet dry onion soup mix
1 cup pecans (chopped )
1 cup craisins
1 bottle Catalina dressing

Steps:

  • Place chicken in baking pan. Generously spread cranberry sauce over the chicken.
  • Sprinkle onion soup mix, pecans, and craisins over the chicken.
  • Pour catalina dressing over top.
  • Bake lightly covered with foil at 350 for 45 minutes. Uncover and bake for 15 more minutes.
  • Serve over rice.
  • Tip: Spoon extra sauce over the chicken and rice when serving.

This is similar to other recipes on the 'Zaar, but has a higher chicken to sauce ratio, and many more servings. I find the ratio in this recipe to be just right. This is also a very easy recipe to make: just stir, dump, and bake.

1 (16 ounce) can cranberry sauce (whole berry or jelly)
1 (8 ounce) bottle Russian salad dressing
1 (1 ounce) packet onion soup mix, I used Copycat Lipton's Onion Soup Mix
5 lbs chicken, bone in preferred

Steps:

  • Preheat oven to 350 degrees F.
  • Mix first 3 ingredients in a small bowl.
  • Place chicken in two 9"x13" baking dishes - you might need to squish a little.
  • Pour sauce mix over chicken.
  • Bake for 1 hour or until chicken is cooked (juices run clear, reaches 180 degrees internally).

1 tablespoon low-sodium beef bouillon cube

Steps:

  • Place onion in slow cooker, then arrange thighs over onion.
  • Combine remaining ingredients together and whisk well; spoon over chicken, making sure to get some on every piece.
  • Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours.

1 1/4 cups frozen cranberry juice concentrate, thawed
1 cup canned jellied cranberry sauce
10 tablespoons fresh lime juice
6 tablespoons Grand Marnier
7 cups ice cubes
cranberries (to garnish)

Steps:

  • Make the Margarita Base: Combine all ingredients (except ice) and blend in blender until smooth. Transfer to a large glass measuring cup. Can be made ahead. Store in refrigerator.
  • To mix the final drink: Pour half of the margarita base into blender. Add 3 1/2 cups ice cubes. Blend until mixture is slushy; pour into salt-rimmer margarita glasses. Garnish with cranberries. Repeat with remaining margarita base and remaining ice.
