¼ cup soy sauce
2 tablespoons distilled white vinegar
3 tablespoons honey
1 ½ teaspoons garlic powder
1 ½ teaspoons ground ginger
1 green onion, thinly sliced
¾ cup vegetable oil
1 (1 1/2-pound) flank steak

Steps:

  • Whisk together the soy sauce, vinegar, honey, garlic powder, ground ginger, green onion, and vegetable oil in a bowl; pour into a resealable plastic bag. Add the flank steak, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator at least 4 hours.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove the flank steak from the marinade and shake off excess. Pour the remaining marinade into a small saucepan and set aside.
  • Cook the flank steak on the preheated grill until it begins to firm, and is reddish-pink and juicy in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Once cooked, cover the steak with several sheets of aluminum foil, and set aside to rest for 10 minutes before slicing thinly against the grain.
  • While the steak is resting, bring the marinade to a boil over medium-high heat. Pour the sauce over the sliced steak to serve.

This recipe combines elements that I love of my normal marinade "recipe" and an uncle's Whiskey Steak recipe. The longer you marinate the meat, the better it will be- from a few hours to overnight. The flavor is a little sweet, tangy, salty, and garlicky. The nutrition info is not accurate, since it's including all the marinade ingredients in it, so don't be afraid. :-) Prep time includes time to marinate.

1 -1 1/2 lb flank steak
1/4 cup olive oil
1/2 cup soy sauce
1/2 cup balsamic vinegar
1/3 cup whiskey
1 tablespoon mustard
5 garlic cloves (chopped or jarred or minced)
1 teaspoon herbes de provence or 1 teaspoon rosemary
1 tablespoon hot sauce
1 tablespoon honey

Steps:

  • Mix all ingredients except steak in a large ziptop bag.
  • Add the steak, close bag, and refrigerate until ready to use- either for hours or overnight.
  • Pull the steak out of the fridge about 30 minutes before you're ready to cook it. Let it reach room-temperature before grilling.
  • Shake the meat to remove any excess marinade from it and place on the grill.
  • Grill for a few minutes per side, until it reaches your desired level of "doneness." Let rest for 5-10 minutes before slicing.

This sauce is an interesting alternative to a typical red wine sauce and adds a depth of flavor that is quite unique. These steaks are great broiled or grilled.

1/4 cup teriyaki sauce
4 garlic cloves, finely chopped
2 teaspoons red wine vinegar
2 teaspoons Worcestershire sauce
1/8 teaspoon hot sauce (liquid)
15 ounces beef flank steak, trimmed of all visible fat
2 teaspoons cornstarch
1 cup beef broth
4 teaspoons margarine
1/2 cup finely chopped onion
6 tablespoons whiskey
2 teaspoons dijon-style mustard
2 teaspoons chopped parsley
1/8 teaspoon pepper

Steps:

  • Combine teriyaki sauce, 1-1/2 t. chopped garlic, vinegar, Worcestershire and pepper sauce in medium-size non-aluminum bowl. Add steak and turn several times to coat. Cover with plastic wrap. Refrigerate at least 30 minutes or overnight.
  • Preheat broiler or grill.
  • Prepare sauce: Stir together cornstarch and broth in glass liquid measure until combined. Heat margarine in small saucepan over medium heat until bubbly. Add onion and remaining chopped garlic; cook 2 minutes or until onion begins to soften. Remove from heat.
  • Carefully add whiskey and mustard; stir to combine. Return pan to heat and bring to boiling. Cook 3 to 4 minutes or until reduced by about half. Re-stir cornstarch mixture and add to saucepan along with parsley and pepper; stir to combine. Return to boiling. Reduce heat to low; simmer 4 to 5 minutes, stirring occasionally. Cover saucepan and keep warm while cooking beef.
  • For broiling: Place steak on broiler rack; discard marinade. For rare beef, broil 5 inches from heat for about 8 minutes, turning meat halfway through.
  • For grilling: Place meat on a grill over medium-high heat. Grill steak for 5-8 minutes on each side.
  • Let meat stand 5 minutes. Slice across grain. Serve with sauce.

The flat iron steak is the second most tender cut of beef, after the petit filet mignon. It comes from the top blade of the chuck. You may see a flat iron steak incorrectly labeled if it has a thick muscle that runs down the center of the steak. A true flat iron is cut horizontally just above and below that tough muscle (rather than vertically through it) so the muscle can be discarded and all that is left is very flavorful and tender beef. If you don't see these steaks in your grocery store, ask your butcher to cut them for you. In most cases, the butcher would be happy to comply and it is well worth it.

