- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, salt and baking soda; add to the creamed mixture. Stir in the oats, raisins, cranberries and orange zest. Stir in baking chips. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 375° until the edges are lightly browned, 10-12 minutes. Cool on wire racks.

- Preheat oven to 375°F.
- Mix flour, baking soda and salt in small bowl.
- Beat margarine in large bowl with electric mixer on medium speed to soften.
- Gradually add sugars, beating until light and fluffy.
- Beat in egg and vanilla.
- Gradually add flour mixture, beating well after each addition.
- Stir in cereal, oats and cranberries.
- Drop by rounded tablespoonfuls onto ungreased cookie sheets.
- Bake 8 minutes or until lightly browned.
- Cooled 1 minute; remove from cookie sheets.
- Cool completely on wire racks.

CRANBERRY BISCOTTI
Steps:
- Preheat oven to 350°. In a large bowl, beat eggs, sugar and vanilla until well-blended. In another bowl, whisk together flour, baking soda, baking powder and salt; gradually stir into egg mixture. Stir in ground almonds and cranberries (mixture will be stiff)., Divide dough in half. Using lightly floured hands, shape each portion into a 9x3-in. rectangle on a parchment-lined baking sheet. Bake until lightly browned, about 25 minutes., Cool on pans on wire racks until firm. Reduce oven setting to 325°. Transfer baked rectangles to a cutting board. Using a serrated knife, cut diagonally into 1/2-in. slices. Place on baking sheets, cut side down., Bake until lightly browned, 8-10 minutes per side. Remove from pans to wire racks; cool completely. Store in an airtight container.

Great drop cookie and very easy to make. I got this from Better Homes & Gardens May 2010 issue; a prize winning recipe. I used the Post Cereal.

- 1. Preheat oven to 350 degrees F. In a small bowl combine flour, baking powder, cinnamon, and salt; set aside.
- 2. In large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Beat in brown sugar and granulated sugar until well combined, scraping sides of bowl occasionally. Beat in eggs and vanilla until combined. Gradually beat in flour mixture until well combined. Stir in cereal (dough will be thick and chunky).

OATMEAL CRANBERRY COOKIES

- Preheat oven to 350 degrees. Cream butter and sugars until fluffy. Add eggs and vanilla. Combine dry ingredients. Add to butter mixture and stir until well blended. Add dried cranberries. Drop by teaspoonful onto parchment covered baking sheet. Bake about 10 to 12 minutes, or until lightly golden. Cool.
CRANBERRY CEREAL COOKIES
The dough gets really stiff in the last step, but these are chewy and delicious. The prep time and yield are guesstimates. I normally use a whole wheat cereal with strawberry bits.

- Preheat oven to 350°F.
- in large bowl, with mixer at medium speed, beat butter and the sugars until light and fluffy. Beat in eggs and vanilla until well blended.
- Combine flour, baking soda, and salt in a separate bowl, and add flour mixture to liquid ingredient mixture until well blended. When mixture becomes too stiff for mixer, use a wooden spoon.
- In good processor, coarsely chop cranberries; set aside 1 tablespoon chopped cranberries in small bowl.
- With wooden spoon, stir remaining cranberries and the cereal into the cookie dough.
- Drop by tablespoonfuls onto ungreased cookie sheet (I line the sheet with parchment paper), 2 inches apart. Bake 12 to 14 minutes, or until firm and lightly browned. Let cool on cookie sheet for about 1 minute, then transfer cookies to rack to cool.
- Add powdered sugar to the chopped cranberries in small bowl. Stir enough lemon juice into cranberry mixture to make a spreadable consistency. Spoon about 1/2 teaspoon icing onto each cookie and let icing dry. Store cookies between parchment paper in airtight container.

WHITE CHOCOLATE CRANBERRY COOKIES
Steps:
- Preheat the oven to 350 degrees F. Line 2 baking sheet with parchment paper.
- With an electric mixer, cream the butter and both sugars together until smooth. Add the vanilla and egg, mixing well. Sift together the flour and baking soda. Spoon the flour mixture gradually into the creamed sugar mixture. Stir in the cranberries, white chocolate chips and macadamia nuts. Drop by heaping spoonfuls, about 2 tablespoons, onto the prepared baking sheets, 2 inches apart. Bake one sheet at a time until lightly golden on top and the edges are set, 12 to 15 minutes. Cool on the sheet about 5 minutes, and then transfer to a wire rack to cool completely. Store in an airtight container for up to 2 weeks.

- Heat oven to 180C/160C fan/gas 4. Line the base of a 20cm square tin with baking parchment.
- In a large bowl, mix together the flour, oats, sugar and cranberries. Make a well in the centre and add the butter, golden syrup, egg and vanilla extract. Stir well until evenly damp.
- Tip into the tin and spread out evenly. Sprinkle with almonds and bake for 20-25 mins until lightly golden. Cool in the tin for 10 mins, then cut into 6 one way and 2 the other to make 12 bars. Dust with icing sugar.

CEREAL COOKIES
This recipe was passed down from my Great Grandma Crawford. It is a simple cookie that goes great with coffee or hot chocolate on a cold winter's day. I've baked them with both butter or Crisco. The butter version is a flatter cookie, similar to the ones my Grandma made. Enjoy these cookies, they are a real treat from my childhood.

- Mix brown sugar and white sugar in the mixer.
- Add butter, beaten eggs, and vanilla. Mix well.
- Mix four,baking soda, baking powder, and salt in a separate bowl. Add to sugar mixture, mix well.
- Add oatmeal, crushed cornflakes, Rice Crispy cereal, and coconut. (When I do this in my mixer the batter is very thick.).
- Spoon on a cookie sheet and flatten a little with a fork or spoon.
