CRANBERRY JELLO SALAD
A beautiful jello salad for any occasion handed down from my mother. It is best if you have a mold that has an opening at the top and the bottom similar to one that is sold by tupperware. When releasing the jello salad onto your serving platter, remove the lid from the larger end of the mold and center it onto the plate. Then remove the smaller lid and let it sit. It will fall onto the plate by itself and turn out perfectly. Prepare it the night before your event and unmold it no more that 1 hour before eating.

Steps:
- Dissolve Cranberry Rasberry jello in 3/4 cup boiling water.
- Combine with cranberry sauce, walnuts and pineapple.
- Refrigerate for 1 hour (take sour cream out of refrigerator now).
- Stir in sour cream until color is consistent.
- Pour into mold.
- Refrigerate over night.
- Unmold onto a plate.

- In mixing bowl, combing jello and boiling water; stir until dissolved. Add cranberry sauce to hot mixture; stir until melted. Allow to cool slightly . Transfer jello mixture to desired dish (mold, rectanglar pyrex, etc.) Add pineapple, celery and nuts over top. Place in refridgerator until set. YUM!

- In a large bowl, mix gelatin and sugar; add boiling water and stir until gelatin is completely dissolved.
- Add juice; chill in refrigerator until mixture has consistency of unbeaten egg whites.
- Fold in apple, cranberries, celery, and walnuts.
- Pour into a 8-inch square pan; cover with plastic wrap and chill in refrigerator until firm.
- To serve, cut into squares.

- Dissolve Jello in boiling water. Drain crushed pineapple, reserving juice in one bowl and fruit in another bowl.
- Mix together jello, cranberry sauce, and pineapple juice until smooth; refrigerate until half set. Stir in mandarin oranges, pineapple, and pecans.
- Pour into decorative mold and refrigerate.
FRESH CRANBERRY JELLO SALAD
The women in my family are addicted to this mandatory holiday dish. It has cranberry tartness combined with the sweetness of grapes and mandarin oranges, all encompassed in the comfort of jello. It comes from the "It's About Thyme" cookbook by Marge Clark, who by her recipes must be a special lady.

Steps:
- Cook cranberries in the 4 cups water to a boil.
- Add soda and stir and enjoy watching it bubble up.
- Simmer 10 minutes.
- Stir in sugar, jello, and marshmallows.
- Stir until melted.
- Let mixture cool.
- Add apples, nuts, pineapple, oranges, and grapes.
- Pour into one 9" x 13" pan and one 8" x 8" pan.
- Chill until firm.