1/2 cup whiskey, such as Jack Daniels
1 tablespoon brown sugar
Kosher salt and freshly ground black pepper

4 cloves garlic, smashed
Four 8-ounce flat iron steaks or filet mignon steaks
1 1/2 pounds Yukon gold potatoes
2 tablespoons chopped fresh chives
1 teaspoon white wine vinegar

Steps:

  • Preheat a grill on medium-high heat. Whisk together the whiskey, brown sugar, 1 1/2 teaspoons salt and 1 teaspoon pepper until the sugar and salt are dissolved. Stir in 2 tablespoons of the oil and the garlic. Add the steaks, turn a few times to coat with the marinade and let stand at room temperature for 20 minutes.
  • Meanwhile, quarter each potato lengthwise to form wedges and put in a medium pot. Cover with cold water to cover by 1-inch and add salt until the water tastes like sea water. Bring to a boil over medium-high heat, reduce the heat to medium and simmer until tender (but not falling apart), about 15 minutes. Drain well. Toss with 1 tablespoon olive oil.
  • Remove the steaks from the marinade and pat dry with paper towels. Pour the marinade into a small pot and bring to a boil. Boil for 2 to 3 minutes until slightly reduced, making sure the sugar does not burn, to make a glaze and sauce for the steak.
  • Grill the steaks until an internal temperature on an instant-read thermometer reads about 130 degrees F, 3 to 4 minutes per side, brushing with the boiled marinade several times in the last few minutes of grilling time. (If you are cooking the filet mignon steaks, you will need to increase this time to 8 to 10 minutes per side to account for the thicker cut). Transfer to a large plate to rest for 5 to 10 minutes. While the steaks grill, add the potatoes to the grill and grill until well-marked and crispy, turning to grill all sides, about 5 minutes total. Transfer the potato wedges to a bowl.
  • Toss the grilled potatoes with the remaining 1 tablespoon oil, chives, vinegar and salt and pepper to taste. Remove the garlic cloves from the remaining glaze and serve drizzled over the steaks with the potatoes on the side.

1/2 cup whiskey (try Yukon Jack, good stuff!)
1/4 orange juice
2 tablespoons brown sugar
1 tablespoon canola oil
2 teaspoons vanilla
2 teaspoons minced ginger
3 cloves garlic
1/4 teaspoon hot pepper sauce
2 lbs flank steaks, about 3/4 inch thick (2 cm)
salt and pepper

Steps:

  • Stir together whisky, orange juice, brown sugar, oil, vanilla, ginger, garlic, and hot sauce.
  • Pour over steak; marinate for at least 1 day in freezer.
  • Remove steak from marinade (you will love the aroma) and bring to room temperature for 30 minutes.
  • Preheat the grill and now you can bring the marinade to a boil and reduce by half.
  • Season the steak.
  • Put it on greased grill and brush with reduced marinade.
  • cook covered for 6 minutes.
  • Turn and brush more marinade.
  • Grill for another 5 minutes to get a rare texture.
  • Slice thinly (against the grain) to serve.

Whiskey Butter:
2 sticks unsalted butter, softened
2 shallots minced, soaked in 1 shot of Jack Daniels or other whiskey or bourbon
3 teaspoons minced parsley
1/2 teaspoon Worcestershire sauce
1/2 teaspoon Dijon mustard
3 teaspoons Jack Daniels or other whiskey
1/2 teaspoon sea salt
White pepper to taste
Steaks:
4 cowboy steaks, bone-in rib eye steaks, or other favorite steak, about 1-inch thick
1 teaspoon kosher salt
1/4 teaspoon whole black peppercorns, coarsely ground
Olive oil
Chopped parsley, optional

Steps:

  • Grilling Method: Combo/Medium-High
  • Make Whiskey Butter:
  • Make Butter at least 3 hours in advance. Combine butter, shallots soaked in Jack Daniels (or other bourbon or whiskey), parsley, Worcestershire, mustard, whiskey, salt, and pepper. Mix well. On a piece of plastic wrap, drop butter in spoonfuls to form a log. Roll butter in plastic wrap and smooth out to form a round log. Refrigerate until hard and easy to slice into round, coin-shaped pieces.
  • Prepare Steaks:
  • Allow meat to come to room temperature about 15 minutes before grilling.
  • Just before grilling, brush both sides of the steaks with the oil and season with salt and pepper.
  • Place steaks directly over medium-high heat for about 1 to 2 minutes, just long enough to get good grill marks. Turn steaks and sear the other side. Move steaks to indirect heat and continue cooking for about 7 more minutes for medium rare.
  • Remove steaks from the grill, top with a pat of the whiskey butter and allow to rest at least 5 minutes but no longer than 10 before serving.
  • Spread the melted butter all over the tops of the steaks and top each with a fresh slice of the whiskey butter and parsley, if desired.
