SPICED BLUEBERRY COFFEE CAKE WITH CORNFLAKE CRUMBS
Cinnamon, ginger and allspice warm up this blueberry coffee cake that gets extra crunch from crispy cereal in its crumb topping.

- For the crumb topping: Combine the flour, cornflakes, brown sugar, cinnamon and salt in a medium bowl and stir to combine. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour mixture. Form into small to medium clumps with your fingers. Set aside.
- For the cake: Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
- Whisk together the flour, baking powder, cinnamon, baking soda, ginger, salt and allspice in a large bowl.
- Beat the butter and granulated sugar together in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour mixture and beating until just incorporated.
- Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Sprinkle the blueberries on top. Spoon the remaining cake batter on top of the berries and smooth the top. Sprinkle on the crumb topping.
- Bake until the cake and topping are golden brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let cool in the pan 20 minutes, then invert onto a plate; invert again onto a rack to cool completely.

- Set the rack in the bottom of a 6- or 8-quart Instant Pot® and fill with 10 cups of water. Open the can of condensed milk, then wrap it tightly and completely in foil. Set the can on the center of the rack (the water should come halfway up the sides).

- Using a whisk, combine the flour, brown sugar, cinnamon, and salt in a small bowl. Using your fingers, add the butter and mix thoroughly with your fingers. It is ok to have small clumps. Set aside
- Prep: Preheat the oven to 350.
- Mix Dry Ingreidents: In a small bowl, whisk together flour, baking powder, baking soda, and salt.
- Mix Wet Ingreidents: In a large bowl using either a hand or standing mixer, beat together the butter and granulated sugar on medium-high speed until light and fluffy. About 3 minutes. Add the eggs 1 at a time, beating well after each addition. Add in the vanilla.
- Reduce to low speed and alternate adding the flour mixture and sour cream to the wet ingreidents. (Recommended sequence: Flour, sour cream, flour, sour cream, flour)Mix just enough to incorporate, using caution not to over mix. The cake batter will be very thick. This is your goal.
- Using the butter wrapper, grease a square cake pan or a loaf pan. Spoon half of the cake batter and using a spatula, smooth the top . Sprinkle half of the crumb topping over the batter. Then drizzle half the dulce de leche over the top of the crumb. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the remaining crumb topping. Drizzle the dulce de leche over the top.
- Bake at 350 for one hour. The cake and topping should be golden brown. If your using a tooth pick, once inserted into the center of the cake the toothpick should come out clean. Let cool in the pan for 20 minutes and then transfer to a rack to cool.

- *Cook's Note: Dulce de leche is sold in the Hispanic aisle of supermarkets, or in Hispanic specialty markets. It is sold in solid 15-ounce blocks, or in cans or bottles in more of a liquid form. You can also find recipes for making your own dulce de leche using sweetened condensed milk.

- For the stovetop method: Remove the label from the can of sweetened condensed milk. Place 3 to 4 forks upside down on the bottom of a large 6- to 8-quart pot. Place the unopened can on top of the forks and cover with water by a few inches. (The forks help to prevent a vacuum between the bottom of the can and the pot.) Place the pot over high heat until it reaches a simmer, then lower the heat to medium-low or low to maintain a steady simmer for about 3 hours. Add more water to the pot if necessary to ensure that the can is submerged at all times. Let the can cool to room temperature in the water before removing. Open the can and scoop out the contents. The dulce de leche should be dark and caramelized.
- For the oven method: Preheat the oven to 425 degrees F. Place a shallow baking dish in a roasting pan. Pour the sweetened condensed milk into the baking dish and cover the dish with foil. Transfer the roasting pan to the oven and add enough hot water to reach halfway up the sides of the baking dish. Bake until the dulce de leche is dark and caramelized, 60 to 75 minutes, checking the water level occasionally and adding more if needed. Let cool, then whisk until smooth.
- Transfer the dulce de leche to an airtight container, put plastic wrap directly on the surface and refrigerate for up to 2 weeks.
DULCE DE LECHE
Dulce de leche is a Latin American dessert sauce made by cooking milk (leche) and sugar. It looks like caramel, but it's a lot richer and creamier; caramel is made from just sugar and water. You can make dulce de leche by simply cooking sweetened condensed milk. Many recipes call for cooking it in the can, but this method is much safer.

- Preheat the oven to 350 degrees F (175 degrees C). Spray two 8-inch round cake pans with baking spray; set aside.
- Whisk the flour with the baking powder and salt in a medium bowl until combined; set aside.

Below are two different ways to make this delicious caramel spread: One is more classic-cooking down milk and sugar-but it requires a fair amount of attention and stirring. The other uses sweetened condensed milk and a long, though mostly unattended, time in the oven.

- Stir together 4 cups milk, 1 1/4 cups sugar, and 1/4 teaspoon baking soda in a 3- to 4-quart heavy saucepan. Bring to a boil, then reduce heat and simmer uncovered, stirring occasionally, until caramelized and thickened, about 1 1/2 to 1 3/4 hours. (After about an hour, stir more often as milk caramelizes, to avoid burning.) Stir in 1 teaspoon vanilla. Transfer to a bowl to cool. Makes about 1 1/2 cups.
- Sweetened condensed milk method:
- Heat oven to 425°F with rack in middle. Pour the contents of 1 (14-ounce) can sweetened condensed milk into a 9-inch deep-dish pie plate and cover tightly with foil. Set plate in a roasting pan and add enough hot water to pan to reach halfway up pie plate. Bake milk in middle of oven 45 minutes. Check water level and add additional, if necessary, then continue to bake 45 minutes more, or until milk is thick and brown. Remove pie plate from water bath and cool, uncovered. Makes about 1 1/4 cups.
