This is from my Mom's recipe cards. I have not tried this recipe. No I do not know why this is called Crabmeat rabbit. There is no rabbit in this.

Number Of Ingredients 5

1 (8 ounce) package cream cheese
1 (10 1/2 ounce) can condensed tomato soup, undiluted
1/4 teaspoon salt
pepper sauce
1 (6 ounce) can crabmeat

Steps:

  • melt cream cheese with tomato soup.
  • Add salt, pepper and crabmeat.
  • Serve hot in chafing dish.
  • Can also be served cold.

REASONABLE CRABMEAT SAUTE



Reasonable Crabmeat Saute image

Number Of Ingredients 9

4 thin slices of white bread
Melted butter for brushing
2 tablespoons butter
2 carrots, grated
8 ounces lump crabmeat, picked over
1/2 teaspoon grated lemon zest
2 tablespoons fresh lemon juice
1/4 cup each finely chopped chives, basil, mint and parsley
Salt and freshly ground black pepper

Steps:

  • Lightly toast the bread and brush both sides with melted butter; divide each slice in half diagonally and set on a dinner plate. Heat the butter in a skillet. When the foaming subsides, add the carrots and saute for a couple of minutes or until the carrots just begin to soften. Add the crabmeat and stir for a minute just to heat up. Add the lemon zest and juice and herbs; saute for 30 seconds and remove from heat. Season to taste with salt and pepper.

This is a wonderful crabdish for a dinner party. I usually cut it in half for my family. It is wonderful.

1 cup butter
1 cup onion, chopped
1 cup celery, chopped
1/2 cup bell pepper, chopped
1 tablespoon pimiento, chopped
1/4 cup all-purpose flour
1 cup half-and-half cream, heated
1/2 cup dry white wine
salt
cayenne pepper
1 cup American cheese, grated
2 lbs crabmeat

Steps:

  • Melt butter. Add onions, celery, bell pepper and pimiento and saute until soft.
  • Stir in flour and blend well.
  • Add hot half and half, stirring; cook, stirring until sauce thickens.
  • Add wine, salt, and cayenne.
  • Spread crabmeat in buttered baking dish; spoon sauce over crabmeat and sprinkle with grated cheese.
  • Bake in preheated 375 degree oven 15 to 20 minutes, or until bubbly.
