CRACKER CRUST QUICHE
Use up your leftover cheese biscuits to create the crust for this easy quiche - there's leftover cheese in the filling too

Steps:
- 1. Preheat the oven to 200°C/fan 180°C/Gas 6
- 2. Put the crackers in a food processor and whizz into fine crumbs
- 3. Add the butter and 1 egg, then whizz to combine
- 4. Tip into a 23cm-diameter tart tin and press into the base and sides of the tin with the back of a spoon
- 5. Line with greaseproof paper, fill with baking beans and bake for 15 mins
- 6. Take out of the oven and carefully remove the greaseproof paper and baking beans
- 7. Brush all over with the egg white, bake for another 5 mins, then set aside
- 8. Reduce the oven to 170°C/fan 150°C/Gas 3
- 9. Fry the bacon in a nonstick pan for 5-7 mins, until crisp. Remove and set aside on kitchen paper. Whisk the remaining eggs, cream and milk together
- 10. Add the cheese, season, then pour into the tin and sprinkle over the bacon Bake for 40 mins, until just set
- 11. Leave to cool for 30 mins, then serve with the salad on the side

CRUSTLESS QUICHE MASTER RECIPE

- Preheat oven to 350 degrees F. For the pan: Brush pan with the soft butter and sprinkle the grated Parmesan evenly on top. Or for a Quick Crust, pulse bread into crumbs in a food processor. Heat butter or oil in a large skillet over medium heat; add bread crumbs and stir until evenly toasted, about 5 minutes. Evenly spread crumbs in a 9-inch glass or ceramic pie pan. Place pan on a baking sheet.
- Whisk the half-and-half, eggs and yolks in large glass measuring cup. Season with salt, pepper, and nutmeg, cayenne or paprika to taste. Spread half the desired filling evenly in the pan, top with about half the cheese; repeat with remaining filling and cheese. Pour the custard over the fillings. Top with more herbs or cheese as desired.
- Bake until the quiche is just set in the center, about 40 to 50 minutes. Cool completely on a rack before serving.
NIF'S MINI CRUSTLESS QUICHES
This is a recipe that my Mom gave me years ago and it's great at a party. You can substitute ham, tuna or baby shrimp for the crab. Feel free to add sauteed mushrooms, peppers, or other veggies. Just be sure to dice everything quite small. Enjoy!

TARRAGON AND THYME QUICHE
One of the very few recipes I've seen that use tarragon. My favorite is with smoked Swiss cheese, bacon, almond milk, graham cracker crust and all of the other optional ingredients.

- Line the pie crust (I like graham cracker crust best, gives the quiche a slightly sweet flavor) with the smoked cheese. Other cheeses can be used, but the smoked cheeses, whatever type, gives the quiche a superior flavor over that of plain cheeses.
- If you like your vegetables a bit less crunchy, lightly saute the onions, bell peppers, and celery.
- Mix all ingredients except meat together and pour into pie shell.
- Sprinkle with meat.
- Cover with tin foil and bake at 350 degrees for 50 to 60 minutes for a 9-inch pie shell, or 60 to 75 minutes for a 10-inch pie shell, turning quiche one-half turn halfway through cooking, or until egg in center is set.
- Remove tinfoil and broil 2 to 5 minutes until lightly browned on top (this is just for appearance).
SALTINE CRACKER PIE CRUST
Who says you need to stick with graham crackers for a delicious pie crust? I prefer the sweet and salty concoctions which makes this pie crust ideal.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch pie pan.
- Crush saltine crackers either with your hands in a bowl or with a food processor. Add sugar and salt; mix. Mix in butter, followed by honey. Press crust into the prepared pie pan using a measuring cup.
- Bake in the preheated oven until golden and set, about 16 minutes. Remove from the oven and while crust is still fairly hot, use the measuring cup to re-form as crust will fall down while baking. Let cool before adding a filling of your choice.

EASY CRUSTLESS QUICHE

- Heat the oven to 180C/160C fan/gas 4. Butter and line a 23cm round deep, springform cake tin so the paper comes 2-3cm up the sides of the tin.
- Melt the butter in a frying pan. Add the onion and pancetta and cook over a low heat for 10 mins or until softened and translucent.
- Bring a pan of lightly salted water to the boil. If using broccoli, cut into small florets, if using asparagus, keep whole. Blanch the veg for 2 mins, drain and leave to steam-dry.
- Whisk the eggs, cream and two thirds of the cheese together in a bowl. Season with salt and black pepper. Mix through the onion and bacon mixture. Pour into the tin and top with the veg and remaining cheese. Bake for 25-30 mins or until golden brown with a slight wobble in the centre.

- Preheat the oven to 350 degrees F (175 degrees C).
- Combine cracker crumbs, melted butter, and sugar in a mixing bowl. Stir together until evenly incorporated. Pour mixture into a 9-inch round pie dish. Press evenly over the bottom and up the sides of the dish using a glass.
