MY MOM'S SWISS STEAK
This is so easy and all done in one pot! It is delicious and everyone including kids will love it! This recipe is tried and true, impossible to fail! It can also be doubled or tripled without problems, but lower the heat on the second and third batch when browning, as not to burn.

Steps:
- Heat oil in a large Dutch oven over medium-high heat. Place steaks into the pot one at a time, quickly browning on each side. Remove steaks, and set aside. Add the onion to the pot, and cook over medium-low heat until wilted, about 3 minutes. Return the steaks to the pot, and add the tomatoes, mushrooms, celery and green pepper. Season with oregano and add the bay leaf.
- Cover the pot, and cook over medium-low heat for about 1 1/2 hours, or until meat is fork tender. If you wish to thicken the gravy, remove the meat to a plate. Stir together the cornstarch and water; stir into the pan juices. Let simmer for about 2 minutes to thicken. Return the beef to the pot.

EASY AND QUICK SWISS STEAK
This was my favorite growing up. I was amazed when I was older and asked my mom for the recipe how EASY it is! A small amount of prep. time, a day in the slow cooker, and you'll be amazed! It sounds too simple to be good... TRUST me! This gets RAVE reviews when we make it! The amount of vegetables is only an estimate. Use as many or as few as you choose. When it's done, you will have a yummy gravy, and will have to carefully dig for the steak pieces.

- Heat the oil in a skillet over medium heat. In a bowl, mix the flour, salt and pepper, and paprika. Dredge the steaks in the flour mixture, and place in the skillet. Brown steaks on both sides, and remove from heat.
- In a slow cooker, alternate layers of steak, green bell pepper, red bell pepper, onion, and tomatoes.
- Cover, and cook 6 to 8 hours on Low, until steaks are very tender.

This is comfort food at its best. My Granny makes it for me frequently when I visit. The sauce is good and thick. Serve with corn muffins.

- Preheat the oven to 350 degrees F (175 degrees C). Heat oil in a large skillet over medium-high heat. Dredge the cube steaks in a mixture of flour, salt and pepper, and brown them in the hot oil.
- Arrange steaks in a 9x13 inch baking dish. Sprinkle the green pepper, onion, celery, mushrooms, oregano, and onion soup mix over the steaks. Stir together the tomato juice and ketchup; pour over everything in the dish.
- Bake for about 1 hour in the preheated oven, or until the meat is cooked through, and the sauce is thickened.

- Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.
- Heat vegetable oil in a large skillet over medium heat; cook the floured beef in the hot oil until browned on both sides, about 15 minutes. Reduce heat to low, pour in water, cover skillet, and simmer beef until tender, about 1 hour. Add more water to the skillet if needed to prevent burning.
- Mix diced tomatoes, green bell pepper, onion powder, 1/2 teaspoon salt, and 1/8 teaspoon black pepper in a bowl. Pour tomato mixture over beef, bring to a simmer, and cook until sauce has thickened, about 30 more minutes.

SWISS STEAK
An old family favorite salvaged from our 30-plus-year-old cookbook. We like this served over egg noodles. I like to increase the tomatoes to a 15 ½-ounce can, and I use a full green pepper and add a teaspoon of paprika.

- Mix flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle half the flour mixture on one side of round steak pieces; pound steak until coating is absorbed. Flip steak and coat with remaining flour mixture; pound steak until coating is absorbed. Cut steak into 6 pieces.
- Melt shortening in a large skillet over medium heat; place steak pieces in the hot shortening. Cook until browned, 7 to 10 minutes per side. Cover and simmer until tender, about 1 hour, adding water as needed.

- Beat flour into steak.
- Sprinkle with salt& pepper.
- Place oil in large pan and heat; brown steak on both sides in pan.
- Remove steak from pan.
- Add onion to pan and cook until tender.
- Add catsup, water, worcestershire sauce, wine, garlic, sugar and mushroom soup to pan and blend.
- Bring to boil, then add steak and turn heat down to simmer.
- Simmer for about 45 minutes or until steak is tender.
MY GRANDMOTHER'S SWISS STEAK
There are a lot of swiss steak recipes here, but all of them have a lot of "stuff" in it. My grandfather was a very picky eater, and this is the way my grandmother made swiss steak. Granddaddy loved it, and we all did, too. In fact, my sister always wanted Swiss Steak for her birthday dinner. The gravy is best on mashed potatoes, but it's not too shabby over rice, either. This is not fancy, but it sure is good! My grandmother used her home-canned tomatoes in this, but it's almost as good with store-bought.

- Note: I usually use one very large onion. If your onions are small, use two.
- Heat oil in cast iron skillet over medium high heat. Sprinkle steaks with salt and pepper and dredge in flour.
- Brown steaks on both sides in hot oil. Remove from skillet and place in oven-safe dish. (I use a 9 x 13 pyrex dish.).
- Add onions to skillet and saute until they start to brown around the edges. Pour in tomatoes and stir to loosen browned bits on bottom of skillet.

BEST SWISS STEAK

- Chop and saute bacon, rendering fat. Remove bacon when crisp and add oil to pan.
- Sprinkle fresh ground pepper and salt on each slice of sirloin, coat with flour. Pound each slice and dredge again in flour. Brown each slice in the oil. This will take two-three batches. Put slices in your cooking pot or crock pot. When meat is finished browning, add onion, celery and garlic to pan. Cook until onion just begins to brown, add tomatoes and deglaze pan with the liquids.
- Add to the beef in the pot, stir and simmer for one and a half hours covered or in a crock pot on low for six hours or so. The crock pot will not reduce the liquid sufficiently so uncover and switch to high to reduce sauce.
- Serve on your choice of pasta, rice or potatoes. Sprinkle crumbled bacon on top of each serving.

OLD- FASHIONED SWISS STEAK
This is my all-time favourite thing that my mother cooked while I was a child. I still ask her to make it for me whenever I see her. We even had it one year for Thanksgiving! She got so tired of making it, she forced me to learn the recipe when I was in college. If you tend to shy away from bacon grease, you can substitue butter...but in my opinion it will compromise the flavour. I wouldn't changed a thing. This is all Mom!

- Cut steak into serving pieces.
- Combine flour, salt and pepper, and sprinkle on steak.
- Pound steak down on both sides, to about 1/4 inch thickness.

- Preheat the oven to 325 degrees F.
- Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
- Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
- Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.
